Tried Mosaic Grille for breakfast, located on the second floor of the Grand Hyatt Vancouver. Honestly, not worth the $50+ per person if you’re already staying at the Hyatt. The live egg station was the only real highlight — everything else was pretty limited. Staff was friendly and service was good, but the food selection didn’t match the price.

We had the pleasure of dining at Mosaic Grille recently, and I couldn’t be more impressed with the experience. From start to finish, everything was exceptional. First and foremost, I must commend the manager Ivan, for running such a smooth and welcoming environment. His attention to detail, approachable demeanor, and clear passion for the restaurant really stood out. It's not every day that you encounter a manager who is both professional and personable, making sure every guest feels like a VIP. A special shout-out also goes to servers Alex and Preetam. Both were outstanding! Alex made our dining experience seamless, with a great sense of timing and an obvious knowledge of the menu. His suggestions were spot on, and he was so attentive without being overbearing. Preetam’s positive attitude and genuine care for our satisfaction really added to the overall warmth of the meal. They both created a comfortable, enjoyable atmosphere that made us feel like we were truly being taken care of. The food was, of course, incredible, but it’s the service and overall experience that will bring us back time and time again. If you’re looking for great food and top-tier service, this is the place to be. Highly recommend! Once again a huge thanks to Ivan, Alex, Preetam you all were amazing!

From the immediate welcoming service to our fanominal server Anni to the incredible food I can't say what I liked best. We went with the starter and the main for 39. The starter was the seafood chowder and I have been leary to order chowder as I had it in New Hampshire once and have never found one that even came close to it until today. Your chowder was to die for literally. Then we had the Salmon. It was even better than the cruise ship salmon which is hard to beat. Anni's kind friendly approach made the night for us. Were not celebrating anything special but she made us feel like we were. This kind of service is few and far between. She is a treasure for sure. I hope she knows she made our night.

Enjoyed the chowder and prawn linguine. Have eaten here in the past while staying at the hotel and it’s always been decent. Lots of clams in the chowder. Hearty. And the linguine was really quite good. Not a thick sauce which was a nice change. The flaked cheese on top was nice. Seafood was fresh. My wife had the crispy chicken wrap and she enjoyed it.

On the 2d floor of the Hyatt Regency Vancouver, Mossic offers a solid breakfast option for hotel guests. Breakfast buffet is offered along with regular breakfast menu but we chose the buffet for its variety of offered foods, including a nice made to order omelet when expertly prepared by Fritz. Very fresh smoked salmon was another highlight, as was the brie cheese and assortment of fresh fruit and pastries- though the croissants could have been a day old on one morning. The French toast was also very good, as were the pancakes the next day. The sausages and bacon were also good (on a Friday and Saturday) but not so good on a Thursday (overcooked? Reheated?- don't know).. Excellent service by Ashley and Francisco.

This review is for the little care next to mosaic bar and grille. I went here for breakfast yesterday and almost got the ham and cheese croissant, but saw their chia seed pudding. Their chia seed pudding is great! I didn't know it would be a coconut base, but just letting others know in case some may not like it/are allergic. It is super fluffy and they do give you a lot for the price. Make sure to mix it in as well! The workers were kind and I got my pudding fast.

Well, I haven't been here in ages. It's a convenient downtown location close to the Burrard skytrain station, on the second floor of the Hyatt. We went in December when they were showcasing the numerous gingerbread houses for their annual contest, which is quite fun to peruse before or after your meal. Ask for the meal... well, my burger and fries looked amazing. But unfortunately, the pre-fab burger patty they used had a weird texture and taste, like it was a gelatinous meat-goo that got extruded into a patty shape and then cooked. It reminded me of those cheap burgers you get at community events where volume and cost drive the decisions. I suppose it's my fault for not checking to see if they make their own burger patties before ordering. Which is unfortunate, because the rest of the ingredients were good quality. The fries were also a bit odd texture wise, as in, they had a light, crackly crust, which was quite nice, but the inside seemed... slippery? Waxy? I'm not sure how to describe it. Anyway, the service was stellar, as always. That's honestly the main reason why I'm happy to go there, because the service is top notch, the location is super convenient, you get a nice view, and the food is usually pretty reliable.

I had my breakfast here during one of my stats recently so I can only speak on that. The restaurant is located on the second floor inside the Hyatt Regency Vancouver hotel. I think it is safe to assume most, if not all, those who dine there are hotel guests. They offer breakfast buffet and a la carte. I went with a la carte because breakfast buffet seemed to be a bit excessive for me. It is also more expensive. I ordered the classic breakfast with sunny side up and multigrain toast. It is pretty typical and standard breakfast item so no surprises there. The service was good and my server came over a few times during my time there to make sure my coffee was topped off. Overall I think this is a good and convenient place to have breakfast if you are staying at Hyatt Regency Vancouver.

Spent an anniversary weekend and ate at the mosaic for breakfast dinner and lunch. My husband and I had their 3 course dinner twice during our stay ! Nicest staff and really enjoyed the food.

Review is for the breakfast buffet only. Minimal number of options, not worth the cost. It was relatively fresh, replenished regularly. We were not checked on as regularly as we would've expected for refills of coffee and water. Overall, I would not recommend for the cost point.

Convenient if you are staying at the hotel. The food was good. I was blown away by some super crispy, perfectly cooked roasted potatoes the first time I had breakfast here. I ordered it again the next day with an extra order of potatoes- unfortunately they were under roasted and I wonder if it was just a fluke the first time around. Otherwise I wasn't disappointed in the food, just not impressed. Didn't do the breakfast buffet or lunch/dinner but maybe next time!

Awee boo! One less never have I ever! Never have I ever had such a bad avocado toast till now. It was ice cold! ( they probably forgot to heat it after ice bath?).. and so crazy sour! Came here for Mother's Day but before the brunch started with my family. They picked the spot. Our waitress was so nice but the food! The worst avocado toast ever. And egg Benedict's too which were a ok. But still. Coffee, the views and juice was good! Waitress was great! Food was just awful. Perhaps buffet would have been better that day but we had several meals planned. It's easy to make avocado toast especially with all the ingredients they have added. Shame it was the worst avo toast ever! Cold and all the gooey yolk.. eek

What a great restaurant this was. They're on the 2nd floor at the Hyatt Hotel in downtown Vancouver. I had about a 15 minute wait for a table but I poured myself a coffee and enjoyed the Christmas decorations while I waited. I ordered the 3 egg omelet with toast and potatoes ($26). It was delicious . The waitress and hostess were both very friendly and helpful. Kinda on the pricey side but I enjoyed the atmosphere and devoured my omelet.

Fantastic experience at this restaurant! I was immediately greeted by the host, as well as my waitress, Thessa. I ordered the tomato bisque to start and it was a very tasty and healthy portion. For my entree, I ordered the salmon dish, which was absolutely exquisite! The salmon was cooked perfectly and served over a good portion of mushroom risotto in a prawn bisque. The risotto alone could be a dish on the menu I would come back for; tons of long, skinny (enoki?) mushrooms. Big kudos to the chef and kitchen staff for creating a fabulous plate. Thank you!

The food was excellent as well as the service. Tabata was very attentive and made excellent recommendations. While it was a little noisy due to a group, the overall ambiance was nice. I would recommend a vist.

I came here for a birthday dinner and was pleasantly surprised. I like the dining area with its spacious sitting for large or small groups. There is also quite a nice view of the city if you happen to get a table by the window. The service is friendly and the dishes yummy. The appetizers, both the ahi tuna ceviche with taro chips and the mussels were tasty and plated well. The beef striploin was delicious and cooked just right. The cocktail list isn't great, though they offer a variety of wines and beers.

I had come here in the past for a Dine Out Vancouver meal a few years ago and quite enjoyed it, but haven't been back until now. Just had their burger for lunch yesterday and was SUPER impressed. The patty was of incredibly high quality and cooked to a tender, slightly pink medium and placed on a soft but sturdy brioche bun. The burger also came with bacon, fries, ketchup and two fancy aiolis type sauces of some kind I slathered all over my burger. Either way it all goes together wonderfully. I can't emphasize how pleasantly surprised I was with this burger. Highly recommended.

The place was closed for a while dur to Covid 19, but recently they reopened for breakfast. On that day, I ordered a 3 topping omelet (Ham, Spinach and Cheese). It was great in taste, just like they made in past breakfast.

I went to a conference at the Hyatt Regency a couple months ago and drank at Mosaic Bar & Grille for an hour or two before dinner each day. It was a comfortable place to hang out and catch up with friends, tucked up above ground level so that it was always pretty much empty except for other conference attendees and maybe the odd hotel guest. The atmosphere was calm and easy, and service was great, friendly and prompt. By my third visit, the waiter recognized both me and the friend I'd been drinking with--she remembered our preferred beers before we could open our mouths to order them. I drank the IPA on tap all weekend. I think it was the Red Racer IPA, but don't quote me on that. I also had a margarita somewhere in there and enjoyed that too. Mosaic closed down at ten every night, forcing us to go downstairs to drink at Grain (louder and more crowded and just worse in every way), but I was happy to it was open during the day. Every conference needs a good bar where you can spend down time, and for the Hyatt Regency, this was definitely the place.

Wonderful location and delicious food in the heart of downtown! I had a groupon type deal at this restaurant (vaneats, rip) and with the coupon, we were able to choose two from the following Appetizers: Earth Apple Farms Mixed Kale White Asparagus Bisque Entrees: Braised Maple Ridge Farm Veal Cheeks with Stinging Nettle Pasta BC Bouillabaisse with Spring Salmon Green Garlic Quinoa Risotto And Dessert: Maple Espresso Creme Brulee MOSAIC's Signature Triple Layer Cake wanting a variety, we ordered everything except for the quinoa risotto and instead got two more entrees from the regular menu. Everything was beautifully presented especially the veal cheeks with nettle pasta which was extremely thin and clearly made in house! The bouillabaisse was wonderfully flavoured and we also got some fresh steamed spot prawns done simply and triple layer cake was one of the best things i have ever consumed. Huge, chocolatey and decadent it was a perfect dessert. Overall, the prices are a bit high on a regular day but the food is very good and the cake itself is worth a try!

Good Dining Experience I was traveling to Vancouver on business and stayed at the Hyatt downtown, where Mosaic is located. The food is good, the service was good, and the view is excellent. Since this was my first trip to Vancouver, I wanted something local, so, at the server's recommendation, I had the salmon, which was delicious, and slightly more meaty that other salmon I have had, so perhaps there is a local flavor :). The food was very attractively presented

Came here after work and met a friend for dinner. As we both work downtown it was a convenient place for us to meet. Located in the Hyatt on the 2nd floor. It wasn't that busy for a week day evening, but our server was not very attentive as on occasions we had to flag her down to get her attention. I think it was because she had too many tables to serve. Food was fine, had the soup and salad.

This review rating is based mostly on the service at this restaurant-but I will also make note of the food. We were seated immediately at a great round table so all 5 of us could enjoy conversation. The buffet is really good, as they have a chef that makes you eggs any way you like them. Although he is allowed to accept tips-he was not allowed to have a jar or bowl out-so I think we may have been the only ones who tipped him in a very long time-which is a shame because he is great. Our waiter (I will edit this review as soon as I can find my notes with names) was awesome, as was the manager. Very attentive to us, refilling waters and coffees often and just very polite and kind. Food was fresh: Fruit (fresh bananas, apples) Buffet: Nuts, dried fruits, breads, muffins, croissants, cottage cheese, juices, individually made eggs/omelets and sides.

Food here is good. Very tasty except with one question is how healthy is it? My salmon with mash potatoes is super rich filled with butter. There must be a whole brick of butter in there. Salad was good. Nothing special. Lastly was the ruben upside down cake. The cake was really cold. Wish it was warm. Service not bad. The bun was cold but the butter did bring out the flavor. I have something against cold bun but I am ok with it. I have had their food many time. Will come back

Came here for a business lunch a few weeks back. Nice, bright interior, very spacious, not too loud, and good service. I had a chicken dish with gnocchi and vegetables which was good, although chicken was slightly overcooked and I wish the dish had come with more vegetables. Overall a safe bet for a meal downtown.

Amazing service and amazing food!! We ordered the sablefish, steak, burger, pea bisque and calamari. All the food was delicious and we were super impressed. The sablefish was beautifully done, crispy on the outside and super moist on the inside. The food was amazing and the plating was beautiful, very impressed! Our waitress was super friendly, very helpful and funny. Because it was a birthday celebration for our friend, we got a complimentary chocolate cake big enough to feed 4 people but we finished it with 3. It was super delicious and a great way to end the dinner, we were going to go for dessert afterwards but we were too stuffed! I would definitely recommend this place for a birthday celebration, anniversary, etc. Parking after 6pm-6am at the Royal Centre Impark was only $4 on a Saturday night! Super good deal if you want parking downtown!

3.5 Stars? I've only been to Mosaic twice but both experiences were quite different. The first time I dined here was during their first VanEats coupon period, where you got a ton of food for only $22 (I believe there was another $28 coupon a few months after?) This was really good value and we were really really stuffed. I would have given this experience 4/5 since I enjoyed the food but it wasn't spectacular. I remember the smoked salmon was very impressive because it came on a plate with a glass dome filled with smoke and when served, the waiter removed the dome and the salmon would magically appear! (I didn't explain it very well but it was cool) Also, the first time I went was really good because they served mini scones with butter rather than the free regular bread that restaurants typically serve. These were delicious! Anyways, the most recent experience were was a bit of a disappointment. I would probably give 3 stars, hence the 3.5 average at the top. Their "mini scones" have changed and they aren't as good anymore. The entree portions are also a lot smaller now (referring to my photo) and it's quite an empty restaurant even at 7pm on a Saturday night! The scallops that I ordered were pretty good but there wasn't but subsistence in the dish... I actually really wanted to order their famous chocolate cake but I had too many sweets that day so I restrained myself from doing so. Anyways, Mosaic is decently priced and the service is good but you don't seem to get much value for your money but at least the dishes are quite tasty and kind-of unique?

So I have to say this restaurant located inside the Hyatt was a bit disappointing. First the menu is very small and limited. Second the server did not even really come back to fill my water glass. Third the food was lousy. We had mussels they were dry and bland. My chicken dish was not great either. The mussels are served with french fries which is bizarre but the fries were really good. Best thing they had given us. Overall the food is just okay and the place is overpriced for the quality of food they serve.

Good food. Small portions. Not too loud. Abysmally slow service. 40 minutes until we got any attention. An hour and 45 minutes until we saw our food. So, if you have no other plans for the evening, and spending a couple of hours for a dining experience in a comfortable place with a nice atmosphere is what you are looking for, this is your place! That said, service improved after we flagged down the manager. And our meals were comp'ed by him - which was greatly appreciated and not expected - that acknowledgement was worth an extra star.

Mosaic Bar & Grille in Hyatt Regency Vancouver, we really enjoyed the brunch there. It has a nice open area and side windows to look out downtown scene. During holiday season, they have a lot ginger bread castles displayed in lobby. It stopped us for awhile to check it out. We started with good coffee and checked out the lunch menu. We almost wanted to order everything on menu. Seafood chowder - It's so creamy and rich. Delicious!! Tuna & Green salad - So refresh and light, just absolutely matched w/my chowder. BLT - The burger just perfect and garlic fries were so tasty. Crab Benedict - Fresh crab meat and perfect poached egg with amazing hollandaise sauce. Corn beef sandwiches - Fresh and thick roast beef sandwiches Overall, It totally exceeded our expectations, probably this is "so-called" hotel standard.

Most amazing banana split ever. The bananas are candied like the top of cream brûlée. Topped with fresh strawberries and pistachios. The salmon tacos come with a side of guacamole that they need to add the menu with chips. Service is grand. Lastly I will probably gain 10 Pds in the 4 days I will be here.

Ok I'm not a Dine Out fan. I wholly admit that yet I did go to a dine out last night. I've never been to Mosaic Bar and Grille. We got an 830 dinner time so when we got to the restaurant it was pretty much empty. I think we were the only active table they had going, so of course we got impeccable service! The food overall was ok, but I've had much better! I started out with the cauliflower bisque. A bit flat tasting... And too creamy for my taste. My main course was the Pork Belly over couscous. Hey I'm Chinese man!I know good pork belly! I've been eating pork belly since I was a little kid and this was not good pork belly! The most important part of pork belly is the top skin. The skin is suppose to be crispy and crunchy.... This skin was not good at all. It was loaded with oil and soft. Even the meaty parts of the pork belly was a bit too over cooked. It was chewy not tender as its suppose to be. The couscous was pretty good. I like the buttery taste, but I did not think the bits of Brussel spouts thrown into the couscous matched. They were two competing flavours. They did not blend well together. My friend DC went to a Dine Out last year at Mosaic and he said the highlight for him was the chocolate cake. I guess I was really looking forward to it based on what DC said. I have to admit I was disappointed by the final result. I found the cake to be too hard and heavy. Certainly it was too rich for me to eat the whole thing. I could only stomach half of it. My experience at Mosaic did not live up to expectations. But I am willing to give this place another try. Maybe next time I come I won't be doing it on a dine out!

Mosaic is on the second floor of the Hyatt Regency on Burrard St. in Vancouver. On a recent two-night stay at the hotel, we came here twice because their calamari was out of this world! When a lady who appeared to be one of the managers here told us we should try it because it was the best calamari she's ever tried, I thought she was just being completely biased. But it just might be the best calamari I have ever had myself! I was really surprised. The batter was so freaking delicious and just the perfect thickness, the squid was so fresh, the bell pepper slices and cilantro gave it all an extra zing, and the sweet and tangy dipping sauce was money! I might have to drive back to Vancouver just for this, and I'm salivating right now just thinking about it. The duck confit poutine was a dream. Ugh, if weight gain wasn't a phenomenon, I wouldn't have stopped eating this all weekend. Thick-cut fries, wonderfully rich gravy, and a generous topping of house-cured duck confit. I loved the servers and the bartenders. We had a great time chatting with them about city life. They also poured some great drinks! Okay, I didn't actually do any drinking here, but I did order an iced Americano, which was beautifully prepared by a male bartender! It was the fanciest iced Americano I've ever seen, maraschino cherries and all, and the espresso they serve here is some of the best I've had yet. (Okay, I just Googled it, and apparently, Torrefazione Italia used to be a coffee roaster, but it's now a high-end Starbucks brand. The family who started it also started Caffè Umbria, which I love! Welp, good to know. I had no idea what I was drinking was a Starbucks brand espresso.) Service was quick, too. No complaints whatsoever! You definitely shouldn't miss Mosaic if you're staying at the Hyatt.

We had the chance to try both the buffet breakfast and the dinner at the mosaic during our stay in the Hyatt regency. Dinner was just excellent and we don't understand why there weren't that many people dinning there. Loved the ahi tuna and the sockeyed salmon. Well worth the price.

We dropped in for brunch on Sunday before leaving the hotel. We received 100% top notch service from Heidi. She was cheerful, attentive and generally a wonderful reflection of the hotel. We had the Reuben and Chicken and Waffle breakfast items, and both were tasty, and the portions were substantial. We look forward to a return visit.

So I was back again for another great Dine Out experience -- the results were disappointing. Service was ok at most, but not as good as I remembered -- it made me seem like they were not attentive due to the fact that we were going for the Dine Out menu. Food started with some crab cakes. However, I thought the crab cakes were a bit over-seasoned and it overpowered the sweet taste of the crab meat. I chose my entree to be the Rib Eye, wild mushroom, homemade pappardelle. This was waaaayyyyyyy overseasoned and completely salty. The juice that came out of the mushrooms were just salty and the rib eye was mostly salty except for the pinkish red parts in the center of my steak. On the other hand, the halibut was cooked well and now those who ordered the rib eye wished that they had ordered the halibut. Dessert came, and the Mosaic Chocolate Cake was alright...except, they forgot to dress one of the plates. In other words, one of the desserts just came without the fancy design of syrups. I would not make a big fuss of it if all the plates were like that, but with the salty entree I just ate, and with the forgetting of dressing just one out of the 4 identical plates that were served, I was very disappointed in the food's quality control at the kitchen. What was worse was that when I told the servers about the salty food or the undressed dessert, they did not seem to find anything wrong with it and reacted as if I was simply inquiring them to bring me more sauce. For the dessert, the server even asked me, "Do you want me to bring you the syrup to do it yourself?" Very disappointing service. I can't help but wonder if they were skimping on the dishes served for Dine Out.

What a nice meal! The salmon dish is especially tasty with its crispy skin and juicy meat. Nice panna cotta at the end! Great service and quiet ambience. Well done :)

We went here for Sunday buffet brunch on Valentine's Day 2016. The selection was awful for a $28 Sunday brunch. No roast beef or ham, the hash was tasteless and dry, the potatoes were the same. They offered a mini French toast that was again hard and tasteless. No seafood except for some smoked salmon. No dessert items either. Service was ok. For the price, very underwhelmed. Either lower the price significantly or increase selection and quality

Great buffet breakfast at a nice hotel. Didn't stay here, but enjoyed the first meal of the day (CAD $28 = approx. $19). Buttery flapjacks, eggs, omelette chef station, etc...great stuff here! Coffee was a bit strong/bitter, but other than that, tasty buffet.

My rating is solely based on the dish I had. My coworker and I took a client there for lunch due to its proximity to our office. It was my first time there and I usually don't crave for hotel restaurants. But was I wrong after taking the first bite of my Thai Fry. I wanted something easy to eat so I won't make a mess because I'm prone to staining my tie with food. It's a very simple dish and it looked very simple and non-chalant ... ground pork cooked Szechuanese style (spicy) with long leans and garlic on coconut basmati rice. It was amazing. Although the pork was spicy and I'm usually not partial to spicy food, the flavour was tantalizing when combined with the coconut and slightly salted basmati rice. I'm a slow eater so I didn't finish my plate when everyone was already done. I should have packed it. If they serve the same dish on the dinner menu, I would have gone back for dinner!!!

Had a great butter pumpkin soup followed by scallops. Both very good. The restaurant is situated on the second floor at Hyatt Regency, and have a nice view towards the downtown area.

I would recommend this restaurant for a) convention-going business types with expense accounts; and b) locals with a special occasion to celebrate who forgot to make reservations. It is tucked away on the second floor of the Hyatt Regency hotel on Burrard downtown, so it doesn't get much walk-in foot-traffic. On a Friday night at 8pm we were able to walk in without a reservation and get a great window seat with a sparkly view of downtown and the beautiful Christ Church Cathedral across the street. Most places downtown are reservation-mandatory, but you'll be much more likely to get a table here on short notice. Knowing about this spot could really save the day for a husband who forgot a birthday or anniversary. "I know just the place, honey!" She'll be impressed - just to make sure order some Stellar's Jay bubbly from Sumac Ridge when you arrive. The food is all class, the service is attentive and --in our experience--charming, and it is quiet enough to have a conversation during the meal. The "small bites" menu features items from $8-15. The wontons are mouthwatering, definitely recommended over the calamari which was just OK. The "big bites" will run you $21-$38 and might appear small when they arrive. But the accompanying sides are rich and the plates end up being quite filling. The scallops were huge and cooked to perfection - still super moist inside. The lamb was tender, and the halibut was perfect. The steak was cooked as ordered, and the mesquite smoky taste was something different. However, if you're paying that much for a steak, you usually want to taste the meat, not smoke. If you want the full experience, go for the four-course $60 tasting menu. It includes a small bite, a salad, a big bite and a dessert with coffee.

For a hotel, great food. We had the honey ale. The wings at happy hour, the burger, it was slightly overdone, I would recommend this bar and grill.

Mosaic is a nice place for a work lunch, they have such a large dining room that they are always ready to accommodate walk ins, no problem. They also have a delicious fudge cake dessert, which makes this the perfect birthday celebration lunch destination! I have had hits and misses here, but unfortunately most of the "hits" were before the menu change. We came quite often, before they changed the menu. They're known for they're delicious cobb salad, which is a meal and a half, but you have to add chicken if you want any protein (comes with only bacon). They also have some great sandwich options, but I always ask for extra sauce as they're bread can be a bit dry. I do miss their old menu, they had amazing pad thai with prawns which isn't available anymore the menu is a bit pricey, but not unexpected for this are of downtown, especially considering it is a hotel restaurant (located inside the Hyatt). The only consistent downfall is that the portions are rather small for the price you are paying. A handful of fries etc. We will definitely keep coming here, but not as regularly as other local places. Great for business lunches though! Hopefully they will go a bit more towards the old menu again soon, as their current one is rather selective.
