i had a fantastic dinner there with my friend. cuisine wise, it was absolutely top notch, i have absolutely loved the smoked greens that came with the pageot they complimented the fish so well. thé ginger, thé nuoc mam, everything about this dish wowed me. thé amuse bouche with the tapioca chips? amazing, thé guanciale was meant to be there. madame butterfly? makes me drool again just thinking about it.
on another note, i was a bit underwhelmed by the crispy black rice, i actually came after seeing the réel of it on insta, but more than half of it was quite burnt and stuck to the scallop shell so i think i ate 3 grains of rice.
lastly, there is probaly some room for improvement with the service. i understand that it was someone’s first days, i could feel the tension growing with the rush of the service sequence within the team. we asked for wine suggestions/recommendations, à différent person came and poured wine directly without a word, only then we tried it and she described it but although we trust you guys it was a bit brutal. to be honest we waited quite some time when we first arrived to get the menu, and then between amuse bouche and main dish, and actually thé sashimi part was forgotten although ordered. i don’t mind waiting but as we knew that we had to free the table at a certain time we had to look à bit at our watch. it was a great overall experience, and this is only an informative feedback .
