We tried a bunch of restaurants during our trip to Cancun, from small "hole-in-a-wall" establishments where the staff spoke minimal English, to five-star resort restaurants where a live pianist serenaded us with music during the meal. Peter's was the best restaurant we had the pleasure of dining at and we returned for a second visit right before we left.
Quick note about the service: while there were other restaurants where we were treated like royalty, I personally preferred how comfortable it was at Peter's. The service was more personal and attentive without being overbearing.
The food: I was impressed by how meticulously each dish was prepared and how consistently delicious everything was. During the two visits, we tried a total of 9 things on the menu, and each one was carefully crafted to please our palate. Chef Peter's style favored using many layers of light flavors to enhance the natural taste of the ingredients. With each bite of the food, you would taste the initial flavor of the sauce, which led to secondary and tertiary flavors, which then gave way to the freshness of the food. Everything melded really well together, with certain ingredients sometimes being highlighted, but nothing ever overwhelmed other flavor profiles. For certain dishes, the aromas would also linger in your esophagus, and with each breath there was a pleasant aftertaste.
I also wanted to specially call out the pork tenderloin. There's a reason why the first page of the menu highlighted this dish in particular. The pork was so tender that the texture was somewhat reminiscent of duck. If there's one thing you need to try, it's this one.
Will definitely return on our next trip back.
