If you're eating at any high end restaurant in Paris, the likelihood that you're eating meat prepared by Huge Desnoyer is very high. Robuchon, Gargniere, Passard...all the greats. I have a high appreciation for butchers as I've been going to one myself for most of my adult life. As chefs are now rockstars due to food television, who are the chefs rockstars? The purveyors of course. Huge Desnoyer is definitely a Parsian Chef's rockstar
