On the Grid : Partisan Boulanger

"Here, no frills. Quality and authenticity are the only creeds of the house. To knead bread and pastries, Bastien Malugani uses 100% pure grain organic flours, sea salt from Guérande and PDO churn butter. Beyond these refined raw materials, the demanding know-how of this passionate baker lies in the mastery and respect for the fermentation of the living and changing organisms that are yeasts. Crispy breads, viennoiseries and generous pastries, there's everything to explore the old flavours." - Servane Tranchant & Séverin Millet

Omg the croissant and pain au choc were incredible, best in a long time. Service was delightful. Can't wait to go back tomorrow

Wonderful bakery in Croix Russe area. If you are lucky enough to be nearby and don’t have to walk up the hill to get here (or heck even if you DO have to walk up the hill) it is well worth a visit. One of best croissants I’ve ever had - so light and layered and crispy. Pain au chocolat also very good. A thin apple tart was crispy on the bottom and layered with super thin slivers of apples- wonderful. The almond croissant was good but a bit sweet. As this is our first morning in Lyon we will certainly be back for the rest of the week to try more and more especially since it is fortunately just around the corner. Very helpful and friendly man spoke good English and humored my French in a nice way.

Incredible bakery. Very popular when I went on a Sunday morning but turnaround was quick. Well worth the short wait. Baguettes and croissants were fantastic.

Partisan Boulanger is far away the best patisserie in town. Though it is not quite near to the city centre Vieux-Lyon, products and place are very quality and the owners are very friendly. I highly recommend that you visit Partisan and enjoy the smell, texture and the taste👌🏻

Found this amazing bakery on our next to last day in the Croix-Rousse. It is a hidden treasure! You can get a warm baguette throughout the morning, and they make the best pain au raisin. Plus great croissants, and other viennoiserie and breads! When our turn came, we entered and saw such beautiful pastries, that I could not resist - ended up with a mille-feuille and a Paris-Brest. Oh My Yum - perfection! Thank you to all the bakery staff front and back of house for creating so many variety of delicious treats and breads!

Google
By far the only top Boulanger & Patisserie in Lyon. I'm not sure which I prefer between Partisan and Du Pain & Des Ideas in Paris. The other Boulangeries in Lyon are tired and disappointing. We at at Prairial restaurant, amazing in Lyon, who sourced their bread from Partisan. Fantastic breads and jaw-dropping pastries. only open Friday-Sunday/Monday, would suggest coming here each of those mornings and a coffee from Momento around there corner. World Class!

Yelp
This the best bakery that I have ever been to, and I will die on this hill. I was wandering Lyon after seeing the Murs des Canuts mural, when I smelled the absolute most delicious bread wafting from a side street. I wasn't even hungry at the time, but without a second thought, I went inside the bakery and ordered a chocolate-and-almond croissant. This pastry is easily the best thing that I'd eaten on my month-long trip in Europe, and likely all the times that I'd been to Europe. It came in the shape of a traditional pain au chocolate, but the the top had shards of roasted almonds while the inside was filled both almond paste and dark chocolate strips. It was so good that I almost, almost ordered a second one until I decided to think of my health and ordered a standard croissant instead. The croissant was also fantastic, just not as amazing as the chocolate-almond croissant. I almost didn't know what this bakery was called, since it only had a 'P' logo in front of its door, but thankfully Google Maps helped me find it. It's a very small bakery that already had a small line forming out the door after I finished my croissant. Cash only! Also, it's cash-only! I believe I spent less than 4 euros on the two pastries.

Yelp
I had marked this lovely bakery as the last stop on my slightly over-ambitious "boulangerie/patisserie/chocolaterie walking tour of Lyon". Partisan is situated in the Croix-Rousse area of Lyon, which is on top of a hill. As I had been walking all day, I almost skipped the last haul up to Croix-Rousse, but I am ever so glad that I persevered, as Partisan is one of the very best bakeries I have ever had the pleasure of visiting! I had a hard time deciding what to buy from their tempting selection of sweet and savoury breads and pastries, but was helped by the friendly woman behind the counter, who also spoke remarkably good English, compared to the Lyon average. I ended up with a cheese and walnut roll, and a Kouign Amann bun. Both were fantastic, perhaps the bun especially so (if you are not familiar with Kouign Amann, it is a fantastic Breton butter cake/pastry). Of all the boulangeries, patisseries and chocolateries I visited in Lyon, Partisan is my favourite - which is saying something, as there is truly an abundance of delicious things to be had in Lyon!

Yelp
The best bakery I stumbled upon in Lyon. There is no seating, so expect to take away your goodies. The croissants are perfectly light and flaky, but the Kouign-amann is to die for. I also got a delicious matcha pastry that wasn't as flaky as the other two but had a rich green tea flavor. I highly recommend dropping by, especially if you're in the La Croix-Rousse neighborhood.

Yelp
I'm so happy we didn't discover this place at the end of the trip because it was an absolute highlight. Every morning, there was always people walking in and out with baguettes, it looked like the go-to place in that area for baguettes. My partner and I went back every morning. I can't say we bought any breads, we did sample some that were on the counter but we were gunning for the butter croissant and kougin-amann every morning. Both were spectacular and didn't skimp on the butter. When we were in Paris, we had hit up five bakeries that made kouign-amann and we both agree Partisan was by far our favourite kouign-amann we've ever had; it had the perfect amount of sugar, it wasn't overly sweet. Not many bakeries bake kouign-amann, I highly recommend you getting one, especially at Partisan.
