Quite disappointed! We "discovered" Pixán about 18 months ago, and thought that it was fantastic, both in terms of service and quality of food. We came back last spring, and found that they on longer had wait-staff: one had to queue at the bar to place an order, and then rummage for water, cutlery, water and condiments. However, the food was still excellent: we had a "flight" of 5 speciality tacos, which had really interesting fillings, and were perfectly cooked.
Our visit for dinner on Saturday was disappointing because they still have not reinstated table service, and both the menu selection and food quality were way down. The self-service cutlery station was out of forks, and there was no-one to for help. The old menu is still on their website -- this is misleading. As a vegetarian, there was precious-little to choose from. I ordered the Hongos tacco (mushrooms & Onions). The filling was pretty good, until I found a chunk of meat mid-chew! The tortilla was inedible. I was tempted by a salad, but the only option was the xek salad, which was nothing but jicama (for $15, no $10 as it says on the online menu). The guacamole and the sikil p'aak were excellent, however. We also ordered the truffle popcorn as an appetizer, which was good, but didn't arrive until we had finished all of the other food.
My partner ordered the Pollo negro taco: the chicken was tough and dry, with no interesting seasoning; her tortilla was also inedible.
Our advice is to stay away, unless you just want drinks.
