Merriman’s Is Hawai'i's First Carbon Neutral Restaurant

"When Peter Merriman opened his eponymous restaurant on Hawai'i’s Big Island in 1988, the chef was an early champion for working with local farmers and fishermen. Thirty-five years later, and with the help of solar panels, lighter wine bottles, and a new seaweed diet for goats, Merriman’s Waimea just became the state’s first carbon neutral restaurant. The first step to doing their part was understanding the restaurant’s existing environmental impact. Merriman and his team partnered with GreenPlaces, an organization that helps restaurants, hotels, and other businesses become more sustainable. Some of the initiatives it took to get Merriman’s Waimea to carbon neutrality have been in place for years, including installing solar panels on their buildings and sourcing ingredients responsibly. The restaurant group works with local farmers and vendors, and nowadays 90% of the ingredients they use either come from Hawai'i or are sustainably caught. At the Big Island location, an on-site garden grows fruits and herbs for the menu, too. The most surprising way the restaurant group is cutting carbon emissions, though, is goat-related. Merriman’s, working with two local orgs, will roll out “carbon-friendly” goat cheese. The cheese is made using milk from the herd at Hawaii Island Goat Dairy, which is fed limu kohu seaweed from Blue Ocean Barns. The particular diet helps cut the goats’ methane emission by 85%. Other recently-launched sustainability measures involve working to reduce the weight of wine and liquor bottles. About 25% of the restaurant’s wine bottles now weigh three pounds or less, but Merriman’s is also working toward rethinking the vessels in general, including working with local wineries and distillers to implement biodegradable packaging, and even envisioning a whole new operating system." - Regan Stephens

This restaurant is farm to table and you can definitely tell in the flavors. We had the fish tacos which were made with catch of the day blue fin tuna. And we had the smash burger with double patties. Everything was delicious. But the award goes to the fish tacos. Best on the island. Our server, Kimo, was also the best server we've had on the island. This restaurant just has it all! Haha

On Saturday April 12th our family had a wonderful time dinning at Merriman’s on the Big Island. The food was outstanding, the atmosphere was perfect, and the service was truly exceptional. Our server, Bianca, went above and beyond. She even surprised me with a dessert after learning we were on vacation to celebrate my birthday even though that day was not my actual birthday! My husband and I agreed it was one of the very best dinning experiences we have ever had. Bianca even made our son feel special by asking if she could keep a drawing he did on his placemat. Our family left full, happy, and already dreaming of coming back. Thank you, Merriman’s!

After more than 30 years on the Big Island, today was our first visit to Merriman's and it did not disappoint. We stopped in during the lunch rush and it was quite a hub of activity and chatter. Our 2pm reservation was the perfect energy for our afternoon meal, a bit mellower than the rush hour. Service was impeccable, the meal was even better. We started with the fresh Tomato Bisque- delightfully topped with croutons. Our Smashburgers were perfectly cooked, gratefully not overly stacked with fillings and the accompanying roasted potatoes were delicious: crispy on the outside, fluffy on the inside. Cocktails were strong, but not overpowering. We were going to have a second round, but alas with the drive back to Hilo we decided on dessert and Merriman's Blend french press coffee. We hope to make it back soon!

Can’t say more good things about this place. Our server Christina is really fun and knowledgeable, with her joyful energy we had such a good dinner experience. Every dish we ordered were soook fresh and delicious. I liked: coffee ice cream, the beet salad, poke, tako escargot So good so good I love this place!! :)

Everything about the experience was amazing. Mai tai flight, poke plate, fresh fish and the best steak on the island. Service was top notch, well worth it. If you're lucky, you may get offered some wasabi and ice cream which turned out to be pretty great too.

We highly recommend Merriman’s!! This is our first time to the Big Island and a friend recommended Merriman’s to us. We are so thankful for that recommendation that we wanted to share it with others here 🙏 We spent the morning over at the farmers market at the Parker school and then headed over to Merriman’s. Highly recommend making reservations on OpenTable to ensure you don’t have to wait. It’s very popular! From the moment that we walked up to the hostess stand, we were greeted as if we were coming home. The true feeling of Aloha. We were originally going to go in and just have a late lunch before we headed back to the Kailua Kona area, but after looking at their gorgeous menu, we decided to stay longer and have a more extensive lunch. We enjoyed our conversation with our waitress Faith, who was beyond expectations, so friendly, and so truly welcoming. We ordered one thing at a time so that we could really enjoy our meal and Faith and the other servers were so happy that we were just sitting and relaxing, and there was no rush at all. How refreshing! We normally opt for a glass of wine if dining out for lunch but their cocktail menu was too beautiful to pass up. I had the No Ka Oi and my husband had the Merriman’s Barrel Aged Negroni. Unbelievably yummy!! We ended up having another they were so good! We started out sharing the soup of the day which was a mushroom soup … the best we’ve ever had! Then we ended up sharing the Kahlua Pig and Sweet Onion Quesadilla and it was perfectly proportioned and absolutely delicious … light, flavorful, a masterpiece! After that experience, we decided on lunch … I had the fish tacos and the fish of the day was Ahi. I was a little reluctant because some places overcook the eye and it ends up being very dry. This was cooked to perfection and the portion was perfect. Too light flour tortillas with the perfect amount of toppings. Absolutely incredible! My husband had the Smashburger and the temperature was perfect, it was moist, and completely devoured. Holy moly, EVERYTHING WAS SO INCREDIBLE! We were tempted to lick our plates afterwards, but refrained 😂 we knew we didn’t have room for dessert, but we took a glance at it. It looks amazing and we are hoping to get there again so that we can try a couple of the desserts. Honestly, YUM!!! We couldn’t have asked for a better experience. Everyone was so friendly when we were leaving and welcomed us back anytime. Thank you to everyone at Merriman’s (the host, the servers especially Faith, the chef and kitchen staff) for such an amazingly memorable experience!!!

This is one of the finest and most expensive independent (non-resort) restaurants on the island. My small criticism is on the service. At first I thought our server was terrific, until it started to feel like she was just trying to increase the bill by getting us to order more “why not order 1 of every dessert?” she said. Our group was happy with the food, would recommend the beef tenderloin, corn bread, and octopus escargot. Beware the surcharges, our bill had a total 28% added to the bill consisting of kitchen surcharges and gratuity.

David was amazing!! It’s not just about the food- it is the experience. The timing of the meal was perfect. The dishes were flavorful and fresh. It was our best meal on the Island; not just North. Beet salad, pork quesadillas, my mushroom pot pie was hands down best pot pie. The chateaubriand was melt in your mouth. Don’t forget the Mai Tai!! The pineapple foam on top takes it up to exquisite.

Divine experience. From the relaxed ambience, cool air, soft sounds to the attentive, polite and well trained staff to the various tastes that encounter your tastebuds you will not regret choosing Merriman's! I enjoyed everything posted below but a few that I particularly remember was the pot pie and the steak. Eric Dong took such good care of us and made sure we had an exceptional experience to celebrate a momentous occasion. Quality food, quality service worth the drive from Kona town.

I'm one of the few people I've met who was underwhelmed by Merriman's in Maui, so I was hesitant to come to this one, especially because it was pretty far from Kona, where we were staying. I was extremely happy that we decided to go ! We shared a few different things, including the tomatoes, curries Hamakua macadamia nut crusted Hawaiian Kanpach. I also can't remember exactly what the dessert was but it was some sort of crisp or pineapple upside down cake, Hawaiian style. Whatever it was, I could eat it every day of my life, and never feel guilty. The food was so great here and the service was incredible. Everything was honestly delicious. This was absolutely my favorite dining experience on the Big Island!

Fine dining as good as it gets here at Merriman's. The ingredients are SO fresh and local. The flavors are intense and pure and the colors of everything are vibrant. This is the first time we have had lunch there after several wonderful dinners over the years. Lunch service was more casual, but the attention to detail was spot on.

We first tried Merriman's on Christmas on Oahu and wanted to try their regular menu - wow they did not disappoint! Big shoutout to our server Howard for not stealing us wrong on our dinner recommendations this night! We started off with the lobster ravioli which was good (not incredible itself) but the sage butter and cili oil was a delicious complement. The warm table bread was also great! We had two amazing entrees the scallops (out of shrimp) with the corn bread and kale and the macadamia crusted fish was to die for! My partner literally said it was one of the best meals he's ever had and I concur. We then finished off with the French press coffee, the iconic chocolate purse, and the incredible pineapple bread pudding! What a night!

Nice sit down restaurant that is very popular. I would suggest making a reservation in advance. They are known for their Mai Tais. I had one and it was good. The food was decent but nothing to rave about. The portion sizes were rather small. Standard prices for a sit down restaurant. Staff was very friendly and efficient. Compared to the rest of the island, it's probably a 4 star restaurant. Compared to most major cities, it's 3 stars for me.

It's been a long time since my last visit to this Waimea institution. Luckily, it hasn't changed appreciably in that time ... That's a good thing, IMO. I ordered a bottle of 2018 Robert Sinskey Vineyards Pinot Noir from Los Caneros in Napa ($109). Deep ruby in color, there were hints of raspberry, tobacco and earthy tones. It was a good choice with our entrees. We shared the Spicy Kona Lobster Ravioli ($28) ... This is how lobster ravioli should taste ... a light butter sauce and toasted croutons. Yum! My friend ordered the Kahua Ranch lamb cooked two ways ($55) and I ordered the Chateaubriand ($59). We shared an order of Mushroom Pot Pie ($22). My beef came perfectly cooked and was served with mashed potatoes, haricot vert and a mushroom sauce. The lamb looked good ... I tried a piece of loin, and it was delicious. The mushroom pot pie was delicious! I was hoping it contained morels, but the button mushrooms were fine. It was the crust and the sauce that made the dish a winner. We were too full to attempt dessert, so our meal ended there. $293 + tip for a fine meal is reasonable to me. Four and a half stars ... Highly recommended!

The service was excellent with orders delivered hot and constant refills of water. The ambiance is simple and natural; this is Hawai'i after all! The Mai Tai was strong! With a distinct pineapple taste, you can't go wrong with this dish. The Purple Sweet Potato Chips were perfectly cooked with just the right amount of salt. They were an excellent appetizer with all of the sweetness of Ube intact. The Beef Tenderloin was our favorite dish of the day with a delicious herb butter, pristine meat quality with zero tendons, and fresh green beans. The Fresh Catch of the Day was well complemented with a tomato sauce that elevated the entire dish. Again, the green beans were just as good and the tomato sauce made it even better.

We returned to Merriman's in Waimea for the fifth time last night for a birthday dinner. This time, there wasn't a line at the door when we arrived, but when we left at 7:30PM, there were 5 people waiting to be seated. The wait staff seemed attentive and a little intense. They waited efficiently, but we flagged down our server a few times. They asked about food quality but didn't stay long enough for me to complete my answer. The bread was amazing, but the butter was over-salted. I had the Caesar salad, which had an overwhelming cumin taste and didn't taste like a traditional Caesar salad. We both had Duo combinations. We both had the catch of the day, which included gnocchi, a jumbo shrimp, and ono. The shrimp was great. The ono was dried out and not even hot. I also had the macadamia-encrusted Kanpachi. It was great. The accompanying spinach was extremely over-salted. My wife had the Kahua Ranch Lamb (meat balls) and liked it. I thought the meat balls were good, but not great. She had a Lilikoi Martini with basil, It was good, but it had an overwhelming basil flavor with just a touch of lilikoi. We were served a complimentary chocolate tarte, which had a great flavor served chilled, but the flavor increased as we let it warm to room temperature. We also shared a French Press decaf coffee, which was good, but lacked depth. Overall, the restaurant had good food, although the chefs were too heavy with Cumen in several of the dishes. I felt like they had production down, but service lacked a personal, caring touch.

We've been here a few times, and every visit exceeds our expectations from the previous time. First off, the food is unbelievable. Every dish is spectacular and unique. For example, the Caesar salad had a fried tomato crouton that added so much flavor to an already delicious classic. Next, the customer service is phenomenal. Our server, Emiko, knew the menu so well and was able to answer every question we had. She was so kind throughout the evening, as were everyone else. Eric Dong, one of the managers present this evening, is so good at what he does. He's personable, great at pairing flavors together, and knows his stuff! Don't miss stopping by here if you're on the big island. It's a very special treat!

My partner and I visited Merriman's for our Anniversary and this was by far our favorite meal on the Big Island. From the service, to the food, Merriman's blew us out of the water. We made a reservation for Saturday night and were seated immediately. Our waiter was super nice and food came out at a good pace. We ordered half the menu and everything was good. The beet salad may have been the best bite, it was absolutely delicious! My dad loved the kalua pig quesadilla. The poke plate was ok but it was cool that it came with fresh wasabi! For the entrees, the scallops were nicely cooked and my parents loved the lamb. I love that they had the duo option to pick two half-sized entrees. I got the special of the day which was a fish and shrimp and then the Hawaii Island beef. For dessert, the bread pudding was delicious and the chocolate purse was unique and rich.

Emiko and her attentive crew showed genuine kindness to our 1-year-old and a mentally challenged adult, creating a warm and welcoming atmosphere. The setting, while not oceanfront, focuses on excellence in ingredients, cooking, and service. Highlights included a flavorful beet salad, perfectly cooked chateaubriand, and indulgent chocolate desserts paired with rich French press coffee. The virgin mai tai was delightful, and the lamb and macadamia nut fish were standout dishes. My son especially enjoyed the falafel, enhanced by four unique sauces that allowed him to craft his own sandwiches. Merrimans excels at making every guest feel special, with thoughtful touches and extraordinary flavors. Highly recommended!

One of the top meals we had while on the Big Island. My husband said the Saimin was the best he's ever had; my beet salad was perfect, and the kids finished every last bite of their mac n' cheese + green beans. The lettuce in the salad was so fresh and flavorful I couldn't stop eating it. The lilikoi mousse was light as air and devoured by my youngest. I fear we may be dreaming of this meal for quite a long time.

I was looking for a spot for my husband's birthday dinner in Big Island and immediately thought of Merriman's. In 2023, they were only offering a 3 course prix fixe during dinner for $95 pp. I appreciated the option of choosing 2 courses from the appetizer and dessert section and the option to do a duo of 2 half portion entrees since I am always undecided. Since I've consumed enough sugar during my trip thus far, I opted to skip dessert and go for 2 appetizers and one duo entree while my husband went for one of each category but ahi overload. The poke and ahi sashimi starter was my favorite item of the evening as the sashimi melts in your mouth and the flavorful shoyu poke was perfect on top of those Molokai Sweet Potato Chips. Honestly mainland poke has got nothing on traditional Hawaiian poke where the fish shines through. The special seafood pate with crostini was a lot for one person since my husband is shellfish intolerant so should've probably went for something lighter. I wonder if anyone has ever got 2 orders of the poke for their 2 courses as I definitely would've. The half portion each Mac nut crusted fish and tenderloin was the perfect surf and turf as I bounced between a bite of each throughout the meal, while that wok charred ahi is a lighter entree but perfect to leave room for dessert of pineapple mac nut bread pudding. Of course, can never go to a Merriman's and not get the mai tai with that lilikoi foam. Wonderful service, just a bit of a drive from wherever side of the island you are staying.

My favorite restaurant, maybe ever? The service is amazing. The food is mind blowing. The place is gorgeous. The passionfruit mai tai is the cocktails of all cocktails. I always look forward to coming whenever we visit the Islands. I have never had a bad meal here. And they accommodate allergies so well, I never feel I am missing out (gluten and dairy free). This is what food is supposed to be and taste like--I mean, they made me like beets!

From the service onward to dessert and coffee, everything was practically perfect. Could not have asked for a better meal. We started with the signature mai tai. We ordered the tako escargot, beet salad, local lamb, local beef, complimentary chocolate torte to celebrate my birthday, lillikoi mousse, and local French pressed coffee. Oh and a lovely Rhône wine flight with dinner. The service was impeccable from start to finish. We loved it all!

Christmas meal at Merriman's was unanimously the best meal of our lives. The chateaubriand and kampachi (fish) were absolutely outstanding. I was a bit hesitant to pay the prix fix price for my two boys, ages 12 and 14, but truly no regrets. They loved every single thing starting with the pumpkin soup. We were treated so kindly and everything was so beautiful. We will remember it forever. Reservation recommended.

I was delighted by our meal at Merrimans. Loved the fresh local vibe of the whole menu and the knowledgeable staff. Everything from cocktails to dessert was delicious. The dining room felt casual and yet special at the same time. While not an inexpensive meal, we felt it was on par with other meals we had in the waikoloa area but definitely a step above in terms of ambiance and service. Would love to return in the future.

This restaurant felt homey and authentic. It is regional Hawaiian cuisine and our server was very friendly and helpful. We loved the four dishes we ordered and the complimentary soft warm bread with the best melted butter! The mushroom pot pie (with puff pastry!) was delicious. The Kailua pork quesadilla with kimchi was innovative and yummy. The miso green beans is a must. I am left insprired to make this dish at home. These are three dishes I have never had before and they worked! They are creative, tasty and flavorful. The 4th dish was a tomato bisque and it tasted fresh and gourmet! We really enjoyed our meal at Merriman. For my partner's birthday, we were treated to a dark chocolate tart that tasted heavenly. The dessert was not too sweet and had good quality chocolate. As a farewell gift, we were given two complimentary house-made macdeamia short bread cookies in a sealed cute bag. I had them for breakfast the next morning with coffee and I wanted to go back and purchase some (if they sell them)! The food is made with love, care and of high-quality. I am so glad we drove 30 minutes to check out this restaurant. This is a winner for me. I highly recommend this restaurant!

One of our favorite grindz on the Big Island is Merrimans in Wimea. We decided to go there for lunch and Merrimans did not disappoint us. Their signature Mai Tai was excellent. We started out with the pork / onions quesadilla with a mango puree. It was "Ono!". I ordered the smashed burgers for lunch and my husband ordered the fish tacos. Both we excellent! We highly recommend Merrimans in Wimea on the Big Island. You won't be disappointed.

I will say, I loved this spot pre Covid. There were so many farms to choose fresh produce from that their menu always had something exciting on special. A true farm to table experience! The food post Covid is still good, but the menu doesn't change as much as I like. It is hard to get in with a large party because it is one of the better quality lunch spots in Kamuela. I would visit for work and typically could sneak in without reservation but it's highly recommended so you're not waiting a while! The service is quick but the patrons typically like to relax and so the tables don't turn over as fast as you might expect. What's on the menu now that I like for an easy lunch is the eggplant sandwich. I also love their salads and crispy goat cheese! Every now and then, they have a great special for lunch and I lucked out with a prawns dish!

I was trying to find a spot to take my boyfriend and his family out to celebrate a birthday. I was hesitant at first to book Merriman's due to its atmosphere but decided to book it because of the farm to table concept. After eating here, I'd highly recommend! You're not going to be getting a ocean view or anything glamorous but the food and service was top notch! All the food was also sourced within a 10 mile radius of the restaurant. Appetizers: - Vine Ripened Honda Farm tomatoes: good but nothing to shout about. It was basically raw tomatoes on a plate. - Tako Escargot: this was our favorite appetizer! A super unique way to eat octopus and so flavorful - Spicy Kona Lobster Ravioli: our server highly recommended this and honestly it was pretty bad. The pasta itself was nice and thin but the inside part of the ravioli lacked flavor and was very bouncy. Skip this! Mains (order them both! They were so good!) - Diver sea scallops and wild caught shrimp - Lamb (depends on the nights preparation) Dessert -- we choose of them and all were amazing! Don't miss out on the dessert, you'll regret it!!

Came here for a birthday dinner and got seated promptly because we had a reservation. Our server, Fay, was GREAT! She gave us the full run down on the popular items on the menu, was full of energy and personality which added to the whole experience, and was attentive to our needs. For the food and drinks, we ordered a virgin mai tai, lilikoi margarita, catch of the day entree, and the lamb entree. The drinks were pretty good, nothing much to say about them. The catch of the day was kampachi (yellowtail) with an assortment of sides such as two giant shrimps, broccoli, and these croquettes. I thought this entree was wonderfully put together and extremely flavorful. I've never had kampachi before and wasn't sure how it'd taste but Fay explained that it's a yellowtail that's firm yet juicy and she was spot on. The lamb entree was good but we thought the lamb was a little under seasoned. We also came here to celebrate my girlfriend's birthday and they gave us a little cake! Highly recommend this place if you're looking to celebrate a special occasion or if you just want a good meal.

Located 30 minutes away from Waikaloa is Waimea and Merriman's Restaurant. Merriman's is a Hawaiian casual but fine dining experience. Our party of 4 had an amazing meal. We were seated very quickly. I do like a restaurant where you get to see inside of the kitchen (photo). We started the meal with a few signature cocktails; notably their special MaiTai. We ordered two salads that we shared. The locally farmed tomato salad and Sichuan smashed seasoned cucumber salad are highly recommended. The Kona lobster ravioli was the next shared starter. It was wonderful and decadent. For main courses we had two seafood specials of the day, one Kahua Ranch lamb, and I could not decide so I ordered the "Duo" with wok charred ahi and lamb. We capped the meal with two chocolate desserts. I anticipate that all the staff in the restaurant are excellent, but Kurth stood out as an amazing server. The restaurant is highly recommended!!

After reading all of the reviews, we knew we had to check it out. Merriman's has a super chill vibe, with fine-dining food so its a great blend. My wife also added on the wine pairings of which they all were great. The absolute star of the experience was the Lilikoi Margarita. Seriously delicious. Food was superb and the desserts were out of this world. Chante was the best and provided excellent service while also letting us enjoy the food. Worth the price!

Im not sure why I haven't written a review for Merriman's yet! This is always a must go for us when we are on the island! We just got married and not only was this our top recommendation for everyone but we were able to go multiple times with family and friends. The food & service was top notch every time! I can't wait until our next meal with them! The menu does rotate every so often and so we love trying new dishes and having our favorites every time.

I came here for a delicious lunch. The fish on the fish sandwich was light, flakey and moist. The Cesar salad was fantastic. The ambiance is clean and fresh. Our server was busy with many tables, but still friendly and attentive. I would absolutely recommend this restaurant. I wish I could go back to try dinner!

I really wanted this to be better. At almost $650 for six people, I expected it to be better. We drove up from Mauna Kea to Wailea (about 25 minutes up winding roads) and made it on time for our reservation. We were seated immediately and promptly ordered wine and settled in. I ordered the slow roasted lamb and was super excited to try it. About 20 minutes after ordering our server informed us that they were "out of the lamb" and substituted a lamb chop. I was pretty mortified that we didn't get to select an alternative to what I was excited about getting. I can have lamb chops at home. Overall this is an extremely pretentious and snobby; old and "fancy" place that I would avoid going to in the future. Unless you're old and pretentious. Then you have have your over priced meal and quickly tell all your friends about how amazing you are for having been to Merrimans for dinner. Blah.

We have been going to this restaurant since 2004 so this is an informed review. The ambience in the restaurant has remained the same. The food and drink quality have changed and not for the better. Beginning with the Mai Tai, the lack of the Tiki glass takes the "fun" of the drink out of the presentation and the honey dew froth makes it sickening sweet. The piña colada is ok, but would be much better with more coconut and if they actually possessed a blender. The wait staff seem quite pleased to note that the restaurant does not possess a blender. The special tomato salad is ok, but the tomatoes are not very flavorful and blue cheese is of poor quality. The Yukon potatoes are crisp, but dry. The mushroom pie is ok - nothing special. The nut crusted fish was better than the other entrees, but not as good as it used to be. The New York strip was also not up to expectations. The pepper coating is weak, the temperature was not prepared to request and took three times to get it closer, but still was not done to request. They apologized profusely and covered the cost of the steak. The steak arrived at the table almost thirty minutes after the other guests at the table finished their entrees. The bread pudding is more of a crisp, the torte is nothing special, and the chocolate purse was better before. Also, there is now a 4% kitchen surcharge added on to the bill. It's sad to post this as it was one of our favorites in the island.

We decided to give the original Merriman's a go given the local reputation. We had a horrible Christmas Day dinner at the Maui location a few years ago but hey this place is famous!, got to give it another chance. Wasn't a busy day with less than half the tables fill. The busboy and hostess were great but our waitress was so cold and ambivalent and we waited so long to get our water, order, food and check. We thought about dessert but didn't want another 30' wait here. Oh how was the food, was good indeed from the locals, that is when we finally received it about 30' after sitting. But is it really comparable to the best of continental US, close but slightly less call it four to four.5 stars. I think people overate this place after reset to the local fare. Lastly between the horrible waitress and wait we will skip all the Merrimans going forward it has been 0 for two so far

We had reservations for a party of three for an early lunch on a Saturday afternoon. We got there with only a few minutes to spare, but were greeted by a very cheerful host. We were seated immediately at a small window seat. The restaurant has a great ambiance and was quite peaceful. We ordered a bunch of things (see photos) and everything was delicious! The mahi in both the fish and chips and the fish sandwiches were flaky and moist -- cooked to perfection. The quesadillas gave a pretty unique flavor combination that was also to die for. The desserts were also divine. It was the first dining experience in a while that every dish we tried was wonderful -- I'd highly recommend you give it a try!

It's rare these days to get a complete 5 star experience where all the components of great fine dining are met. Merriman's Waimea, the flagship restaurant delivers great food, an extensive wine and beverage list, and excellent service in a beautiful refined ranch style setting. I love the decor with enlarged quotes and photographs representing the people, produce and inspiration and come together to create the food. This Merriman's is head over heels above all the other ones! They were packed so good thing I booked in advance. For dinner they only had a pris fixe option for $95 which you must book on Open Table. I like how the menu is organized into 1)Firsts and Desserts and 2) Entrees which allows for flexibility so you can get 2 of either or 1 of each depending on if you're a sweet tooth, savory tooth, or "normal". It was perfect for me and my friend who shared 3 appetizers and 1 dessert as well as our 2 entrees so we could try everything. You can also do a wine pairing where you must also make decisions depending on what you want. FIRSTS: We started with a glass of wine and a taro hummus amuse bouche with thinly sliced Moloka'i sweet potato chips, crispy and not oily. Yum! Hirabara Farm "nightly rotated" lettuce salad with tomatoes and cucumbers all from the Big Island accompanied by a nice citrusy dressing. Basic salad ingredients but bursting with freshness from the volcanic earth! Hawaiian Style shoyu poke-had Just the right amount of everything including inamona, ogo, green onions, avocado, and sweet potato chips to scoop it up, creating a beautifully balanced symphony of ocean flavors which is hard to find in poke these days. *Chef's kiss!! Garlic steamed Keahole clams- somehow they were able to make this dish buttery without being too rich with kale, sweet onions (no bite), and lemon juice to complement the sweet clams! *Chef's kiss again! ENTREES: Butcher's Cut Lamb- tonight it was served 2 ways on one plate which was cool! We both preferred the sou vide shank to the Shepherd's pie which was saltier but still good. This lamb had no game which was a good thing! It was accompanied by perfectly cooked green beans that came with a kick! Kua'aina beef tenderloin- soft and delicious with bordelaise sauce. DESSERT: Chocolate purse-phyllo purse filled with rich Waialua chocolate accompanied by vanilla ice cream. This place makes me look forward to traveling to this side of the island!! Can't wait to return

Continues to be the best restaurant on the big island and it isn't even close. Why? When you walk in the service is impeccable. Attentive and when we were told "table will be ready in five minutes" it was. Menu is fresh. Fresh. Fresh. We had eggs Benedict with kalua pork. Egg was done perfectly. Pork was super flavorful. Service was friendly. Price points were reasonable. Setting is classy but comfortable. Hawaii is expensive, service is spotty and the menu, even at the high end places seems the same. Not here. Please go.

Perfectly cooked meals were enjoyed: Pork quesadilla with kimchi, lobster ravioli with an Asian dumpling twist, Ahi Tuna, Roasted Lamb, Macadamia nut encrusted Kamala hi, and a Duo of Hawaiian beef+catch of the day! A must eat on the big island!

I really don't want to give it three stars but in comparison to the other couple of places we had while visiting family, this was one didn't live up to expectations. The good first, the restaurant was beautiful (I believe this is the first Merriman's) and the service was wonderful. The food looked beautiful as well but portions were small. Not sure if you can see the fish in the picture with the potatoes and roasted vegetables but it was very small, about half the size of my iPhone. My dish with the eggs had pork underneath it, but again a very small portion. My daughter's dish had pork and shrimp with her Saimin but she was still hungry afterwards, they also forgot her poached egg. I do think everyone was well seasoned and tasted very good I'm just not sure about the portioning. I would try to come again but probably not for brunch it didn't seem worth the price.

I ate here on April 11, 14, 15 and 17, 2024. The food for each meal is rated as follows: Lunch #1: I ordered the special which was grilled prawns in a sauce with small, whole tomatoes. It came to the table in a sizzling in a cast iron pan. I was cautioned about burning myself. It was almost impossible to eat the tomatoes since they remained sizzling hot against the cast iron pan. Overall, I thought the dish was too oily, even the bread was soaked in oil. The side salad was okay but nothing special. I also ordered the mushroom soup. It was excellent. Second meal was Brunch on Sunday: I ordered Chilaquiles. I loved the home-made chips, the presentation was eye-pleasing, and the food was very good. Lunch #2: I ordered the BBQ pork sandwich. Sandwich was fine (had an unusual flavor that I couldn't identify), price was right. Dinner: Ordered the Chateaubriand. Meat was cooked to perfection and very tender. I cut off most of the seasoning on the outside as I found the black pepper overwhelmed the delicious meat. The taro whipped potatoes were good. The green beans were almost inedible. They came to the table bright green so they looked good. However, they were tough. I grow green beans in my garden every year. I am fussy about what varieties I grow. I want a stringless bean that tastes good when cooked just about 3 minutes. These green beans did not measure up to that at all. The service was excellent at all four meals with only one small exception which involved not being recognized as the next person waiting to be seated on Sunday morning -- probably because I was a single woman traveling alone. The wait staff remembered me and greeted me warmly on my return visits. Kaali'i was especially gracious in making me feel welcome. The ambiance is lovely.
