Mosaic is on the second floor of the Hyatt Regency on Burrard St. in Vancouver. On a recent two-night stay at the hotel, we came here twice because their calamari was out of this world! When a lady who appeared to be one of the managers here told us we should try it because it was the best calamari she's ever tried, I thought she was just being completely biased. But it just might be the best calamari I have ever had myself! I was really surprised. The batter was so freaking delicious and just the perfect thickness, the squid was so fresh, the bell pepper slices and cilantro gave it all an extra zing, and the sweet and tangy dipping sauce was money! I might have to drive back to Vancouver just for this, and I'm salivating right now just thinking about it.
The duck confit poutine was a dream. Ugh, if weight gain wasn't a phenomenon, I wouldn't have stopped eating this all weekend. Thick-cut fries, wonderfully rich gravy, and a generous topping of house-cured duck confit.
I loved the servers and the bartenders. We had a great time chatting with them about city life. They also poured some great drinks! Okay, I didn't actually do any drinking here, but I did order an iced Americano, which was beautifully prepared by a male bartender! It was the fanciest iced Americano I've ever seen, maraschino cherries and all, and the espresso they serve here is some of the best I've had yet. (Okay, I just Googled it, and apparently, Torrefazione Italia used to be a coffee roaster, but it's now a high-end Starbucks brand. The family who started it also started Caffè Umbria, which I love! Welp, good to know. I had no idea what I was drinking was a Starbucks brand espresso.) Service was quick, too. No complaints whatsoever!
You definitely shouldn't miss Mosaic if you're staying at the Hyatt.
