Restaurant Calma is super nice. Honestly, I’ve been walking past this restaurant for quite some time, always looking inside thinking it looked really good — and then I saw that they’d gotten a Bib Gourmand, so I thought, okay, now’s the time. And I’m really glad I did because it was actually really, really good.
The interior and open kitchen space are beautiful, and the atmosphere is just great. I was here with my partner, and it was a wonderful experience from start to finish. The chefs and the waiters are incredibly nice and attentive, and they really make you feel welcome and kind of at home, to be honest. The lighting is great, the vibe is relaxed, and everything just feels very well put together.
We went with six dishes in total, which in hindsight was too much because we couldn’t fit dessert, but at least we got to try a good spread of the menu. Overall, it’s definitely a five-star experience, but I’ll admit that at the start I was more around a 3–4 because I wasn’t that impressed with the cold dishes.
We had the yellowfin tuna with pistachio, which was quite basic. It wasn’t bad, but it felt like it was on the menu just to have tuna on there — nothing special. Then we had the stracciatella with peperonata and basil, and that one was absolutely delicious. Still simple, but so well executed. Easily the best of the cold dishes. Then we had the halibut crudo with orange and tomato, which was good too. Not as mind-blowing as I’d hoped, but definitely better and more interesting than the tuna. My partner actually really liked it.
They served bread on the side, which was, of course, really nice. But then we moved on to the warm dishes, and that’s where Calma really shines.
We had the agnolotti del plin with morel and foie gras, and it was absolutely crazy. The demi-glace they used was just insane — so rich, so deep, so full of flavor. Easily one of my favorite dishes of the night. Then came the monkfish with tomato and langoustine bisque, and that was without a doubt the best fish dish I’ve ever had in my life. The bisque was unbelievably flavorful, and the monkfish itself had the texture of a perfectly cooked steak — firm, juicy, and full of flavor. I’ve had a lot of great fish, fresh grilled ones abroad and all that, but nothing compares to this.
We also had a short rib, which was a special, and it was amazing too. Super tender meat, great sauce, mashed purée that was buttery and smooth, and perfectly cooked vegetables on the side. It felt like the short rib borrowed a bit of that demi-glace magic from the pasta dish, and everything came together beautifully.
These three — the pasta, the monkfish, and the short rib — were on another level. The gap between the cold dishes and these warm dishes was enormous, like a Grand Canyon difference. And that says a lot, because Copenhagen has a ton of good restaurants, and I rarely go back to the same one twice. But I’ll come back here just for these dishes. Calma’s warm dishes are absolutely insane.
After the meal, the chef came over to talk to us, which was really nice. We chatted about other restaurants, and even though neither of us know much about wine or are the type to get snobby about food, we really do appreciate good cooking — and this was seriously good. We’ve eaten at some pretty nice places, but Calma was just next-level.
I’ll definitely come back. There were so many things that were absolutely amazing.
