"German immigrant John Georgian was one of many Kansans in the mid-1800s to open a brewery along the banks of the Missouri River. Most employed local geology to aid in brewing, utilizing natural cave formations and river ice to manufacture suitable brewing and storage conditions. Georgian, however, had no cave. He dug his own cellars more than 50 feet underground, home in modern times to the oldest bar in Missouri. Georgian’s brewery enjoyed some success before Prohibition, producing 20,000 barrels a year, but shuttered by the 1920s. Following the repeal, the subterranean brewery changed hands several times, falling mostly into disrepair until the current owners purchased the space in 2005. Today, the largest of the five brewery cellars is O’Malley’s Pub, selling Weston Brewing beer on tap from just upstairs. The domed, limestone cellar was built without cement, using the weight of each rock below it to support two- to three-foot thick walls. The story behind a tunnel running from the cellar to Georgian’s former home—today the Weston Brewing offices—is that he didn’t like to walk to work in inclement weather.  Luckily, the weather is always the same underground, which is to say a little chilly. You would never know the scale and coolness of this pub by how it looks on the outside. Above ground part of the building is just the restrooms. Down the stairs, you're given the option of left, or right. Both are amazing. Live music, cool atmosphere (literally and figuratively), as this used to be an icehouse underground storage. The people are awesome, the drinks were perfect. It's worth a trip to Weston just for this little pub. And, the whole town is amazing.

The chicken salad was wonderful. You order via a QR code so grab a table if you want food and scan in. They'll bring it from the resturant next door to your table. If you want drinks, descend all the way down into the cavern to the bar for a wonderful view and order.

O’Malley’s in Weston is a must-see Irish pub with an atmosphere that feels straight out of old Ireland. The underground cellar setting, with its stone walls and cozy lighting, creates an experience that’s both historic and lively. The staff is warm and friendly. When I brought a cake for my wife’s birthday, our server had the band sing to her, which made the night unforgettable. Live music is frequent and adds to the fun without overwhelming the space. There’s an upper bar for quieter days and a lower bar that opens when it’s busier, plus outdoor seating for nice weather. Families can visit on certain days, like Sundays. It might not be the best choice for anyone sensitive to tight spaces or the natural cellar scent, but for most people, it’s pure charm and a true Weston gem.

Very cool place. The stuff that they brew is very tasty and relatively inexpensive. Food is delivered from the restaurant next door using toast and a QR code at the table. The deeper you descend the deeper you dive into history!

This is a wonderful bar located in old underground cisterns that were used for brewing beer in the 1800'S. If you've never been here ... you need to go! 😊 A great historical place with an awesome atmosphere! Bob Reeder plays on Sundays and has been for 30 plus years. Great beer

We are regulars and love most everything about O'Malley's. Have to say I think it's time for a food revamp. Putting cheese on everything isn't the way (and I love cheese). Focus more on quality, fresh ingredients, not quantity. The menu should match your amazing beers!
