"This simple but stylish Wakayama-based sake brewpub in Tokyo makes clever use of a corner space in Kabutocho, the recently hip neighborhood near the Tokyo Stock Exchange building. As the name suggests, the bar specializes in doburoku, a rustic style of unfiltered and lightly fermented sake characterized by its thick texture. Previously outlawed for taxation reasons, the traditional brew is making a comeback, appearing on menus at Tokyo's trendiest restaurants and bars. Large windows, pale wood fixtures, and a curved counter surrounding a small open kitchen give the bar an open and airy feel. The menu lists dry-hopped and aged doburoku, varieties made with ground adzuki red beans or black beans, and a few seasonal styles flavored with fruits or herbs. But the best place to start is with the original, plain doburoku, a thick and yogurty brew with a touch of fruity fizz. Really good bar with a classy atmosphere to have tasty craft beer and you can also try Doburoku which is no filter sake. They have some original taste make on the day for Doburoku. Great choices of craft beer too. The staff speak english if needed and they are really friendly! A good place to have a drink with friends !

sadly doburoku is very hard to find in japan. i had a good time trying everything made here. the basil and white koji were the best. the servers answered all of my annoying questions and after a while i hope we had a fun time talking. i wonder if one day there will be an option that is plain, unwatered-down, and moderately aged, but maybe there's no benefit to ageing doburoku? i know that other (loosely) unfiltered rice alcohols benefit from ageing (after the grains of rice have been removed). i will be back if i can go next time im in tokyo! i wish it were possible to take out smaller sizes of any drink because a big glass bottle was too cumbersome for me. どぶろくや 建前ぬきで 酔わせけり

We love the ambience, friendly staff and the delicious Doburoku. We specially liked the pine, perilla and hops. But the classic, red bean and white koji are very good too.

One of the best experiences we had in Tokyo. This place is a great, peaceful sake brewery with a lot of special tastes. We spend a long while in this bar where you can taste so many different sake with small dishes. Atmosphere is so quiet and nice that you feel relaxed chatting and drinking. Orders are via phone and service is great. It is a must try place for anyone visiting Tokyo. Thank you for the great time and service, it definitely felt welcoming.

Great place to chill and have your "dessert" (doburoku) and drinks after meal. They put red bean/ hops/ fresh basil/ persimmon/ strawberry / dried chilli in the doburoku. Staff are super friendly and welcoming too!
