Knipschildt Chocolatier

Stopped at a gas station on our way home and grabbed a bar of Chocopologie “Dubai chocolate”. I’m an avid fan and buy regularly and I’ve tried a few brands. Some are better than others but I’ve never had a bad one until the Chocopologie bar. The chocolate tastes cheap, and I don’t know what is the mushy stuff in the bar, but it’s not Kadayif and it’s not pleasant to chew on. At the price I pay for my Dubai chocolate, this was a disappointment. I’d go as far as saying, this isn’t Dubai chocolate.

Fritz Knipschildt is the best! He created wonderful favor boxes for our wedding guests, who loved his exquisite chocolates. Knipschildt's customer service is superb - their care and attention to detail is evident in everything they do. I was concerned because our order was to be delivered on the hottest day of the year to date. It arrived in perfect condition, packed with ice and expertly wrapped to protect the small individual boxes. Thank you for adding a lovely flourish to our wedding celebration!

I was gifted these from a flower shop in Trumbull CT I brought them back to Canada to share with my family and all agreed that this was the best tasting chocolate we have had in a long time. What a treat!

Their chocolates are visually stunning and delicious. I just found out about this place when I was looking for good looking chocolate packaging to give out as holiday gifts. It turn out that not only does it has a beautiful packaging, the chocolates are also really delicious.

Knipschildt chocolate is unequivocally the most delicious artisan confection I have ever experienced. As someone who loves to cook and try new flavors, I can taste the love and skill in each unique profile. A must try for anyone who loves chocolate perfection!

I've been curious to try Knipschildt's chocolates for a while since we're local to CT, so my husband and I indulged as an early anniversary gift! We picked out the strawberry and blueberry lemonade bonbons, as well as the flourless chocolate cake because we're big chocolate lovers. The bonbons were light and refreshing with a very smooth ganache in the center. Beautiful design too! The chocolate cake is the richest I've ever indulged in! It was incredibly thick and I can't believe all of the chocolate truffles it's topped with. It pairs nicely with whipped cream. It's so dense that sharing a slice between the two of us is plenty. Fun for a treat and convenient that they can ship to the house.

To say Knipschildt Chocolate was amazing is an understatement. It truly was a great experience the Dubai chocolate I purchased was not only the talking point of the festivity but had everyone asking where I had purchased such great sweets.

I love sugar. And I love chocolate. But the 9-pack Easter egg collection I bought was hugely disappointing. First of all, despite 2 day FedEx shipping, it arrived 4 days late. And after Easter. Did the chocolatier run out of ingredients? Because the passionfruit truffle had not even a whisper of passionfruit flavor. The hazelnut milk chocolate truffle tasted & looked like dark chocolate and had zero hazelnut flavor. The third "dark chocolate ganache" truffle tasted no different than the other two flavors. How is that even possible? On top of it all, the chocolates were cloyingly sweet. A really unpleasant chocolate experience. And how is that even possible.

I found this chocolatier hugely disappointing. I've been sampling gourmet chocolate and had positive experiences with Vosges and Kollar. So I ordered Knipschildt on Goldbelly hoping to have something at least within the same general level of quality, given the price point. I was immediately disappointed on opening the box. These chocolates are ugly - no other way to describe it. Questionable color choices and many of them look indistinguishable. Then comes the taste. This is basically candy. Like, you could literally get a box of See's Candies or whatever else they sell at drugstores, instead of this. It is extremely sweet and sugary and the flavors are as dull and indistinct as the presentation. I wish I had read reviews before buying, because this was a waste of money.

Knipschildt chocolates are a hit or miss. There are several pieces that I really like (Hannah, Lilac, Helena) but there are almost an equal number pieces that I don't know what to think of (Antoinette, Patricia, Sophie). This is a place where you really need to pick and choose your chocolate carefully. A box collection might result in a lot of disappointment.

I received a box of these as a gift as I used to live near their location in CT and had them quite often. Now that I don't live close by, my lovely friends send them to me to remind me of home. They do just the trick! I was not much of a chocolate fan until I had these and now I am hooked on Knipschildt Chocolate. Thank you friends! Keep sending!

Knipschildt Chocolatier & Chocopologie LLC (NY Chocolate Show) - With a name reminding me of 'Dip Shit', you are a few notches behind in the game trying and are hard pressed to woo a tough crowd, especially me. Sorry Fritz Knipschildt, Dean & Deluca, Oprah, Madonna, Whole Food, and Balucci may stock your goods, but too bad I don't. So this chocolatier has the MOST EXPENSIVE truffle, $250. I bought it once and I thought it was overrated, and small. For that price, I better receive something bigger, and amazing. There's a mushroom in the middle of the truffle. I don't want to eat a mushroom with chocolate. I like macadamia and almonds with my chocolate, not a mushroom. In the few times where I have purchased this chocolate, I thought it was unreasonably sweet, low quality, and just not at the same level as other chocolates. When I have other brands of chocolate, I feel alive, I feel happy, I want more...but with Knipschildt I just want to stop and drink water because it's WAY TOO SWEET. I walked into the Knipschildt boutique in Norwalk, it's not pretty at all. I'm not impressed. Knipschildt has some major improving to do.

The coconut truffle was beautiful. Nice texture, great flavor, an all around excellent example. This was my first exposure to Knipschildt. I decided to buy a box based on my initial impressions and unfortunately the rest were unable to live up to expectations. Kelly (Strawberry-Lemon-Thyme) had a bit of a cough syrup taste to it, but it had a nice texture and good temper. Antoinette (rosewater) is tricky, it can be hard to find two people who like the same rose. In this case my girlfriend loved it, but I thought it was a little soapy. The flavor on this one hit very quickly, but the finish was empty. The construction was spot on, nice temper, nice texture. Jeanette (mint) was very good, clean flavor, nice mouth feel, and good temper. Valentina (lavender caramel) this started out strong and herbal, not floral as expected, not good though. The herbal notes died quickly and left me with a cloying caramel that faded to bitter. The caramel was a little grainy. Patricia (tangerine-chili) had an odd citrus flavor, it wasn't true to tangerine. The citrus notes died quickly and left a metallic burn in the back of the throat. The construction was unremarkable, but not bad. Jennifer (marzipan-pistachio) was really nice. Great complex notes from the almonds with intense fruity tones and a particularly smooth texture for a marzipan. Stacy (cardamom-white chocolate) had an interesting texture, almost more like a fondant than a white chocolate ganache. The flavor, like several other pieces took a hit and run approach, it was decent while it lasted, but I think it should have been savory or paired with something else. The sweetness dominated making the other flavors second fiddle. Helena (coconut) was, as I mentioned above, just beautiful. Nice smooth texture and a bright, true, toasted cocoanut taste from start to finish. Normally I view white chocolate as candy and not chocolate, but this was just excellent. Donna (cassis) had a strange chemical smell... remember those markers that smelled like different fruits? This tasted like purple smelled. Sophie (lemon marzipan) had empty space where the filling had separated from the shell. A number of things can cause this flaw, typically improperly freezing the truffle. Also the shell was rather thick, left me with a little chocolate, empty space, filling, big chunk of chocolate, not good. The flavor was ok, a little peppery with a smooth bright marzipan taste, but the lemon was not bright or true. Cleopatra (praline raspberry liqueur) showed a muddy flavor and had too much alcohol burn. Elizabeth (ginger-passionfruit) left me with a ginger burn that was unpleasant and I felt I really needed to hunt for the passionfruit. Keiko (raspberry-pink peppercorn) was too gummy a ganache with poor flavor release. I was also left with a bit of burn in the back of my throat. Madeline (71% dark chocolate) had a texture showing signs of the emulsion breaking, weeping and gumminess were present. Also the chocolate had separated from the shell. I'd guess this chocolate was frozen improperly and had too much butter. Flavor is hard when the structure is off because the flavor release is disturbed, that said I thought it was ok, my girl friend described it as "tastes like a farm smells." So perhaps it was a little too earthy fo her liking. All in all, Knipschildt does wonderful work with white chocolate, which I typically consider mere candy and not chocolate at all, but I've been made a believer of its potential. A poor job is done on the dipped shells, while the molded pieces are much better. A few of the pieces showed signs of bad storage though. Finally, many of the flavors were sub-par. Quick release was typical, which is good, but this often faded just as quickly to nothing or worse yet a burning in the back of the throat or bitter flavors. Fortunately, unlike several other chocolatiers in this price range, none of the pieces gave me cottonmouth.

Chocolate Chocolate Chocolate. How can you not be a fan? The greatest, smoothest, most delicious chocolates with ganache that I have ever tasted. Right now my favorite piece is the Jennnifer, yes Fritz Knipschildt names his chocolates after ladies, the chocolate is dark with a creamy marzipan/pistachio filling it is so yummy. But the change of the season also makes a change in my chocolate favorites. The chocolate that i have been craving for the last year have been the Hannah the dark chocolate with the burnt caramel and Hawaiian seasalt on top it is sooo good and now they have changed the caramel so its more liquidy, really nice. Don't miss this if you ever pass by Norwalk, Connecticut the chocolates can be bought in the cute little cafe where you also can watch the chocolates beeing made its awesome. Worth it.

This is by far the best chocolate I have ever had. Features a wide variety of flavors and each piece is so different. Definitely worth trying in my book.

The website and their phone message says they are open from 11:00 a.m. until 10 p.m. on Thursdays. Well, they are NOT!!!! As a matter of fact they are out of business. This was incredibly disappointing after driving 40 minutes each way to get there. A total waste of time and gas!!! Their website and phone message are TOTALLY MISLEADING!!!

I received a big box of chocolates as a gift from a friend. She warned me that what should have been a 1 day ship took 3 days (1 state away). When they arrived, the ice packs were melted, as were the chocolates. I called the company and every extension had the same recording "No one is available to take your call, please leave a voice message" then every mail box was full. What a joke! I know she spent a lot of money on this gift, I am so reluctant to tell her how melted and meshed together they all are. I would not recommend anyone order these unless you pick them up personally!

Some of the BEST chocolates we have ever had. The only trouble is.... you cannot get it anywhere easily. Sometimes you want to be able to get it right away for gifts, etc. I used to buy them at the Pantry when they stocked them and got hooked. Now I think the only way you can purchase it is online or some very limited stores (which unless you know which ones, don't even bother running around Whole Foods, etc). Accessibility gives this House of Amazing Chocolates 3 stars. What is the point of having amazing chocolates if you can't get them? We even made a trip to Norwalk to get the chocolates. And we STILL COULD NOT buy them!!!!
