Loved the atmosphere, service, and the intentionality of this space, which to me came through the most in their approach to matcha. I almost *never* buy matcha out because 1) nine times out of ten, cafes makes it incorrectly (they use too hot water and burn the matcha therefore cancelling out its benefits, don't whisk it properly and leave it clumpy, etc), 2) use poor quality matcha, 3) they overcharge customers for the quantity of matcha they actually serve, and 4) I enjoy making it at home. However, I had a free drink coupon to Postcard and when it was my turn to order, I saw their matcha-making station right by the register and was impressed. They had the proper tools (bamboo whisk, sifter, etc), good quality, bright green matcha powder, AND two kettles with to-the-degree temperature control (aka they weren't just using the boiling water that comes from their espresso machines). So, I decided to give it a try and l am so glad I did!! My matcha latte was perfectly smooth, not at all bitter or gritty, and had such a delicate, natural sweetness. I will absolutely be back to reorder and am thrilled to have finally found a cafe that prepares its matcha in the way it's intended to be made. I hope proper preparation continues to be honored even during peak busy times!
