I took my Dad out for breakfast at Las Margaritas Restaurant. It is located on Cage Blvd. half a block north of Old 83 In Pharr. Walking in the place is decorated in a festive manner with lots of colorful party banners. We found a table and were promptly greeted by our server. We ordered coffee and water, then began scanning the menu. Once our coffee arrived along with chips and salsa, we placed our order. I decided on eggs with chicharron sauce, it comes with refried beans and tortillas. I chose flour and added a pancake on the side. Dad chose the Denver Omelet with hash browns and biscuits. He added a side of gravy. I was wondering if the Chicharron sauce would be the same sauce as the salsa that came with the chips. Unfortunately it was and the Chicharrones were not cooked in the sauce they were simply placed atop the eggs and salsa. Cooking them in the sauce makes them tender, plus these were crackling rinds, super crunchy and certainly not the Tex-Mex way. I ordered scrambled eggs, they were more like fried eggs that were chopped up. There was way too much egg white hidden under the salsa. I almost believe it was eggs that were already cooked by mistake and needed to be used. Plus, my beans were bland, needing salt desperately, and I was supposed to get potatoes, there were like three or four cubes lost in the salsa. Dad said his omelet was OK and the hash browns didn't have that golden brown color that covered the entire portion.. My pancake never arrived nor did the gravy Dad ordered, and our server was nowhere to be seen. We finally flagged down a server and asked about our sides. He brought me my pancake but no syrup or butter. Our server came by with Dads gravy, she said the cooks just made it that's why it took so long. I asked for syrup which I used on my cold pancake, that's why I didn't ask for butter. On the upside we were able to get refills of coffee. Anyways, I don't think I'll be going back anytime soon or maybe never again.
