On a road trip through Kansas, we decided to put down for the evening in the thriving metropolis of Hays. A quick search for dinner and a craft beer, landed us at Bella's Diner and LB Brewing. We were impressed the second we walked in the door. The atmosphere was lively, artwork trendy and not overpowering, and servers moving around taking care of guests. We decided to sit at the bar as we often do. After driving all day, it's a treat to watch other people hard at work, and you often strike up conversations with local people to learn more about the area you're visiting. When it came to the food, our expectations were met 100%. As my wife and I are not spring chickens, we're generally heading to bed when most young'ns are heading out for the evening. Nothing good happens after 9 PM anyway 😉. I ordered an appetizer that consisted of potato(e) skins, brisket (hello), BBQ sauce, cheese, and I'm sure a few other toppings I can't recall (getting old). My wife ordered the larger size grilled chicken salad which was fresh, loaded with typical toppings. I topped mine off with an oatmeal stout brewed in-house. I am a fan of stouts in general and would have taken a jug home with me if weren't traveling. Fantastic meal, service, atmosphere, and conversations. We highly recommend this establishment and now I'm thinking of future road trips that take us through Hays, KS.
