7 local foods to try in Fukuoka - SilverKris

"A popular tonkotsu ramen shop famed for an unctuous, silky white pork-bone broth that locals dub the “pork bone cappuccino.” The rich, milky broth is boiled for hours and served with al dente noodles and sliced pork belly; long queues are common but widely regarded as worth the wait." - MICHELE KOH MOROLLO

The staff were accommodating and assisted me, the line was just fine, not too long, and I waited for around 20 minutes. Variety options are also good either having just the ramen, with an egg, or all toppings. The flavors are rich and the noodles was firm. Overall great experience and taste

Saw many queuing for this ramen, so had to try. The broth was too salty for my liking. The ramen comes with small wontons - but the filling was like those of a Japanese gyoza and not so much a Chinese wonton. The tables were a small square and the side condiments/sauces took up 1/3 the space. Sitting at the counter will be more comfortable. Small shop with about 10-12 seats and massive broth kitchen. Not much service if you order from a machine, so can’t judge much.

We stopped by Hakata Issou Gion after a long day exploring Fukuoka, hoping for a comforting bowl of ramen to wind down the evening. The shop had that classic ramen joint feel—small, bustling, and full of locals, which was a good sign. We grabbed counter seats with a direct view of the kitchen, where the staff worked quickly but with care. I ordered their signature tonkotsu ramen, and the bowl came out piping hot and beautifully presented. The noodles had a nice firm bite, and the chashu was tender and flavorful. But I have to say, the broth was a bit too salty for my taste. It had a rich depth, as you’d expect from a good Hakata-style ramen, but I found myself needing water after just a few spoonfuls. That said, others at the counter seemed to be slurping it down happily, so it might just be a personal preference. The gyoza on the side were a nice touch—crispy on the outside, juicy inside, and well-seasoned. Service was efficient and friendly, and the overall vibe was very local and authentic. If you’re a fan of bold, salty tonkotsu broth, Hakata Issou Gion might hit the spot. For me, it was a bit intense, but I still appreciated the atmosphere and the care that went into each bowl.

we ordered 1 and 3 after waiting an hour from 11am for 2pax. you can smell the pork bones from outside, which wasn’t a pleasant smell. we almost wanted to leave from the stench. judging from the other reviews, we realised that this was common, so we continued lining up. we had to order first from the machine when we were approaching the store. there was only 3 young men in the kitchen with 2 wait staff. soup was very oily, we did not drink it even though we were the kind of people who would normally drink ramen soup- that’s how oily and porky it was (the smell of the ramen taste exactly like how it smelt from the outside while we lined up). ramen noodles were on the thicker side but very soft. pork itself was a fattier cut but the meatier portion was quite tough. garlic minced and garlic cloves on the side of the table with ginger, sesame seeds etc. would not come again to be honest, don’t think it’s worth the line at all.

Extremely delicious ramen. The broth was too damn rich and Im still salivating thinking about it 2 months later. The service was good and the waiting time was not much. Easily one of the top 3 hakatha ramen spots for me.

Walked in on a week day late afternoon with no waiting time. The soup is very rich and not too salty. Decent portions. The chef keeps boiling and mixing 3 big bowls of soup to make sure the last bowl got the richest flavors from the previous 2 bowls. The only disappointment is the over-cooked egg which was supposed to be half-boiled and cut opened.

Queued for about an hour to get a table for 3 pax, we were split up due to the set up of the place. It’s a bit cramped but I felt it added to the “authenticity” of the neighborhood Ramen shop. Line was managed well by the staff. You have to pay and order using the machine, no english instructions so non-Japanese speakers will have to wing it or use google translate as you order. The ramen with egg & meat is 1000 yen, very very cheap for a hearty meal. The noodles were firm & sufficiently filled me up, the broth is where it gets a bit dicey - its either you like it or not. Very meaty/porky flavor. Comparing to Ichiran - Hakata Issou’s tastes more “home cooked” but it can taste gamey. Add crushed garlic when you eat/sip the soup + pepper!

This brand is famous and has several branches in the downtown area of Hakata. This spot on Gion opens at 11 a.m. When I arrived at 10:55, there are 7 people waiting in the line already. Luckily, the entire store has 11 seats so I was able to be seated right after their opening. The Tonkotsu broth is rich, creamy, and heavy. It is a classic Hakata ramen broth taste. Noodles are firm and chewy. One serving of noodles is not quite enough but you can always add another serving of noodle. While I am waiting for my food, I enjoy watching three young men working in front of me; they greeting customers passionately, talking to each other regarding which step of ramen making they are. I cannot tell which one is “the chief”, but I feel they work coherently as a team and the restaurant runs smoothly.

Yelp
Locals Ramen place, all locals, no tourists in set. Amazing ramen, order from a machine ( cash only) service is quick and very efficient. Food comes out hot and quick. Ambiance is classic locals type, maybe 12 seats. Perhaps the best ramen I've enjoyed in Japan
