If it were not for a couple of outstanding occasions I would have rated the hotel a 2 as well they could have been a 4.
The hotel has an amazing view that cannot be beat. However rooms are small, no fan/AC, and located directly over the restaurant.
The restaurant has the most amazing view of the penensula, islands, and water. However, the restaurant can only be enjoyed by those with a reservation, (even late night when you see open tables). Make your reservation prior to coming or risk sitting on the street or walking down the road. The food is amazing and cooked to perfection (À Point). We were able to get in on our last night and enjoyed the 6 course with wine pairing that included Tuna tartar, Lobster, foie gras, Filet, and dessert with unique wine pairs. Everything was cooked to perfection and service was sublime.
Issues: The word "Not Possible" became a running joke as it was repeated by the staff. One night, after returning from dinner (from another restaurant), we asked to have a drink on the patio to enjoy the view and were told it was not possible. Several tables were open, but the waiter insisted we could not be seated. Since our room was directly above the patio I could see that no one was seated there for the rest of the night. While getting a drink from the outside bar and taking it up to the room was not horrible, this should not have been an issue.
There were several other poor service examples like this, but in the same spirit the staff had moments of greatness too.
The hotel will be going through some renovation soon, so it will be a great time for them to fix a few service related items too.
General tip: if you don't have a car you are confined to a limited area on the Penensula. There are no taxies and it is a €30 into Hyeres. The bus is a good option to the Port were you can take a ferry to the islands.
