Our experience with this restaurant from June to October 2025 was defined by severe administrative failures and a total breakdown in communication.
1) Inconsistent Reservation System:
Securing a table was confusing and unreliable. For our latest reservation, we first tried face-to-face only to be told to book via Instagram. On Instagram, we saw the restaurant had never accepted our message request sent back in June, leaving it in pending status and ignored for months. This shows clear inconsistency in how they handle reservations (phone vs. social media). We finally had to call to book, which highlights their lack of clear instructions.
2) Two (!!) Unannounced Cancellations:
We had a reservation for the Tuesday "Parrillada Libre" event in June 2025. We arrived as planned, only to be told the event was cancelled due to a gas issue. The restaurant failed to inform us beforehand.
We wanted to give "La República" a second chance since we like its vibe so we did another reservation in October 2025 (for 12 people). We tried calling two days in a row to confirm the reservation, but no one answered. We showed up and were told the event was cancelled again due to the same gas issue.
This lack of reliable communication, planning, and clear booking instructions is unacceptable. It wasted a lot of time for my friends and me, especially those who traveled far for the event!!!
Lastly, what's even most bothersome is that no official apology ever reached us on the restaurant's behalf for any of the 2 occasions!!! Very sad to treat customers like this. 😢
