Located within St. Kate's Hotel is this delightful pizzeria. Dough freshly made in front of you. Lots of healthy & delectable toppings. First time trying was delicious and I'll be back. The CSMO 17 was delish!

Given this pizza was delivered 20miles via Uber it arrived warm and was still quite good. In store it must be excellent. Neopolitan style pizza, maybe a bit too thin and floppy under carriage but nice flavor and crust had a nice soft chew. Meatballs I thought were crazy salty. Almost inedible. Too bad, they're flavor was pretty good if you get by the sting of all that salt.

We have tried the other food venues at the St. Kate and like them. This was the first time that we ate at Proof. Got nice welcome by the staff and an explanation of the food options, and the process. Ordered a couple of small pizzas. Waited for about 20 mins and the pager/buzzer went off. Both pizzas were fresh, hot and flavorful. However, it was under cooked. Crust was good, the middle was not. Other reviews have complained about the pizza being soggy. It was horrible, but could have been better. I would try again and ask that it be done more. Took the pizzas to the bar area and got to listen to an amazing jazz/pop ensemble. Overall, it was a good experience.

I would love to give Proof Pizza 5 stars - because we loved the Carnivore pizza & Proof pizza - absolutely full of taste and a great mix of flavors. The reason for the 4 stars was the cheese pizza - it was underwhelming in the taste. As a pizza place, the basic cheese pizza should be good. Loved the service, cute & clean place to pick up pizza. The second time we ordered the carnivore the pizza was a bit burnt, but we ordered the last 30 minutes of the night, so I’m guessing they were busy. We’ll definitely order from here again when we don’t have our teen with us (she’s a cheese only kind of girl, so it’s off the list for her:) meatballs were decent, and good choice of drinks. Definitely try the local Milwaukee beer!

I love this eclectic pie shop in the St Kate hotel! Not only are the pizzas crafted to order the atmosphere is bright and refreshing. The crusts are delicately thin with a great chew to the edge. The toppings,and the ingredients of each of the sales etc are fresh fresh fresh! Pizzas can be taken out to the hotel lounge and bar area, eaten at a counter (reminiscent of NYC pizza places), or to go. I'm a repeat patron because I crave these pies!

Staff was polite and attentive. Pizza had a great flavor profile... however... it was a sloppy/soupy mess. Toppings & cheese would immediately fall off the floppy/wiggly slice. Even folding a slice down the middle didn't help. Far too much oil. To be fair: staff seemed overwhelmed & backed up with orders during RNC

Really weird experience. No place to sit really. Pizzas take almost half an hour. No clue what their target market is because it’s not convenient if you wanna grab a quick bite of pizza and then go to the live shows over at the associate theater complex. It wasn’t bad, just really not worth a repeat.

Super fresh ingredients, and a build your own pizza option, made this brick oven-style pizza a restaurant I would visit on the regular! What made this extra special, is you can eat in the adjacent Saint Kate Hotel lounge, while people watching and listening to live music! After your meal, enjoy a stroll the art gallery (free of charge). Takeout is also available and parking spots are located directly in front of the restaurant.

Great place to get a pizza pie if you're staying at Saint Kate or in the area! Service was kind and we got a good deal with our Marcus rewards. Clean and bright interior. Nice to eat in the connected downstairs lounge with a beverage and live music. Have tried several toppings and all were solid.

After seeing a musical at the Marcus Center, my husband and I stopped at Proof Pizza for a quick bite. This was our first time dining here, and we were impressed by the vibrant atmosphere of the Saint Kate - The Arts Hotel, where the restaurant is located. The hotel's bustling lobby and bar add to the experience, making it a great spot to grab a meal. Proof Pizza offers a casual dining experience. While there isn't seating inside the restaurant itself, you can either order to-go or dine in at the seating area within the hotel. The service was quick, and the Neapolitan-style pizza was good. I ordered the Proof Special and it had a great balance of sweet and spicy flavors. The combination of peppadew, sausage, and giardiniera was tasty, and the crust was chewy. I found the pizza to be somewhat greasy though and I should've ordered it well-done. If you're looking for a fast, casual, and flavorful meal downtown, Proof Pizza is worth a stop.

We got pizza for dinner from this place to go and wow it was delicious!! the crust was on point- the staff were super friendly at proof and also at the hotel because we were told to order at the bar. we chose to do the build your own pizza since it's only $1 more than their pizzas and had more toppings options- we made one with the pesto sauce and one with the special tomato sauce. We loved both of the pizzas- the toppings are super fresh and there's a good variety- some toppings like the pickled veggies i had never heard of the same but it was a yummy addition to the pizza. I would recommend getting 2 pizzas for 2 people unless you have something else like a salad to go with. We "almost" finished both pizzas as two adults with only 1 slice left. The drizzle options on top are great too! We highly recommend this find!!

Located near the Hotel of Saint Kate, Proof Pizza is a true stone fire oven pizza. For $18 dollars and some change, the pizza was not amazing but tasted solid. The bread was really nice and I appreciate the sauce flavor. I was the only customer so it took 5 minutes. The Proof Special Pizza was a mix of sausage, garlic, and bell peppers. Overall, the pizza was decent.

The best pizza I've ever had a hotel and you can do 50/50 on a pie. On one side we did mushroom, broccolini, pesto and mikes hot honey and the other side was cheese My husband and I split this while having some drinks at the bar before DMB show at summer fest! And i think you can get this as late night pizza from room service! Definitely recommend this place.

Good option for pizza, sandwiches, salads, located inside Saint Kate Arts Hotel. I knew of their good reputation with (namesake) pizzas, but did not know of their artisan sandwich and salads menu. My son and I enjoyed our sandwiches, which were served warm, lightly toasted in a soft kind of pocket bread. Could see the wait time improved upon, but very happy to know this is an option in the area.

It's a good pizza spot, especially for those that stay in St. Kate hotel. I wouldn't suggest going out of your way if you aren't a hotel guest, though. As for veggie options - you really only have 2 total options, which was a bummer. I think they were a multi-cheese and then a margarita option. They also catered pizza for a work event we had at the hotel, and those pizza options weren't on the menu, but they were much, much better. Good pizza spot, a little overpriced, but tasty and gets the job done.

Proof pizza has great food. I particularly love their burrata app. The pizza crust is top notch. Easy place to grab food if you're getting drinks at St. Kate. I typically grab for take out. Never been disappointed!

The overall debate if a pie is good or bad seems to revolve around whether the crust is crispy, chewy, thick, thin, etc. But perhaps the focus should be on the quality and taste. Bottom line- the pies here are decent. We ordered 12 pies for our party of 14. Our pies consisted of: carnivore (all meat) , cheese. marghertia, pepperoni, sausage, sausage/pepperoni, and a gluten free with sausage. For all pies, the crust was thin and chewy-except for the gluten free version. The outside crust tasted like a freshly baked bread. The sauce and toppings were decent. Not overbearing on the flavor or no flavor at all. Were the pies the same quality/texture you would find in some well known places in New York or Chicago? No. But we were also not paying $30-$50 for a pie too. However, i would say their pies are better than those you would find at locations such as "Pieology". Would I return? yes.

Posh Pizzaria inside modern elegant artsy hotel . Their specialty here is Pizza Margarita - original recipe nothing twisted nor modified. It was good, texture and flavor were there , crust is a little chewy bu tracking of crispiness. Why 5 stars, hotel showcase local MKE artist their work and support their work. Donates 1% of hotel revenue to support Artist. Great hotel, good pizza , awesome artworks.

Not great. Soggy bottom, Neapolitan style but would rather Vesuvius exploded. Very small too. They have a custom box and the pizza was waayyy too small for the box.

Amazing pizza! Proof Pizza is a small specialty pizza shop that connects to the Saint Kate hotel. I stopped in to pick up a pizza on a Friday night, and although it was busy we were still able to get our pizza in about 10-15 minutes after ordering. I love their Genoa pizza - it's definitely unique but it's light and fresh!

By far the best pizza in Milwaukee and probably in the entire state of Wisconsin. This review is years overdue. Since moving to WI from NJ we have tried pizzas from all over including the popular Lou Malnati's and Giordano's of from WI and IL locations. We tried dine in and take out options for days we don't want to cook. I just keep coming back to this place and at one point had proof pizza every single week! Menu is straightforward, ingredients aren't complicated and they don't put things in the pizza that aren't necessary or muddle the flavors. Their white pizza is also very good but the genoa pizza is my favorite. They use very fresh mozzarella and never overcook it. The tomatoes are fresh and sweet. And lets talk about the dough itself, it's thin enough to not taste bready but it's never thin enough to be crispy or taste like salt crackers. It's just absolutely perfect. Sometimes we would order ahead and it would take 25mins or less for pick up. Dont really mind waiting for it inside the St Kates hotel lobby because of the terrific elegant artsy ambiance inside the hotel, next to the lobby bar. There's metered parking right in front of the proof pizza entrance but this is limited. We've also dined in and had cocktails at the hotel bar with the pizza. They also had wings and other items on the menu but we really come here for the pizza. This is my go to pizza place and even though I live outside the city i still don't mind driving in to pick up pizza from here.

A great addition inside/attached to the Saint Kate Hotel! I stayed at the hotel for 8 nights and got this twice. The second time I was dying to get it again! You can also order this through the bar inside the Saint Kate lobby. Delicious, I'm not a huge pizza crust girl but I found myself finishing this pizza crust!

I LOVE Neapolitan pizza. The success in me loving the pizza is toppings and how it's baked. Extra crispy, right here!! Service was friendly and welcoming. Why not 5 points? There was only a bar seating along the wall and if someone came in the wind blew in and it was not pleasant. Wish they had tables to sit at.

Stopped here inside the Milwaukee Rep lobby. Very unusual setting for a pizza restaurant, but very convenient if you're looking for a quick bite before or after a Rep event. The staff was very cordial and attentive. We ordered the Antipasto salad and a very "nice sized" prosciutto and mozzarella pizza! Awesome!!! Food was served hot and fresh! A few Christmas parties were in the area (at other establishments) which added to the ambiance. Very reasonable prices.

2/5/2025. I was at the Saint Kate for a layover and tried the pizza. Oh my gosh!!! The pizza here is truly amazing, some of the best I've ever had. I ordered the carnivore and took it up to my hotel room and wolfed it down. I truly had to fight the urge to order another, not because it didn't fill me, it did, but because it was so good. Only one young lady behind the counter but she was able to take our orders and prepare them quickly and did a great job! If you're staying at the Saint Kate eating here is a no brainer. I can't wait for my next MKE trip so I can go eat there again!

We had a hankering for some pizza before we left Milwaukee but didn't want to get a huge one. We saw Proof Pizza did smaller pizzas so we decided to head over. It's inside of a hotel and honestly, at first, this made me not want to eat there. Hotel restaurants are usually pricey and not very good. Turns out, it was good and not completely overpriced. The menu items are interesting and if you don't like how any of them look, you can always build your own. We decided on the Proof Special and the Margherita. Both incredibly good. The Special may not be for everyone but I love sour/pickled flavors on my pizza. The pizza came out quick and perfectly cooked. With a can of Spotted Cow, was a lovely meal.

I enjoyed this pizza. The online ordering was simple and easy and was ready when the ordering service estimated. The interior is nice and unique, but I would imagine is mostly oriented toward carry out (once indoor seating is again allowed). There are several different styles to order as well as build your own options to suit all tastes. I enjoyed the crust (although slightly thicker than expected) and the flavors of my Margherita style pizza and will likely stop in again. I'm not sure if it's "Milwaukee's best pizza" as is claimed on the banner in front of Saint Kate, but it certainly won't let you down.

Five stars for both the pizza and the concept. I had been meaning to get to Proof for awhile because I loved the idea: fast-casual Neapolitan-style pizza with quality ingredients. How many times have I wanted pizza but not been willing to settle for delivery pizza or prefab slices? Well, more than none. I finally paid a visit today. Despite being in the Saint Kate arts hotel, the atmosphere is anything but fancy or pretentious. There are a handful of tables with napkin dispensers, and there's an island. I did drink a good amount of the fruit-infused water that was freely available. It was super refreshing and I would probably drink even more of it in the summer. They make your pizza when you order and it's seriously done in about 90 seconds. That pizza is totally worth it. It probably is breadier and cheesier than Neapolitan-style pizza should be, but it's still really good. The toppings are well selected and the pizza isn't overwhelmed by them. I especially liked the sweet heirloom peppers and the onions on the Proof special. I ate a whole pizza by myself (they're about 12") but I was really hungry. Two could probably split one if they got an antipasto or a salad to go with it. The prices were nice too. It wasn't what I went for but I had to use the restroom and ended up wandering through the hotel lobby and the gallery downstairs. It's really kind of a cool place. Proof has a lot going for it, and I have a new pizza spot.

These are made to order Neapolitan pizzas that are made to order and spend 5-10 minutes or so in a brick oven. They are excellent. Loads of fresh ingredients and very cheesy. They are about 12 inches in diameter and very filling, one is enough for two people.

Well...this was certainly better than expected. I saw that the reviews were decent but if I'm being honest I haven't really loved any pizza places in Milwaukee so I always go in a bit skeptical. I was proven wrong. we ordered two pizzas to go, a four cheese and a proof special and both were absolutely delicious. They were perfectly cooked and affordable. We got both for $25 total. We will definitely be back, as the pizzas were delightful. It's a tough pizza to split unless you're not super hungry but it's doable.

One of our favorite pizza places was closed for the night so we wanted to try something close to home. Overall, not very impressed with Proof. It could just be a bad style fit for me as I'm more into the greasy, cheap type and not the uppity kind. The 4 cheese was ok but it had a strange flavor to it.

We had such a great experience at Proof Pizza! We had done the art tour at the Saint Kate beforehand and it wrapped up right around dinner time. We grabbed a few drinks upstairs and then we were starving so we decided to grab some pizza downstairs. We each got individual pizzas that are 10". There was no line and we only had to wait a few minutes each for fresh baked pizza. It was delicious and we all finished every single bite. The staff was great and so was the food. We will definitely be back!

I am always looking for dining options near the Marcus PAC for when I take mom to the latest Broadway show coming to town, so I have been looking forward to Proof Pizza for a while now. First, the good: It's fast, which I appreciate for a time-sensitive endeavor like a show; the start time is usually hard and fast. Getting in, reviewing the menu, ordering, and receiving my food was about a 15-minute window. The pizza is quite good, too. It's pretty doughy, so be prepared for that. Staff are friendly, though they really need to talk louder as the joint is pretty echo-y and can be difficult to hear. The fruit-infused water was also a nice touch for those of us kicking the soda habit! Now, the needs improvement: Why do you ask me for my name if you're just going to yell out what I ordered when it's ready? Use the name the whole way or skip it, especially since it can be difficult to hear, especially when the place is busier. Seating is not as comfortable as I would like, either. It felt like it was designed to get me out of there as quickly as possible, which I did not appreciate. Lastly, to call the pizza pocket a "calzone," is a complete and utter affront to calzones. It's really a pizza folded half-assly onto itself. I'd definitely go back, but would stick to the pizza, not the silly "pocket."

Such a wonderful addition to downtown restaurants! We four people went at 11:50 AM when the restaurant slowed down a bit on a Friday. The restaurant is not big, but very clean and bright. Staff are super friendly and the chefs are so focused on making pizzas. Soon after we ordered the restaurant got super busy again! We waited 15 minutes for our pizzas. Worth the wait as you can watch how those amazing pizzas are made from the very first step of kneading the dough to the final step of taking the pizza out of oven! We got Proof Speical, Lasagne, Margherita (I always get this classic pizza when I go to a new Neapolitan pizza place) and one customized. The pizzas all tasted as good as they looked. Very thin and perfectly cooked crusts with that special nice smell from the fresh pizza dough. The dough puffed up around the sides and provided some airy texture - also a bit chewy, a bit burned (in a great way)... very good. The toppings were fresh and of good amount. Cheeses were rich yet not overpowering. Meat balls and sausages were yummy. The red sauce had good sweet and sour balance. The Proof Special was our favorite, but actually we loved all of them. My hands were not greasy at all after the lunch. Good job! I would say come early or after 1:00 PM or get prepared to wait 15-20 mins on weekdays. And they close at 5:00 pm (so no dinner service at this point). But definitely don't miss it because of the wait or the time!

I visited this place with a few friends last week. We ordered the Carnivore, Margherita, Four Cheese, and Garden pizzas, as well as a few desserts. We enjoyed all of the pizzas, but the Carnivore was my favorite because meat fat brings big flavor. I like the sauce and the toppings seem to be of high quality for all of the pizzas. The only issue I had was with the crust. It's good, but too dense for the style of pizza they are going for, Neapolitan. The oven is gas-fired, and there was a lot of staff on hand the day we went. This is essentially a fast casual restaurant that serves pizza, like Blaze and MOD, but I think this pizza is better. I didn't notice a build-your-own pizza option, but the options they have are solid, and all of the pizzas and pizza pockets are $10, which I think is a great value, at least it is for the pizzas. I didn't try a pizza pocket. I thought the Italian chocolate pudding was ok (way too firm), the vanilla panna cotta was good, and the tiramisu was really good. Service was also very good. A couple of items on the menu won't be available for a few weeks, such as the burrata and the fried pizza, but I plan to return to try them, as well as a pizza pocket.

What an amazing experience. We walked in about 15 minutes til close and felt so guilty. The two gentlemen working, Silas and Lorenzo, greeted us instantly and waved off our apologies. They were so patient as we ordered, even giving us recommendations and the their personal favorites on the menu. All of this was done with genuine smiles. We went next door to the art gallery while we waited, and one of them even went to find us to clarify something in our order. Our food was ready fairly fast, and we waved our goodbyes! I created a veggie pizza and my s/o got a custom pizza made by Silas, with red onion, garlic, pepperoni, bacon, chili flakes, and honey. He said it's one of his favorites! When pizza is good, it's good. When customer service is great, it's GREAT be sure to stop by Proof Pizza when you're downtown

Was in the mood for pizza and wanted to try a new spot when I found Proof on the Yelp app! After perusing their photos, I knew we had to order. Everything looked amazing! Myself and my two dining companions each ordered our own pizza (though they were ample enough that none of us finished it in one sitting!). My son ordered and raved about their four cheese pizza (an intriguing blend of mozz, smoked provolone, parm, and romano). My husband enjoyed their pepperoni and I was delighted by their Margherita. Their sauce is rich and tasty. The pizza is neapolitan style, with just the right amount of char on the crust. It's definitely fast-casual style pizza (so not really an Italian pizzeria). I'm writing this during COVID, so we didn't dine in (ordered takeout from the Yelp app and went to pick up). Inside, it was sparkling clean with health and safety measures in place. Their location is inside the Saint Kate-The Arts Hotel, but can be accessed directly from outside (ie...you don't have to walk through the hotel to get to them). Their prices are reasonable and their service quick and friendly. Get to it!

While the service and atmosphere was very nice the food proved otherwise. I ended up refunding my pizza because the bottom crust was so thin, undone, and soggy that it was impossible to eat. The rest of my family ended up finishing theirs and all got very sick. Suffice to say I wasn't mad I was just very disappointed.

This is a great pizza place. Tip: ask for fried eggs on your pizza! It's not listed on the menu but it is delicious. They fry the egg in a cast iron and then put it back in the oven with the pizza to cook again... Amazing Also you can order the pizza and eat it next door in the lobby of the St Kate's while listening to live music and sitting in a beautiful room. Great spot!

This is really three reviews in one. First, the restaurant. Located in the St. Kate Hotel. Great location, I ordered takeout and they almost forgot part of my order. Customer service was lackluster at best. The kind of place that makes you feel as though you're inconveniencing them by ordering food. Which was incredibly basic. So-so crust, and "The Proof" looked like a 5 year old had made it during art class. Fridays are pizza nights for my son and I so I wanted to give him a great experience by going downtown and seeing the city at night. The art at the St. Kate is magnificent. However, I parked in the parking garage and the following happened: I couldn't get my parking validation from the reception desk as I wasn't a hotel guest, when trying to pay for 15 minutes of parking (which should have cost $6) I was forced to pay $15. Called the parking attendant who pretended to call his boss, meanwhile I just paid the money so we could leave. He gave me a card when I left-- when I called it I was speaking with the same parking attendant, whose new story was that I was paying "evening fees". What an effort for mediocre pizza. Best part was the art. If you are wealthy enough to not worry about such expensive mediocrity, more power to you. I'm a teacher and a single parent and we're never going back.

Ordered the mozzarella and prosciutto pizza and a antipasto salad. It is a lovely place. The pizza was disgusting. The cheese slipped off immediately from the dough. The "prosciutto" was too chewy and was one of those items we had to spit out at times. The antipasto salad was ok. The dough was actually very good so perhaps try a different 'za.

Proof is fast-casual Neapolitan wood fired pizza that is made in like 2 minutes in their wood fire oven. Monday is BOGO pizza night which is one of the better deals getting 2 pizzas for $11-13. I think the pizza is best had inside of Saint Kate's to truly enjoy the ambiance and have the pizza as fresh as possible. Ingredients are a step up from the national chains, but not as elite as some of the top tier pizza places in the city. The 2 pizzas I had were both build your own. 1 had chili oil, mozzarella, chicken ,bacon ,onion and jalapeño. The other pizza had pesto, fresh mozzarella, pepperoni, garlic, sausage and red pepper. Chili oil on the first pizza was lacking but the juice from the jalapeño added some flavor to the pizza. Enjoyed the chicken and bacon combination. The pesto pizza was superior with the fresh mozzarella being the best topping I had of all of them. Overall Proof pizza is worth checking out for a quick bite or if having drinks at Saint Kates.

My partner and a friend enjoyed two pizzas from Proof Pizza at the Bar in the lobby of Saint Kate this week. I would give the pizzas (and my Caesar salad) 4.5 stars. Other than the crust being a liiittle lighter than I like, the pizzas - prosciutto & mozarella AND a "Build Your Own" pizza with marinara, mozarella, mushrooms, and red onions - tasted great. There was live music in the lobby and that added to the experience.

If you like Napoli / true Italian style pizza this is the place that you don't want to miss! That was one of the best Italian style pizzas I ever tried. We ordered three pizzas for the whole family and each one of them had a unique taste and was super delicious! I wish other pizza places were as good as this on in making quattro formaggi pizza! Don't worry that this place has only one bar table as a sitting option (on photos). You can take your perfectly cooked pizza and eat it in the lobby of the hotel right behind the cafe.

Ordered genoa pizza and the meatballs. Pizza had good amounts of cheese, pesto sauce, bacon and tomatoes. It was very soft and flavorful. Enjoyed the meatballs too. Also ordered galvanina, italian soda. But it was not delivered. I was too tired to call them about it.

Pizza was not good. Had a horrible taste almost as if the oven had not been clean in a long time. Do not recommend. Actual pizza looks nothing like pictures posted by the owner.

Stopped in at 6:14 on a week night. Stood looking at the menu while guys made pizza without even acknowledging me. Waited. Nobody helped me. I left as one of the guys making pizzas watched me leave making eye contact as I did. Nice way to treat customers.

Popped in here on a Saturday afternoon around 4pm after strolling downtown. They offer several vegetarian pizzas and we actually chose the roasted garlic one, which was tasty. Pizzas are wood oven cooked and one is fitting for two hungry (not excessively hungry) people. They have Pepsi products, some other grapefruit and pomegranate sodas, and a good selection of local beers.

I am so glad I found this place! They are located in the Saint Kate Hotel, on the Water St side of the building. They offer Neapolitan style pizzas and pizza pockets. They also have salad, appetizers, and a small selection of desserts. You can order one of their signature pizzas or have them build one custom for you from their lists of available sauces, meats, and veggies. We were greeted by two pleasant employees behind their registers as soon as we walked in. They were both knowledgeable and friendly. Actually everyone I spoke with there was. I must admit I spent several minutes watching them make pizzas. I apologized for gawking, but they told me that it was not a problem and that was why they worked behind glass and not a solid wall. I decided to follow the cashiers recommendation, and ordered the Proof Special. I was not disappointed. It had a red sauce, with mozzarella cheese, sweet red peppers, sausage, cipollini onions, and roasted garlic. I really enjoyed being able to watch them make my pizza. They were like pizza artists the way they so carefully applied the sauce and toppings. A few minutes in their nearly 700° oven and it was ready for a sprinkle of fresh basil and some sort of oil. It was truly a beautiful pizza! The crust was perfection. Crisp, bubbly, and just ever so slightly charred in spots, but it still had a nice chewiness. The toppings were perfectly balanced as well. Evenly distributed upon the pizza so that each bite was equally wonderful. I am really quite impressed with this place. For $10, I got a very good Neapolitan style pizza. I will definitely become a regular here and look forward to trying many more pizzas!
