When anywhere and curious, if you're like me, you want to try the local specialties. Restobières is one of those place for tourists to sample Brussels' specialties (i.e., beer-everything). And as such you would expect and want a Brussels' atmosphere...
Yes, being in all the best and worst tourist guides, the place is always busy and you should book a table, even very early on a week day. Yes, the food is traditionnal and beer-y. Sometimes, a hit or miss. I suppose it depends on the mood of the chef. The piglet was quite good, the lamb not so much.
But, and being belgian maybe my expectations were too high, if you decide to have french waitresses, could you please teach me to correctly pronounce the names of dishes and beers and places... There is no such place as BruXelles, Vitkap is not a bier and I won't even try to mimic how they pronounced Hommelbier. I'm sure a lot of people don't hear the difference, but if you want to attract locals as well as tourists, having a true Brusseleir atmosphere would be a favoured plus. (Having them know the beers in order to advise people correctly - and not just as if they were playing a game of vogelpik - would even be better, as I ended up advising them myself!)
