Attended the Knife Skills class last night and had the best time. The instructor, Manifa, was really friendly and presented the information in a very clear and easy-to-understand manner (her assistant, Mercy, was also fantastic!)
Everything was well organized; the workstations were neat, clean and had all of the tools and veg we needed. The demonstrations were really helpful, and when it came time to do the knife cuts ourselves, Manifa paid attention to each of us in a caring, clear and encouraging way so that we felt confident in using the knives correctly. The veg cuts turned out beautifully. Once we finished prepping the veg and our mise-en-place was ready, we were shown how to cook the ratatouille, which turned out great! It was a really good dish, appropriate for most diets (not great for low-fat or low-salt diets, but awesome for everything else). Definitely going to take more classes - Chicken 101, Sauces, Beef 101...here I come!
