Singapore is having a pizza moment - SilverKris

"At Robertson Quay I encountered Vincenzo Capuano’s signature cloud-light pizzas, which are so airy they’re cut with a pair of golden scissors to preserve their revolutionary puffiness; the long-leavened, highly hydrated dough uses Caputo Nuvola flour for that signature puffy crust. The Provola e Pepe—smoked provola, crushed tomatoes, roasted cherry tomatoes and basil—won gold at the Pizza World Championship, and pastas also impress, such as the Guanciale di Manzo with slow-cooked Wagyu cheek ragù and house-made fusilli." - Ben Chin

Came here due to the hype. Was a relatively good experience. The pizza was definitely a above average, and we surprisingly enjoyed the non-meat pizzas more than the ones with ham. Ingredients were definitely high quality. Price wise rather reasonable if your not ordering alcoholic drinks. We enjoyed the banter with the staff cutting our pizzas and they made it a relatively fun affair. They also knew about their pizzas and shared that the dough took few days to prep, but only few minutes (or was it half a minute) to cook. Several points that could have made the experience better. 1) Staff kept spilling water over the table. We were talking abt it over dinner abt how basic this is. 2) could try using proper coasters instead of tissue paper. 3) If staff could have properly recommended popular dishes to try. 4) if the noise insulation had been better.

Very delicious place to dine at! The beef meatballs were nice and tender, and the sauce complemented the meatballs too. The pizza was fantastic. The dough was soft, fluffy and chewy, and the crust was delicious. We liked the pesto one better (it's a Singapore special) than the award-winning flavour, but both were great! The tiramisu was very good, but the creme brulee was still not bad. The service was good and the staff were very helpful when recommending options and friendly as well

Pizzeria Vincenzo Capuani offers a truly exceptional pizza experience. The pizzas themselves are the star, with a perfect base that is soft and tender in the middle, not mushy, while the edges are chewy, perfectly raised, fluffy, and beautifully charred with a wonderful toasty aroma. The toppings are equally impressive, from the generous, umami-rich anchovy fillets to the rich and creamy mortadella with pistachio. The relaxed outdoor seating on a breezy night made for a very pleasant weekday dinner. The staff were helpful and attentive, ensuring our water glasses were always filled. To finish, the tiramisu was a pretty good classic dessert. This is undoubtedly one of the better pizzerias around, highly recommended for anyone seeking an authentic and high-quality meal.

Come here for the experience! We came here on a whim for lunch, and it was a pretty great experience! The pizza was very filling for 2 ladies, so don’t over order if you aren’t big eaters. The dough was abit chewy in my opinion, but the ingredients were fresh. What was outstanding was the service. The staff were very attentive and even asked if we wanted to try to cut the pizza ourselves (we asked him to cut for us, as we knew we will do a horrible job of it!) We loved that we could see the oven so close to us, and enjoyed watching the great food coming out. Will definitely return with a bigger group so that we can order more.

Definitely the best pizza I have ever had in my life. Pizzas are served in unbelievable speed (<5 min after order placed) Each is of ~12 inch, the base is very thin in the middle with toppings but very thick at the edge, providing extraordinary eating experience as I was literally "travelling" on the pizza. The pizzas are served in very hot & fresh conditions which might be the best time to enjoy it. But it chills down so fast that after finishing 1 piece in hot, the rest would be back to room temperature. But I prefer cold & still pizza as well as it is suitable for slowly enjoying it without rush😋

First things first, and the reason I went: the pizza crust is a very good canotto cornicione Neapolitan one. The margherita was a fine example. Also tried one of the “creative” pizzas: it seems VC understands Neapolitan tropes very well, but a good palate has he not. The attempt to be creative with zucchini puree, burrata, meatballs not so far from IKEA’s and zucchini chips showed a woeful understanding of flavor and texture combinations and a tunnel-vision of flavor creation. Nothing worked. It should have been abandoned on the first trial. Decor looks like the all day dining part of a second tier Chinese city five star hotel. Staff are all pleasant, but the rules in place for orders after 9pm are so far from hospitality. A call at 910 managed to get a table for one after some discussion with management. For pizzas that should take max 90 seconds to cook. When some friends turned up wanting to join for a drink at 1005, we were told they couldn’t have anything as last orders had been called, yet the advertised and confirmed closing time is 11pm. I packed up my remaining pizza and moved. If your closing time is 11pm, you should be able to manage production of product and customers until then. If you stop taking orders at 10pm, that’s your closing time. And if 10pm is last orders, no need to make a fuss about someone wanting to come at 910.

Came for dinner as we were intrigued with the famous 'golden scissors' and for the love of pizza and pasta! - Gambero Alla Marinara (a Singapore special) was delicious as the prawns were big and juicy and the sauce tasted like chilli crab. - For pizza, we had one from the 'Unique pizzas by Capuano' selection - Abbraccio E Mamma - while interesting and generously laden with cheese, it was on the 'jelak' side and the meatballs could not counter the cloying richness. - Tiramisu is a goodie. The service staff were polite but can be more responsive in taking orders and refilling our water glasses. Atmosphere wise, the place is beautifully decorated but it can be difficult to hold a conversation as the restaurant is crowded and the music is fairly loud. In general, a place worth trying because the pizza dough is good but probably gotta try a different flavour.

Based on our experience, Capuano stands out as the best pizzeria in Singapore—a true hidden gem that punches well above its weight. Despite being a chain, it consistently delivers exceptional quality, well-balanced flavors, and incredibly fair price points, making it our go-to whenever we crave a proper Italian pizza. What truly sets Capuano apart is the dough—light as a cloud, airy yet chewy, with a perfect balance between softness and crunch. The addition of olive oil brushed on the crust before baking elevates both aroma and flavor, giving it a beautiful golden finish and richness without being greasy. The freshness of the ingredients shines through in every bite: from the vibrant tomato sauce and sweet cherry tomatoes to the premium cheeses and cold cuts. You can taste that nothing here is generic—everything is thoughtfully selected and well-executed. One of the most memorable highlights is their sweet potato pizza, which may sound unusual but is a masterpiece in balance. The sweet potato cream pairs wonderfully with the saltiness of the cold cuts and the crispy sweet potato chips layered on top, creating a dish that is both comforting and exciting. A must-visit for any pizza lover in Singapore—Capuano never disappoints.
