This is my favorite place in Gstaad. I would say the menu is typical Swiss-German, but not so typical in preparation. I usually get the Tete de Veau / Kalbskopf. If you've ever eaten this dish anywhere else, it is usually a plate of mostly veal fat with very little flavor. At the Rossli it is much less fatty, and comes with this gravy boat of very finely cubed vegetables in a heavenly vinaigrette. Last night I had some veal dish off the daily specials menu, that the waitress described as from the calf/ankle of the calf. Whatever the cut was, it was low fat and beautifully tender. My wife had the kalbsleber which I tasted and was also delicious (and I not usually a fan of liver, well not cow liver anyway). What I am a big fan of when I'm in Switzerland is veal. I think we Americans have the best beefsteaks, but the Swiss have and prepare the best veal.
The service here is top notch and very professional. It's been my experience that all the servers are fluent in English, French and German, but that is pretty much the case at all of the places in Gstaad. The menus are also printed in these 3 languages, except for the daily specials which are only listed in French and German. The servers also wear traditional uniforms you would expect at a Swiss landhaus in the old days.
The chalet the Rossli is located in may actually be the oldest chalet in the village. Based on the name it was the original post office for the village, and is currently also a modest hotel. I've only ever eaten in the steubli, which I prefer over the formal dining room. The steubli is decorated with old skiing photos, deer antlers and local artifacts. I find it very charming. This place defines classic Swiss dining in a Landhaus.
If you are in town during anything resembling the busy seasons; Christmas, February, and Summer, I would suggest reservations. The impression I have, is that this place is popular with those in the know. I've been going there for 13 years now and it's always good.
Lastly, there's price. With the exchange rate being what it is the last few years, Switzerland is expensive, and Gstaad is expensive anyway, but I consider this place a very good value considering the quality of the food and impeccable service.
