“This place stresses me out” ~ my American co-traveler.
This is a magnificent symphony of chaos that really shouldn’t work, yet it produces excellent coffee and a really fun cultural experience.
First there is always a crowd, who all seemingly know the staff and yell something to them. They wave us in: “there is no line. You just order.”
So we did.
Then there is a wait. Baristas work in a mythical order, known only to them. Not inefficiently, as they are churning coffees left and right, but there always seems to be a wait involved, for the effect, I think.
Then there is a coffee. Their bean menu is extensive — some of the best I’ve seen in Greece (short of TAF and KROSS), but the preparation is somewhat erratic: no weighing, no measurement. Just the experience and love.
And this is, to some extent my biggest complaint:
Inconsistency. One of the ethiopan beans we had that they had dialed in was excellent, but one of their Colombian beans tasted over and under extracted in a way familiar to anyone who ever set the EK43 wrong.
There are many coffee shops that I gave 5 star review that were serving worse coffee. But this place has 5 star coffee, and they serve it in a 3 star way.
