Vegetarian Tasting Menu in Metz. With the snow outside, falling on the lovely cathedral, we were able to dine in style. Their tasting menu offered 2 choices so the Mr & I decided to each get 1 menu so we could try it all.
Starters The fresh cow's milk from Bettina de Bacourt
Raviola (singular of ravioli) with smoked cream, watercress broth infused with ginger and bergamot, steamed leeks with butter. This was okay but paled in comparison to the.......
......Bio beluga lentils "caviar" in warm vinaigrette, muslin of carrots, poached egg with carrot foam - the flavor & textures were amazing
2nd Course:
Végétaux - Veggies! This was a mixture of beets, apple, celery confit, green cabbage, carrots
also enjoyed the bok Choi with risotto of organic fertilizers, soufflé cereals, smoked basil, celery fondant
3rd Course:
Carrott and Orange - orange sorbet with carrot confit doused in Lorraine honey, carrot purée, carrot sponge biscuit, orange-carrot gelled, charcoal meringue
Also had a Baked Apple with apple fondant, caramel confit insert, apple chips, vanilla ice cream, Greek yogurt pouring ball, caramel caviar.
Overall, we liked the meal A-OK but what threw it to 4 Stars was the wine pairing. The wines were amazing on their own & enhanced each dish extremely well
Might try another vegetarian-friendly restaurant next time we're in Metz but have to say we were fans
