"Glow with Health after a Meal at Pyramid Bistro Located above Explore Booksellers off of Main Street, Pyramid Bistro is Aspen 's first restaurant serving sustainable food with integrity. Martin, the head chef and owner, prides himself on preparing the freshest food from raw, nutrition-dense ingredients. This is the optimal place to eat if you are gluten-free or vegetarian. You can’t go wrong with one of their amazing salads, delectable stir fries, or house specials like Indian Spiced Red Lentil “Gallette” or Caraway Dusted Petaluma Duck Breast. Dining in a historical Victorian House only enhances the experience."

"It’s been dubbed “the healthiest restaurant in Aspen” (and bills itself as nutritarian) but that doesn’t mean it’s not fun. In fact, finding it is an adventure in itself—it’s tucked away on the second floor of an old house behind Explore Bookstore. Once inside, the vibe is airy and refined, with a menu so tasty you won’t notice it’s mostly meat-free."

After a long morning gruesome hikes at maroon bells, looking forward to good veg food, since wifey being a vegetarian. This restaurant and book store couldn’t be any better. Food was made with fresh, high-quality ingredients! All the items we ordered were truly a nourishing meal and ingredients made it very satisfying.

A lovely restaurant above a bookstore. The food is very healthy and flavorful. They use quality ingredients for guilt-free super nutritious meals. The prices are very affordable for Aspen. There are many gluten free, vegetarian and vegan options. I had the mushroom soup and shrimp and both were delicious. Highly recommended for a yummy lunch or dinner without breaking the bank 👌👌👌 The service is really good too - the servers are lovely young ladies who will not rush you.

Food was made with fresh, high-quality ingredients! Truly a nourishing meal. There were so many delicious options on the menu, we had trouble deciding. The risotto was delicious, as well as the tofu stir-fry. The stir-fry was a bit on the dry and less flavorful side than a typical stir-fry, but we didn’t mind because it felt intentional and the quality ingredients made it satisfying. Service was great - staff was hospitable, accommodating and overall friendly. We came here at an odd hour and the restaurant was empty, so I can’t say what typical service is like when the restaurant is busier. When in Aspen, you can expect to pay a little extra for everything, including food. That being said, I didn’t think anything of the prices.

Beautiful, intimate dining room and pleasant outdoor seating. The entrance is inside a bookstore up a cool narrow staircase. Very unique. Be aware that this is not accessible to wheelchairs or people with mobility issues. At least not that I was aware of. The menu is very creative with a Thai influence. Mostly vegetarian with a few animal options. All the food we ordered was beautiful and expertly prepared. The servers were helpful and friendly. If you are looking for something unique and eclectic, the Pyramid Bistro is well worth seeking out while visiting Aspen.

Excellent food and service. A real hidden gem. It’s hard to find because the entrance is inside a small local bookstore but if you can find it the food is well worth it. The food is healthy and tasty. Highly recommend duck breast and butternut soup.

VEGAN FRIENDLY! We had the Thai corn soup, the farro risotto, and the berry cobbler. All were absolutely to die for and vegan by design. Also, what other restaurant lives above a book store! The place was equally as quiet and peaceful as the store below. The staff were all super friendly. Definitely recommend to anyone visiting.

Chef Martin created a charming restaurant above a cozy bookstore. You enter the bookstore and climb the stairs and voila ... healthy delicious food. Try the Farro Risotto, Roasted Sweet Potato or Galangal Curry ...terrific.

Wow! This food was amazing! This was our first time at Pyramid Bistro and I’m so saddened to see they are closing. If you can make it before they close down, I’d HIGHLY recommend. The ingredients were obviously very good quality and the flavors were so impactful.
