Shut the cafe only for yourself and do not accept random visitors!
Absolute misunderstanding of who is a client and who is an employee in a cafe. this happens when a wrong employee atmosphere is created.
The cafe workers live their private life there. It's as if you're disturbing their routine and they're forced to serve you, forced to explain why they don't have coffee today. Then it turns out that there's no coffee because there's no water in the tap. They show you where the toilet is, but then stop you and tell you that, there's no water there, so it's closed. Communicating from the position of a tired worker, they argue with you.

REPLY TO THE OWNER'S REPLY:
First of all. Thank you for your sarcastic reply! Especially "saliva" story. Nice picant addition. I appreciate that.
The length of your answer is further proof that your stubbornness cannot be overcome :) It also shows that you like "to fight" with customers whose opinion and experience was negative. It is great to know for sure now. I had some doubts before. Oops.
What you are doing is called hypocrisy and stubbornness. Keep your national peculiarities to yourself. You think too much and too highly of your national characteristics like alleged "rudeness". This topic and all questions related to it were solved in the last century. Highly suggest you to study the main topics of 1919-1943 years and do not argue about it with visitors of your "private" cafe. For christ sake - “generazioni successive siano più educate” - what is it? Come on..
You were "honorred" to be insulted and abused? Sounds cool. But that's not truth. As well as "saliva" story.
You accuse us of arrogance, when it is precisely the arrogance of you and your waiters that is the main reason for this whole story.
It would be great if you could realise that your waitress was communicating with pregnant woman with no understanding her basic needs and there was a lack of explainations at the very start. We are not against water works in entire area. All this started from the "welcoming" phrase “we don not have coffee today” with no further explanation at all. Then we asked wherher you have lemonades or something to drink. The only answer was a word: “No”. Is that a proper way of communication? Must we guess all your private reasons for “no coffee today”? Must we read your thoughts? Must we sense your personal mode at the entrance and value that? Turn off your stubberness just for a second.
I ask you to provide photos of some imaginary saliva. As soon as such a photo appears, I advise you to do a DNA test. Then, we will compare them with your and our saliva, and so on.
Please be aware, that we are not afraid of any of your "imaginary rules" regarding photo or video shooting in your cafe. If you really need this video - we can provide you with it, as well as the contact of our lawyer. We are ready for any “fight” it may require. It was clear that not only the pre-entrance to the kitchen is private, but also your entire cafe. I am also suggesting you to draw restricted line for every table you have. Add more restrctions and privacy.
You don't need to de-anonymize your customers. Start with yourself (the owner) and everyone who works in your cafe. Let customers evaluate each person separately (photo, names etc). Only after that, please, poke people in their "anonymity".
P.S. next time I will use Farsi language to reply your messages in Italian. That would be fair I guess. I hope you understand why.
P.S.2. Please stop this "qui in Italia" thing. You are not all of Italy. You are just a small cafe with stubborn waitresses and owners.
