In 1 line, the Rappu experience is a masterclass in elevating a staple (and its basic constituent ingredients) to Japan-level and much more.
Sushi, as a Japanese staple, is difficult to stand out. Perhaps there is sushi that is more fresh than others, sushi that is presented more nicely. I think Rappu does this, but to a much higher level — especially for its Jigo handroll set, which is my go-to.
Every element by itself is superb — from the rice, to the perfectly fresh, clean-tasting fish/main ingredient, to the toppings (e.g. chili leek; tempura crumbs etc.), to even the seaweed (nori) that is used. Combined into 1 handroll, the already great individual ingredients transform into a symphony of flavours, that leave me hungry for more after each handroll.
My personal favourites are the Toro handroll, as well as the Engawa. Oh the engawa — if you've never tried sushi capable of melting in your mouth like warm, luscious butter, I highly encourage trying it (specifically the Jigo set engawa, which is included in the Rappu 6 Jigo set, or can be ala carte added).
Apart from this, their izakaya dishes are nothing to scoff at either. Their unagi is some of the most flavourful, fresh, fluffy eel I've ever tasted among Japanese restaurants in Singapore thus far; their duck tsukune has also been done so well that there isn't a single hint of gaminess to the meat, which is often characteristic of duck meat.
Service is efficient, and the staff there do remember their regulars, which adds a nice personal touch. And the ambience is also chic-casual, which is perfect for winding down in the evening (while enjoying amazing cuisine).
To summarize: having gone to Rappu more than 5 times already, every single experience is a gastronomic adventure which, after its completion, leaves me craving for more. Thanks to this lovely team for making the Rappu experience happen each and every time! You've found yourself a big fan and regular :)
