We were spending the long weekend in the mountains near the Portuguese border and looking for somewhere to stay when we found this place. It was spectacular. In a beautiful, quiet part of Spain, the hotel, is part of a small group run by the local government, to try and promote tourism in rural areas and protect historic buildings. And what a great project. Our room (number 7) was huge and they'd put some time, effort and expense into a modern and stylish design, but which complemented the original monastery. The restaurant was fantastic- we tried the tasting menu, which was huge but delicious, showcasing products from the local area. Breakfast was equally good in the spectacular de-consecrated church. The location was also well worth the effort, near the pretty one-time Pueblo más Bonito de España San Martín de Tejero and at the start of a walk through a beautiful chestnut forest. I'd thoroughly recommend this place as a luxurious stop (they had a spa too, which we didn't use) that is rooted in its surroundings.
