While I love most Mexican food, this particular dish was not for me. I loved ALL aspects of the dish except the main one - the pork fat. I had a similar dish in Colombia, but there the pork fat was fried and rendered edible. Here however; the pork fat was just tiny cubes of gelatinous adipose tissue. Nope. Not for me.
Take out the pork fat and the rest of it is pretty damn delicious. The sauces, the candied sesame seeds, the thinly sliced ornamental avocado juliennes, the fresh carrot and cabbage, the smear of cream and (my favourite) the way the base-cracker slowly gets soggy and flavourful as you eat your way through the generous and well-priced snack - it’s worth one 20-minute wait in a fila (queue).
