Our time at Marilau’s Cooking School was easily the highlight of our trip to San Miguel de Allende. From the moment she greeted us at the door, we felt less like students and more like welcomed guests in a dear friend's home. She served us a delicious, vibrant hibiscus tea that was the perfect refreshing start to our afternoon.
Her kitchen is a gem—small, impeccably clean, and filled with beautiful traditional clay pots that set the stage for a truly authentic experience. What I appreciated most was Marilau’s depth of knowledge; we didn't just learn to cook traditional Mexican rice, we learned the actual science behind the process, which made the techniques stick in a way a simple recipe never could.
We prepared an incredible Tinga de Pollo and the most velvety Crema de Calabaza I have ever tasted. We chatted about her life, learning how she first discovered her love for food at her grandmother’s side and how she has maintained traditional cooking as a career for decades
the experience came full circle as we sat down to enjoy the meal we had created together.
The school’s central location made for an easy, pleasant walk from our hotel, making the whole day seamless. If you find yourself in San Miguel, I cannot recommend this experience enough—it is a delicious, and educational way to spend an afternoon.
