@gooddays_vietnamese is located on Sydney Rd in Brunswick and now on Smith St in Collingwood (new!) 🍜
They also run their Hot Bread banh mi shop further up Sydney Rd, which turns into @season_chicken_service in the evenings 🍗
Established in 2016, this is a bright, modern reimagining of the traditional Vietnamese phở house. The owner spent a year trialling recipes, building on childhood memories of eating phở while drawing inspiration from Japanese ramen techniques and Asian cookbooks.
There’s a strong focus on quality, ethically sourced meat. The menu is small but considered and rarely changes, which makes it reliable. Their 24-hour bone broth is the hero - slowly simmered with bones, vegetables, aromatics and spices, then rested to allow the flavours to fully develop.
Alongside phở, there are house snacks, chicken broken rice and rotating specials like Wednesday’s betel leaf lamb skewers. Each table even has a little manual explaining how to best enjoy your bowl - taste the broth first, dip your protein into chilli oil and hoisin, then add basil, bean shoots and pickled onion to your liking.
⭐️ Black Angus brisket and topside beef phở - one cut slow cooked, the other thinly sliced raw and gently cooked in the rich marrow broth. Generous with coriander and spring onion. Deeply savoury and complex, slightly gamey but in a rich, beefy way.
⭐️ Fried chicken wings - crispy, juicy and served in a sea of zingy chilli glaze.
✔️ House pork and prawn spring rolls - golden and piping hot, wrapped with perilla, mint and butter lettuce for freshness and crunch.
This spot is consistently good. Great for solo diners or a quick weeknight feed. Mostly tables of two, chef’s bar seating, one communal table of eight and limited pet friendly outdoor seating.
Walk ins only. It gets busy - we went on a rainy Monday and it was packed. Best to arrive before 530pm to avoid the line!
