These pies have all the visual hallmarks of Detroit pizza. The flavours are right and good, the edges have a properly fried, crispy cheese crust.
But my issue is with the dough, it’s not high hydration, it’s far too thin for proper Detroit style and to be entirely honest, in parts it even felt dry akin to the kind of pizza you buy on frost in a supermarket.
The analogy would be a ‘Neapolitan pizza’ in a deep dish. It just didn’t feel right and through every bite, I couldn’t distract from it.
You can get Motor City pizzas in the freezer in Homeplus, and I suspect it’s the same stuff they sell in the restaurants as it didn’t feel like it was prepared on the premises.
I came here with expectations high, having read the many positive reviews.
They get points for even doing Detroit pizza in Korea, but then, why not do it properly?
