We (my wife and I) booked the nightly tour. It starts late afternoon, after an introductory lecture, we got to watch the sunset from the top of the mountain. Later, after dark, there was star watching using binoculars, then a session with a small telescope. Our group was small, so we had a chance to observe a number of interesting star objects: nebulas, binary stars, etc..
Note: the observatory is on the top of a mountain at an elevation of 7000 ft., so it is really cold and usually very windy. Make sure you dress warm to go there.
