Conger Bread – Galway, Ireland - Gastro Obscura

"Every morning, a massive loaf of sourdough stretches across the entire length of the counter at Griffin’s Bakery in Galway. It’s particularly satisfying when owner Jimmy Griffin gets to slice into it. Why? It’s made in the shape of the giant conger eel that almost killed him. It all began on a beautiful summer day in 2013 when Griffin was scuba diving off the Connemara coast. “All of a sudden I felt I got hit by a freight train,” he told the Connacht Tribune. “I got hit by this thing, it had me by the face and I was being tossed around like a rag doll.” It was a conger eel, a carnivorous fish with strong teeth that can stretch up to six feet long. While Griffin was able to escape, the large eel left its mark: a gash across his cheek, mouth, and chin. In addition to 20 stitches and plastic surgery, Griffin healed another way: by baking. He started making a loaf of sourdough that had the same dimensions as the six-foot eel that bit him. Today, the bakery makes at least one loaf of the bread every day. Visitors who want to see the loaf in its entirety should arrive early, since fresh slices are sold off or added to the bakery’s sandwiches. Magpie is a fantastic bakery - easily on par with some of the better French patisseries. The quality of the bread and pastries is consistently excellent: flaky, buttery, and beautifully baked. Everything I tried was delicious and clearly made with care and craft. However, while the baking itself is top-tier, the shop presentation could use some improvement. The way the bread and pastries are displayed doesn’t quite do justice to their quality - for example, fresh baked goods sharing shelving space with eggs feels a bit out of place and detracts from the overall experience. A more refined layout and visual merchandising would elevate the atmosphere significantly. It would also be a treat to have some view into the kitchen, to see the bakers at work - it adds transparency and a sense of connection to the craft. The seating area could benefit from a refresh as well, though part of the challenge may be the slightly dated feel of the indoor shopping centre where it’s located. Price-wise, Magpie is on the expensive side, but for the most part, it feels justified by the high standard of baking. With a few tweaks to the space and presentation, it could truly become a standout destination bakery in Galway.

The best pastries I've had in Ireland. Absolutely worth the drive and your time. Make sure you go early to beat the lines and have access to the full selection! Lots of amazing breads and sweets. And don't sleep on their coffee and chai, delicious!

Uncommon menu items with great visuals. I tried six different kinds of bread, and they were all delicious. Even after storing the leftovers in the fridge, they stayed crispy and didn’t get soggy — still incredibly tasty. That’s all there is to say. Seriously, this is some amazing bread. ☆And the tote bag is super cute, too. It's generously sized and water-resistant thanks to the wax coating.

Prepare for queuing at least 45mins no matter when you get there. We went Saturday and Sunday. Got there when it opens around 10am. By the time we were able to order was about 10:45. Service is quite slow with coffee orders. Pastry menu is on the showcase directly. Everything was really good but not worth 1h waiting unfortunately. Service can be improved to speed things up.

Best pastry I've had for years. So good. Went for the heirloom tomato Danish. Bit of cheese in there, bit of red pesto, and the tomato flavour was so fresh. What a brekkie.

Me and my friend queued for a little while so that we could get first pick of the wonderful baked treats, and it was worth it! I got both a sweet and savoury pastry to try - a chocolate almond crossaint, and a salmon creamcheese danish. They were both delicious and fresh, well worth the wait. I got a wee cappuchino too and it was good. We sat in their small outdoor area, but don't bank on getting a seat - it gets busy quick! The main thing was that even though the bakery is small and it gets a lot of customers, the staff were patient and friendly, and were lovely to chat too while we picked our pastries. They also had a lovely selection of bread to choose from. Overall, a lovely experience and I hope to return!

Queue begins forming well before opening time, but should remain indoors. Flat white was above average but not exceptional. Every pastry I tried was delicious, though I was somewhat disappointed to find hard, solid chocolate within the pain au choclat, rather than creamier alternatives.

This bakery has quickly earned a reputation as one of the best in Ireland, with locals strongly recommending it, and they’re not wrong! It’s so popular that people line up early. I had to check it out for myself, and it did not disappoint. Pairing them with a cup of Calendar Coffee made it an unforgettable experience. Magpie Bakery is an absolute must for anyone in Galway. Take the advice of the locals and go early or try your luck 🍀 later in the day —you’ll be so glad you did !
