Ramen Ichizu is my personal favorite ramen spot of all time -- any state in the US, anywhere. I've been eating Chef Mike's ramen since his only shop was Hana!
One thing that I really like about his ramen, especially the style he serves up at Ramen Ichizu, is how often I can find myself wanting it. By that I mean, many ramen places I can only eat every once in awhile, because ramen in the US is typically very rich, strong, salty, etc, which are not bad things necessarily, but it's an every once in awhile affair. Every bowl I have from Ramen Ichizu is light, easy on my stomach, and so fulfilling.
I have come for different popups with creators from Japan, and different specials, but my favorite has got to be their Shoyu. Right now my favorite is specifically the Elk Shoyu. Before I ate their shoyu, I actually hated shoyu ramen as a whole, and only stuck to tonkotsu (mostly that's the only good style you can get at the places I've been). Shoyu in many places tastes way too salty, and is way too dark/soy sauce heavy for my taste, but I can tell that Ramen Ichizu makes theirs specially and authentically by hand, to the point where it actually changed shoyu from being my least favorite to my most favorite type of ramen (as long as it's theirs!)
I love the cute little shop. It's my favorite place to come in to grab a simple bite before going to the movies. I always love sitting at the bar so I can watch them cook up the ramen. Earlier, service could be a little slow, but ever since they switched to using Toast tab it's been a breeze. Even before that, I was always willing to wait for a bowl.
To me, the price they charge compared to other ramen shops is reflective of the quality craftsmanship of the dish, with every part cooked from scratch. It's more than worth it to me!
