Canberra, Australia: Where to Eat and Drink

"At the final stop on my bar crawl, Pilot, James Dickson-Hoyle doesn’t call himself the sommelier ('we like to keep things a little less formal'), but he ably matched superb wines to dish after strong-flavored dish." - Nina Caplan

It was an absolutely amazing meal! Great service. Really delicious courses. The drink pairings were fantastic. Felt like royalty! Of course it's expensive, but definitely worth it. They were very considerate of dietary requirements. Both the alcoholic pairing (which I had) and the non alcoholic pairing (which my husband had) were fabulous. No complaints!

Subtle and delicious degustation experience. The non-alcoholic pairing is highly recommended as it was surprisingly refreshing and matched amazingly with the food. We loved the fish and the mushrooms, but felt the wagon wheel at the end was a tad bit too sickly sweet. The service was nicely paced and each dish arrived at the right time.

Amazing fine dining experience in Canberra, they earned their 2 hats. Food is special and creative, unlike other boring fine dining dishes. They don't show u the menu until the end which kept it fun.

First time at Pilot last night for a degostation dinner. We were served nine tasters paired with nine wines. There is the option to go non-alcoholic, which are equally delicious. Especially liked the non-alcoholic mango beer and black sesame horchata. Each dish was beautifully presented, seasoned perfectly and delicious. When we booked, we were asked about dietary requirements or things we don't fancy eating. When we walked in and sat down, the dishes started arriving. A brief description was provided with each beverage as to who made them, the region in Australia in which the grapes were grown, which we found interesting. The night was quite pricey and perfect for a special occasion. It was a great experience

Spectacular food. Very special evening. Service was excellent. There is no menu to order from, they ask about dietaries on arrival. The waiters explain each dish. Wine recommendations was spot on. 1 of our table had the non-alcoholic pairing and enjoyed it.

Very responsive by email (Thanks Kane) and we were so blessed to get a table at very short notice. We don’t normally do beverage pairings but after reading the reviews, we did order one pairing (non alcoholic in house pairing) shared between 2. They were kind enough to split the one pairing in 2 glasses so we could both taste it. The highlights were the welcome drink and the snack attack; in particular the reverse fish and chips (That dill sauce was divine) and the drink pairing with that was so good. Not all pairings and food matched perfectly but it was a minority. The mandarin and pumpkin dessert was one of my favs and it perfectly matched with the drink. We had the 7 course meal and as part of that meal we got a cookie as a gift to take home. I warmed it up at home and it was so scrumptious. Thank you Elise for serving us. We had an amazing meal. Highly recommended!

A million more pretzels please. Also, the non-alcoholic pairings were so yummy. Our favourite place in Canberra for a special treat.
