The coconut truffle was beautiful. Nice texture, great flavor, an all around excellent example. This was my first exposure to Knipschildt.
I decided to buy a box based on my initial impressions and unfortunately the rest were unable to live up to expectations.
Kelly (Strawberry-Lemon-Thyme) had a bit of a cough syrup taste to it, but it had a nice texture and good temper.
Antoinette (rosewater) is tricky, it can be hard to find two people who like the same rose. In this case my girlfriend loved it, but I thought it was a little soapy. The flavor on this one hit very quickly, but the finish was empty. The construction was spot on, nice temper, nice texture.
Jeanette (mint) was very good, clean flavor, nice mouth feel, and good temper.
Valentina (lavender caramel) this started out strong and herbal, not floral as expected, not good though. The herbal notes died quickly and left me with a cloying caramel that faded to bitter. The caramel was a little grainy.
Patricia (tangerine-chili) had an odd citrus flavor, it wasn't true to tangerine. The citrus notes died quickly and left a metallic burn in the back of the throat. The construction was unremarkable, but not bad.
Jennifer (marzipan-pistachio) was really nice. Great complex notes from the almonds with intense fruity tones and a particularly smooth texture for a marzipan.
Stacy (cardamom-white chocolate) had an interesting texture, almost more like a fondant than a white chocolate ganache. The flavor, like several other pieces took a hit and run approach, it was decent while it lasted, but I think it should have been savory or paired with something else. The sweetness dominated making the other flavors second fiddle.
Helena (coconut) was, as I mentioned above, just beautiful. Nice smooth texture and a bright, true, toasted cocoanut taste from start to finish. Normally I view white chocolate as candy and not chocolate, but this was just excellent.
Donna (cassis) had a strange chemical smell... remember those markers that smelled like different fruits? This tasted like purple smelled.
Sophie (lemon marzipan) had empty space where the filling had separated from the shell. A number of things can cause this flaw, typically improperly freezing the truffle. Also the shell was rather thick, left me with a little chocolate, empty space, filling, big chunk of chocolate, not good. The flavor was ok, a little peppery with a smooth bright marzipan taste, but the lemon was not bright or true.
Cleopatra (praline raspberry liqueur) showed a muddy flavor and had too much alcohol burn.
Elizabeth (ginger-passionfruit) left me with a ginger burn that was unpleasant and I felt I really needed to hunt for the passionfruit.
Keiko (raspberry-pink peppercorn) was too gummy a ganache with poor flavor release. I was also left with a bit of burn in the back of my throat.
Madeline (71% dark chocolate) had a texture showing signs of the emulsion breaking, weeping and gumminess were present. Also the chocolate had separated from the shell. I'd guess this chocolate was frozen improperly and had too much butter. Flavor is hard when the structure is off because the flavor release is disturbed, that said I thought it was ok, my girl friend described it as "tastes like a farm smells." So perhaps it was a little too earthy fo her liking.
All in all, Knipschildt does wonderful work with white chocolate, which I typically consider mere candy and not chocolate at all, but I've been made a believer of its potential.
A poor job is done on the dipped shells, while the molded pieces are much better. A few of the pieces showed signs of bad storage though.
Finally, many of the flavors were sub-par. Quick release was typical, which is good, but this often faded just as quickly to nothing or worse yet a burning in the back of the throat or bitter flavors. Fortunately, unlike several other chocolatiers in this price range, none of the pieces gave me cottonmouth.
