Best meal I had in this trip to Paris. This place was delicious, and in fact a lot more so than the other meals I had which costed anywhere from 2 to 7 times as much
Complimentary sausage slices had good flavour, and you can see how it's almost see through despite the strong bite.
Terrine with apricot was interesting, the meat was fine but the sweetness of the apricot was unabashed, and it was so unique. What's funny is how the apricot jam is muted in sweetness instead, and was quite spiced. The cornichons were lovely, with a strong crunch.
Their signature sausage is alright. It's loosely packed, and slightly crisped up, but what makes it magical is how for some reason, the gravy, sauce and sausage work together immensely well, far greater than the sum of it's parts. Delicious together
And the chocolate mousse might be the best I've had. The mousse itself was already textbook, but there's so many little things from the millefeuille in the small amount of coffee sauce at the bottom, the cocoa nibs in the mousse, the small amount of salt and the flavourful crisp on top that comes together so seamlessly, which makes it masterful.
Unfortunately the menu was on rotation and I didn't get to try their more unusual offal cuts today. Nonetheless, I've seen enough to want to visit again, which is extremely rare for me. All while being just 44€ means it's very reasonably priced for the quality
