Conger Bread – Galway, Ireland - Gastro Obscura

"Every morning, a massive loaf of sourdough stretches across the entire length of the counter at Griffin’s Bakery in Galway. It’s particularly satisfying when owner Jimmy Griffin gets to slice into it. Why? It’s made in the shape of the giant conger eel that almost killed him. It all began on a beautiful summer day in 2013 when Griffin was scuba diving off the Connemara coast. “All of a sudden I felt I got hit by a freight train,” he told the Connacht Tribune. “I got hit by this thing, it had me by the face and I was being tossed around like a rag doll.” It was a conger eel, a carnivorous fish with strong teeth that can stretch up to six feet long. While Griffin was able to escape, the large eel left its mark: a gash across his cheek, mouth, and chin. In addition to 20 stitches and plastic surgery, Griffin healed another way: by baking. He started making a loaf of sourdough that had the same dimensions as the six-foot eel that bit him. Today, the bakery makes at least one loaf of the bread every day. Visitors who want to see the loaf in its entirety should arrive early, since fresh slices are sold off or added to the bakery’s sandwiches. Hands down the best bakery you will find in Galway. Be prepared for a line, but it's all indoors. I was able to try Magpie twice during my trip to Galway. Both times, I got in line 30 minutes before opening (8:00 am on a Thursday and 9:30 am on a Saturday). On Thursday, I was first in line. On Saturday, there were about 12 people in front of me. There are a lot of bread choices and many different pastries. I tried the lemon meringue danish, plum & vanilla danish, butter croissant, apple & brown butter danish, plum & lemon verbana cruffin, chocolate caramel cruffin, orange poppy seed knot, brown butter pecan chocolate chip cookie, and Irish brown bread. I loved every single thing we got. All of the pastries were buttery, flakey, and well filled (if they had a filling). The fruit danishes were great and the cruffins were the best I have had EVER. We even enjoyed the Irish brown bread which was full of seeds! Magpie is worth the wait. Definitely go if you like pastries.

This is one of the best bakeries in the world! Be prepared for long lines and make sure to go on a day and at a time when they are open (Thurs + Fri 8.30am-3pm Sat + Sun 10am-3pm) - go early! And it is SO worth it! Every pastry is flavorful, moist, textured and delicious. Coffees are great as well. Staff is friendly and helpful. There is limited seating. Worth traveling to Galway if you are a pastry lover😋!

Magpie is a fantastic bakery - easily on par with some of the better French patisseries. The quality of the bread and pastries is consistently excellent: flaky, buttery, and beautifully baked. Everything I tried was delicious and clearly made with care and craft. However, while the baking itself is top-tier, the shop presentation could use some improvement. The way the bread and pastries are displayed doesn’t quite do justice to their quality - for example, fresh baked goods sharing shelving space with eggs feels a bit out of place and detracts from the overall experience. A more refined layout and visual merchandising would elevate the atmosphere significantly. It would also be a treat to have some view into the kitchen, to see the bakers at work - it adds transparency and a sense of connection to the craft. The seating area could benefit from a refresh as well, though part of the challenge may be the slightly dated feel of the indoor shopping centre where it’s located. Price-wise, Magpie is on the expensive side, but for the most part, it feels justified by the high standard of baking. With a few tweaks to the space and presentation, it could truly become a standout destination bakery in Galway.

I finally found my new rendezvous for coffee and breads. The only problem is, the queue 😁 it's because it's the only sought after bake shop in Galway. Everything in this shop is sinfully delicious. ⭐⭐⭐⭐⭐

Uncommon menu items with great visuals. I tried six different kinds of bread, and they were all delicious. Even after storing the leftovers in the fridge, they stayed crispy and didn’t get soggy — still incredibly tasty. That’s all there is to say. Seriously, this is some amazing bread. ☆And the tote bag is super cute, too. It's generously sized and water-resistant thanks to the wax coating.

The best pastries I've had in Ireland. Absolutely worth the drive and your time. Make sure you go early to beat the lines and have access to the full selection! Lots of amazing breads and sweets. And don't sleep on their coffee and chai, delicious!

We arrived 15 min after they opened on Sunday and endured a 45 minute wait just to get to the counter. Was it worth the wait? We thought so! We got 2 seedy sourdough loafs, a morning bun and a blueberry vanilla cruffen. All were absolutely delicious! Definitely recommend Magpie Bakery but be sure to check hours, they’re only open 4 days a week. Limited seating.

For a place so widely recognized as one of the best bakeries in all of Ireland, I have had better croissants on an airplane. We tried a few things & they were all lackluster I was super disappointed given the queue was so long. It does move fast, and maybe I tried the wrong thing. But certainly can find better places with shorter waits walking distance
