Our second visit back to PBV since 2020 and the pandemic. It was our longest stay, 3 weeks, and I could have stayed on longer. As always, the 6 villas and surrounding property were in first class condition. The property's location is on the side of a little hill, overlooking the Caribbean Sea, only steps away from the beautiful, quiet beach. We soon lapsed into holiday mode spending a lot of time on the breezy veranda, watching and listening to the birds, looking at the colourful tropical plants and trees. Running and walking on the beach, swimming in the sea, reading next to the pool are our favourite pastimes at PBV.||What makes PBV so dear to us, besides the fabulous accommodations and location, is the staff. In our family's 30 years of holidaying at the property, manager Sean Clarke and assistant, Fionna, have always been there and we have had only 2 villa attendants. Betty who made our holidays special until 2019, retired and since last year, Nadine has ensured our complete rest and relaxation while she takes care of everything else. In addition to making sure the villa was spotless every day, Nadine cooked for us. We never ate out once. Every day Nadine cooked one delicious meal after the other. If she didn't cook, she would prep the sides and marinade the fish or meat for us to bbq later. Nadine has what the locals call "a sweet hand", anything she cooks or seasons, is to die for. She has amazing taste instincts and can throw ingredients together and come up with absolute yummy. One day, I bought too many sweet potatoes and cassava; she quickly turned them into crunch on the outside, soft on the inside fries. They were dynamite at happy hour on our veranda. She makes the best callaloo, buljol, fried fish, bake, float, macaroni pie, stewed peas, stewed pork, pelau ... local dishes that I long for back in Canada. Nadine is innovative. She turned a breadfruit into breadfruit pie, a riff on macaroni pie! On the night before we left, Nadine gathered up all the odds and ends of vegetables in the fridge and made an unbelievably tasty vegetable stir fry that was also very eye pleasing. Which brings me to presentation of the food. All of Nadine's dishes were expertly set out, family style, for us. ||Nadine works hard to ensure her guests' comfort. She is full of bubbly energy and makes everything she does look effortless. She is a glass half full type of person and often flashes one of the most dazzling smiles I've ever seen.||Thank you everyone at PBV and especially Nadine for making our 2025 Tobago holiday extra, extra special.
