We visited Monte Cardon for a truly exceptional cooking class with our family. We prepared a delicious meal (two refreshing salads, aguachili & sea bass) while enjoying incredible expansive views of the desert and learning new knife skills and presentation details. The entire experience from start to end was handled with an attention to detail, kindness and professionalism from Ubaldo, Aldo, Olga and the entire team at MC that made it truly unforgettable. We feel lucky to have had the privilege to visit monte cardon again and see the ambitious vision continue to come to life!!

Monte Cardon is an absolutely breathtaking wedding venue in Cabo with some of the most stunning desert mountain backdrops - especially at golden hour! As a wedding photographer, I was in awe of the natural light and endless photo opportunities throughout the property. The modern architecture blends so seamlessly with the landscape, and the open air ceremony space makes for such a magical setting. What a stunning, hidden gem. In the middle of an oasis of palm trees and large cactus, beautiful and serene with birds, bats, and an unparalleled 360 degree view. The sunset was stunning. Recommend using the driver service as it is a ways away from San Jose del Cabo (where we were staying) and if you enjoy their amazing cocktails or wine, you will be much safer in a taxi. The property is under development and the owners had been away, so our reservation was a little tricky to nail down, but we were very pleased it worked out. As it turned out, my wife and I had the place to ourselves. I'm sure as word gets out, this won't happen very often. The 5 course meal was delicious and elegantly prepared. All local and high quality ingredients. Spice levels were lovely and not over salted (a frequent complaint for me). We allowed the waitress to recommend paired wines and they were all Mexican wines and amazingly paired. This place will only get busier - I hope to return on our next trip to Cabo.

As we drove in the rugged outskirts of San Jose, our anticipation grew. Monte Cardon is situated at the top of a foothill with dramatic views and gorgeous brick architecture. Olga met us with a tray of delicious mango cocktails (it was the end of mango season) and we sipped as she showed us the grounds. We were also introduced to the ambassador puppies San Giovese and Chardonnay, who were friendly and added fun to the evening. After a tour of the kitchen and meeting the cooking staff, we were taken to our seats right as the sun set. The evening breeze started up and a fan was added to ensure we were kept comfortable. Then the dinner started. Course after course, pairing after pairing with delicious and unique Mexican wines, we were more and more impressed. All of the plates were made with fresh and local ingredients. The mushroom dish stood out, with its lightly-fried leeks. We had a tuna steak that everyone agreed at the table was the best they'd ever had. The sauce pairing was magnificent. We ended the meal with a lemon creme brulee and a request: could they turn off the lights for a little while we stargazed? As the lights shut off and we sipped our final pairings in the dark, the Milky Way was visible. And our night was complete. One of our friends commented that he'd always be chasing this meal, trying to relive it elsewhere. I think we'll be chasing for a while.

We had our wedding at Monte Cardon and it couldn’t not have been more spectacular. The setting is unlike any other, an oasis in the desert. The food and service were both outstanding, and working with Ubaldo was truly a pleasure. The service here is flawless. From the moment you’re greeted, the staff is warm, attentive, and genuinely passionate about creating a memorable experience. You feel pampered yet at ease—like a cherished guest in a friend’s luxurious home. The menu is a celebration of Baja's rich culinary heritage, infused with modern creativity. Each dish is a masterpiece, showcasing fresh, local ingredients and innovative flavors. Every detail is thoughtfully considered, the wine pairing is perfect with each dish that is presented. Our 6 course dinner, including warm artichokes and mushroom salad, delicious tomato soup, duck ravioli, local seafood (the famous almejas chocolatas and an outstanding lobster) finishing with a light and delicious lemon crème brûlée. Each meal is paired with one of their expertly curated wines or a signature cocktail inspired by the region and presented by Olga in the most unique and memorable way. Monte Cardon is more than a restaurant; it’s an experience. Whether you’re celebrating a special occasion or simply treating yourself to an unforgettable evening, this is the place to be. The combination of stunning views, exquisite food, and unparalleled service makes Monte Cardon a must-visit destination in Baja California Sur. Five stars are simply not enough for this gem. We went to dinner at Monte Cardon last week. We were met by the owner/executive chef, Ubaldo and his wife. He showed us the amazing property and the kitchen. We then sat at our table overlooking the Sea of Cortez and the Baja mountains on the other side. Each course was not only beautifully presented but tasted amazing! Olga, the guest liaison, was so incredibly informative and made our dinner experience so fun. The entire staff was wonderful. It was a night my family and I will never forget. Thank you to all of you!
