Serving previously frozen salmon must be some kind of crime in Japan, but obviously not in Hawaii..... I had the worst Salmon Teriyaki ever in this restaurant. It was so dry and chewy I had to send it back. This should not be allowed to happen in a Japanese restaurant. To their credit, they replaced it with some vaguely decent chicken after I explained how bad the salmon was. I understand Hawaii has some special logistical issues regards fresh produce, but even if the Salmon was frozen, there are better ways to defrost it so it doesn't lose it's consistency and flavour. Not good enough.
