"This restaurant is part of a delightful hotel situated some 6km from the medieval town of Sigüenza, where the owners have restored a 15C flour mill. Here, surrounded by stone, wood and myriad tasteful details, the brother and sister team of Samuel and Blanca Moreno create modern cuisine rooted in tradition which aims to highlight the splendid seasonal bounty of the mountains around Sigüenza, hence the focus on wild mushrooms, game and vegetables from the property’s own garden. In its attractive dining spaces, complemented by an enclosed glass-fronted terrace, guests can choose between several interesting tasting menus (Molienda, Clásicos and Esencia). We had a fantastic stay at this hotel and, as we anticipated, dinner at the restaurant was a real highlight. The hotel is situated in a small village a few kilometers from Sigüenza. There is a walking/cycling trail connecting the hotel to the town and the surrounding region, so it's an ideal kicking-off point for a walking/cycling trip. We booked a suite as that was all that was available. It was lovely - set across two floors with a very generous sitting/dining area downstairs and a well proportioned bedroom/bathroom with an outdoor terrace on the upper floor. Dinner was a real treat. They prepared a vegetarian tasting menu for me, which was every bit as good as the one prepared for my omnivore dining companion. The wines were unusual - all from the region - and were excellent. Breakfast was also a highlight. I'd highly recommend this hotel. They even have a charging point for EVs.

Excellence at many levels in this gem of a property, a bit off the main roads, but totally worth the detour, to near Sigüenza. The hotel, the restaurant, the service, the decoration, they spa - everything is executed to near perfection. It is a total discovery.

The hotel was smaller than excepted, but it has a nearby country gravel road to take walks/runs. They also have nearby rio dulce hike which is wonderful. Service was great and they were kind to welcome us with a gift. Even though the train passes close by, you almost never hear it, specially at night (never runs at night). Maybe they can have better WiFi, and better toiletries (conditioner/shampoo/ etc). Will go back when they open back next year.

This is an outstanding hotel, with exquisite dining! We had our honeymoon here, and it could not have been more perfect. The staff are lovely. The pool is beautiful. I would highly recommend.

Beautiful boutique hotel in a peaceful setting. It’s the finer details and personal touches that make this hotel stand out and you can tell that a lot of love and thought has gone into each space. Room was beautifully decorated and luxurious. Bed very comfortable! It’s a shame the weather was poor during our stay as we would have loved to spend more time outside on the terrace and by the pool. Loved the option to dine in-house alfresco at the Bistro as storms stopped us from venturing out to Siguenza for dinner. The food was very good, especially the breakfast consisting of in-house made treats and locally sourced produce. We were sad to leave!

An upscale hotel located in the countryside. Staff here are top notch, multi-lingual, helpful in every way. The rooms are comfortable, well-appointed, and great for a longer stay. The location is away from the noise and bustle of a city. The quiet here allows the visitor to sleep perfectly. Again, staff are detail oriented and very capable. I liked that they provide a small card with scheduled dinner and spa reservations to make the stay flow smoothly and easily. Siguenza is a few minutes away. And then breakfast! Wow! Breakfast served by cheerful staff with all the favorites provided at a high level. All in all, a great stay here. Enjoy!

A charming place for a quiet weekend in the countryside. The friendly staff makes you feel comfortable from the first moment on. The house is a renovated mill, many hundred years old. The mechanism of the mill can still be put into function. Dinner in the restaurant is truely high class. During my stay a stargazing event was conducted, taking advantage of the dark night sky in this lonely region - a unique experience!

The hotel is in the countryside and it is peaceful here. We had a room overlooking the swimming pool. Bianca and her staff in the hotel were very helpful. The only negative was breakfast in the restaurant. We asked for more croissants to be told none availble! Also we had to go into the kitchen area to ask the staff to come and attend to us.
