Hrimnir Ramen – Oslo, Norway - Gastro Obscura

"Jars of house-cured preserved lemons, pickled plums, and pear vinegar line the walls of Hrimnir Ramen, the Oslo eatery that puts a distinctly Norwegian spin on Japan’s beloved noodles. Both Japanese and Nordic cultures rely heavily on the locally sourced produce and the umami-oomph provided by fermentation. In 2019, Norwegian-American microbiologist David Quist opened a wholly unconventional spot that nods to both traditions. Virtually everything here is made in-house using locally farmed and foraged Norwegian ingredients. The toothsome noodles owe their distinctive flavor to emmer wheat, a heritage grain. The miso, koji, and shoyu are all fermented onsite, often from ingredients that might otherwise wind up as food waste. The deeply flavorful shoyu, for instance, comes from coffee grounds. While the familiar trappings of a ramen joint are here, the bowls’ contents aren’t like anything one would find in Tokyo. On any given day, the seasonally rotating menu might feature tan tan men cloaked in a rich hazelnut sauce with pickled sunchokes and Norwegian lamb, or perhaps a cold hiyashi chuka ramen dressed with black garlic and miso, then garnished with sea beans, Hanasand tomatoes, and radishes. The compellingly meaty vegetarian ramen gets its earthy backbone from roasted celeriac and ramson oil. Hrimnir Ramen may be unusual, but as noodle aficionados would attest, it fits the spirit of innovation that has long defined Japanese ramen. For all of the fervor it inspires, ramen is a riffable medium; some of the most celebrated chefs among Tokyo’s 10,000-plus shops are those that flaunt tradition by adding ingredients such as olive oil or Sichuan peppercorns to their broths. Quist’s restaurant isn’t so much an attempt to copy Japanese ramen, but rather a Nordic love letter to it. Unique and delicious ramen! Especially appreciated multiple choices for vegetarian/vegan. Shiso and Tan Tan could both be vegan simply by omitting the egg. Starters were equally interesting and exceptional! Great local neighborhood vibe. Absolutely recommend!

Delicious food! Slightly over priced, but for the quality of food, one can go for special occasions. The thing I loved was that they have a very limited menu and the way it is always full- shows that this strategy works! Limited assortment and all good quality! Highly recommend the hand pulled noodles in hazelnut sauce- reaaaaaallllly good!!

The food was good, but the lamb was way too greasy and it made the Ramen too heav (number 4). The chicken Ramen (number 3) was good though. The noodles were handmade and vegetables were fresh and crunchy. I liked the environment, but the table was not clean and the music was a tad too loud.

Saw this on Tik Tok and it DID NOT DISAPPOINT! Go for the hazelnut ramen. Once you accept the fact you’ll never be able to afford a beer in Oslo, eat your money. Get some Norwasian cooking. Pro tip: order an extra side of their pickled radishes!

Every time I’m in Oslo I always feel the urge to come back and have their Hazelnut Ramen. It’s incredible and an awesome vegan option (without the eggs). Can’t recommend this place enough! The vibes are impeccable as well

All four of us were happy. In my spicy miso ramen, they added a fermented chili to it beyond just the chili oil. That was some of the most delicious broth I've ever tasted. It's a small menu, and they deliver perfectly!

Was okay ramen. I don't think this was the best ramen I have ever had. Flavor was good but not mind blowing. I got the vegan option. My husband got the pork option. I liked my beer. They specialize in pickling. We sat inside, but there was a popular outdoor seating as well.

We heard there was a ramen boom in Oslo and this was one of THE places to go, so of course, we had to bail on Nordic food again. There's a good sized outdoor patio and we had a reservation, butthere were walk ins for dinner who were seated right away. I was pretty skeptical about a chicken instead of pork based broth but it was well developed and rich, a mild spicy, with two thick big pieces of pork belly. The egg was perfectly cooked, as good or better than any of the best Ramens we've had. The noodles had good chew and are on the thinner end of the ramen noodle spectrum if you prefer that. The sunchokes we're a bit odd, and it was screaming for some wakame, but still it was a good ramen. Not exactly traditional, but a tasty find that I'd visit again if it were near home. If we get back there, I'd like to try the Shoyu base. $~45 for two ramen and a beer, which is a steal in Oslo.

It's a bit expensive in terms of a ramen bar but it absolutely worths the experience. It's such a chill place to meet friends for dinner and the drink menu they have is also orientally exotic. Ramen in itself is featured with creative but healthy ingredients, I can feel the soul and heart in the bowl that I was presented to.

Delicious! I had the hand made ramen with mushrooms and a hazelnut chili sauce and it was so tasty and unique--my new gourmet comfort food! I want to come back and try the other dishes. The atmosphere of the restaurant is lovely as well.
