The crust = PERFECT! I've never said that before, but it is perfect. Thin, crispy, sourdough, aged for nearly five days, to give it that right kind of spongyness and crisp. The suce, slow-cooked tomato sauce to highlight the natural sugars to bring out the sweetness. The mozzarella is fresh milk style, the right kind for woodfired pizza. The pepperoni, just the right 'bite' to it, and very flavorful.
The owner, Cesar, stopped by our table and had a long conversation about using fresh ingredients and the reasons you give the dough a lot of love.
We will be going back again this week to try the salads.
