Magpie is a fantastic bakery - easily on par with some of the better French patisseries. The quality of the bread and pastries is consistently excellent: flaky, buttery, and beautifully baked. Everything I tried was delicious and clearly made with care and craft.
However, while the baking itself is top-tier, the shop presentation could use some improvement. The way the bread and pastries are displayed doesn’t quite do justice to their quality - for example, fresh baked goods sharing shelving space with eggs feels a bit out of place and detracts from the overall experience. A more refined layout and visual merchandising would elevate the atmosphere significantly.
It would also be a treat to have some view into the kitchen, to see the bakers at work - it adds transparency and a sense of connection to the craft. The seating area could benefit from a refresh as well, though part of the challenge may be the slightly dated feel of the indoor shopping centre where it’s located.
Price-wise, Magpie is on the expensive side, but for the most part, it feels justified by the high standard of baking. With a few tweaks to the space and presentation, it could truly become a standout destination bakery in Galway.
