What an experience! The concept of being able to explore Vietnamese cuisine and learn the history and culture behind dishes was amazing, especially with the unique way that they have been re-imagined at Nom. The non-alcohol pairing included very well crafted Kombucha that paired well with each dish. Service was excellent, with staff being so welcoming and were very knowledgeable on each dish. Communication in English was very easy! Atmosphere in each of the areas of the dining space as you make your way through was, sound and lighting at a comfortable level paired with the beautiful interior design made for a wonderful dining experience. Highly recommend, and a dining venue that I would come to again!

Dining at NOM is more than a meal — it’s a thoughtful journey through Vietnam’s history and regional flavours. From the first impression, everything is intentional. The entrance, interiors, tableware, and menu presentation are beautifully curated, each detail reinforcing the cultural and historical narrative behind the experience. The menu guides you through different regions of Vietnam, with every dish telling a story of its origin and tradition. The food is refined yet soulful. Each course is carefully composed, but my standout dish of the night was the Eel Congee — comforting, deeply flavourful, and a perfect expression of how NOM elevates traditional cuisine without losing its essence. This is an experience best appreciated firsthand. NOM isn’t just about dining — it’s about understanding and feeling Vietnam through food, storytelling, and design.

I wouldn't call it just dinner in the truest sense of the word. This is a culinary journey through Vietnam, exploring the country through taste sensations and staff stories about the history of the country. Interesting and fascinating. A great idea for those who want not only to have a delicious meal, but also to have a topic for further discussion. I think it's a very good idea for bringing business partners from outside Vietnam , or if you are a tourist who is interested in such an experience , it's definitely worth it. The service is top-notch, thanks to our waitress, because the mood depends on the service, and this affects the assessment of the whole evening and affects the taste of the food. Thank you Ms. Chi for making our dinner a success! It's nice to see young and enthusiastic employees and owners , it 's inspiring.

After hearing about the expansion of the Oryz team and their new concept Nom Cultural Dining, it was a no brainer to visit Chef Chris and the team again on my travels. The journey across Northern, Central, and Southern Vietnam was not only for the palette, but a full experience into the history and culture too. Jumping across carefully thought out areas of the restaurant, each with its own ambience and vibes. The flavours were incredible, turning humble ingredients into works of art that took my palette on an epic rollercoaster. Every plate was served with finesse and each had its own story and twist to popular Vietnamese dishes. It’s amazing to see Chef Chris and his team grow and continue to elevate their standards. Definitely, coming back the next time I’m back in Ho Chi Minh and by that time it should have its deserved Michelin star!

Our couple dinner at NOM Dining Saigon was nothing short of magical. From the moment we arrived, we were struck by the building itself—vast, stunning, and museum-like, setting the tone for something truly special. We were personally welcomed in the warmest way by an incredibly elegant team and members of the management board, who guided us through an intimate and thoughtful journey before reaching the main dining area. That experience alone made us feel genuinely cared for and connected to the place. Seeing Chef Chris Fong in action was a highlight—watching him deliver a multitude of dishes, each crafted to absolute perfection, was both inspiring and delicious. Every detail felt intentional, refined, and full of soul. What a journey! We will definitely be back—with friends.

A fantastic dining experience that beautifully incorporates the unique and distinct flavours from different regions. The menu offers a really creative and modern take on traditional Vietnamese flavours, while still respecting their roots. The staff were incredibly friendly, welcoming, and knowledgeable, which made the experience even more enjoyable from start to finish. We’ve never had this much fun dining before. Can’t recommend this enough.

Without a doubt the best fine dining experience I have ever had. The journey through all the flavours of Vietnam was incredible. Every single dish was well presented and the staff were so attentive and explained every detail. Highly recommend.

TLDR: Excellent fine dining experience at Nom Dining that exceeded our expectations, I recommend everyone to try this as soon as they can - this is a restaurant that will only grow more famous and be fully booked in the future 💯💯💯 From the start we’re introduced to the concept of the restaurant - a culinary experience travelling from the North to the Central and South of Vietnam. Moving across different rooms and ambiences it was truly an immersive experience not just for the palate but for the other senses as well. Each dish was rooted in deeply local origins, ingredients and flavors with a modern and luxurious twist. We could really tell how intentional the chef was in curating them and dish after dish continued to amaze us. We only found out later that we made it on their second opening day and we felt very privileged. The ambience was perfect and needless to say we were also treated with the classic warm Vietnamese hospitality. I promise it’s an unsponsored review - it was just THAT good. RUN DON’T WALK! and thank me later 🩷
