"Stillwater is a longtime favorite in Launceston for its location on the Tamar River in a lovingly restored 1830s flour mill. Original beams, polished timber floors, and water views set the scene for seasonal dishes such as whiskey-cured Huon salmon; slow-roasted Flinders Island rack of lamb (flavored like ocean salt from the sea-swept grasses the lamb eat); and Cape Grim steak (which hails from the capital of clean air). We had the most wonderful weekend at Stillwater Seven in Launceston — a true boutique gem that delivers on every front. From the moment we arrived, the staff were warm, attentive, and genuinely welcoming, making us feel right at home while maintaining a professional, polished touch. Our suite was lovely– a perfect blend of heritage charm and contemporary luxury, with thoughtful details everywhere. The views over the Tamar River were peaceful and relaxing, and the locally sourced treats in the in-room pantry were a lovely surprise. It’s clear the team puts great care into every guest experience. The highlight of our stay was dinner at Stillwater Restaurant downstairs. The food was exceptional – beautifully presented, full of flavour, and showcasing the best of Tasmanian produce. Every course felt carefully crafted, and the wine list was spot on. The food was so good we even had dessert! We left feeling completely refreshed and well looked after. Stillwater Seven is the kind of place that makes you fall in love with boutique travel all over again — intimate, elegant, and full of heart. We can’t wait to come back for another weekend soon.

What a unique place to stay. Beautiful rooms, fantastic location (Gorge Cataract literally across the road!). Wonderful and responsive service. Clean rooms, awesome mini bar and complimentary breakfast. Only mistake we made was not booking to dine at the restaraunt which is rated the best in Launceston. They did try to accommodate us but the restaraunt gets very busy. A great place to stay. Highly recommended!

One of the most amazing dining experiences from our trip around Tassie! Our wonderful waitress Gigi was attentive, knowledgable, and so caring, she really added so much to our experience at Stillwater. Not to mention the incredible dishes we enjoyed.. all entree’s, main’s, desserts, and drinks were high class. Do yourself a favor and try the parfait, so many beautiful flavours wowee! Also very impressed with their intention of celebrating local Tasmanian ingredients and produce. Couldn’t recommend enough if you are in Launceston, please try for yourself! Would give a 6 star review if possible!

I was recommended Stillwater restaurant by a work colleague when he found out we were to be visiting Launceston from Western Australia. I'm so glad he did, every dish we had was immaculately presented and absolutely delicious. Wait staff were fantastic and nothing was too much trouble. Can't recommend this place enough. Just about worth making a special trip over for the meal alone.

We had the great pleasure of dining at Stillwater for a Birthday. The service was faultless and ultra friendly. Our servers were Bella and Lavinia and both were wonderful young women with genuinely warm interpersonal skills. Our meals were absolutely delicious and did not disappoint in any way whatsoever. The dishes were timely, hot, exciting to the palate and so very delicious. We had a lovely evening and would not hesitate to return for more.

We were fortunate enough to be seated in the cellar which made our friends’ visit to Launceston doubly memorable. We anticipated that we would have a wonderful meal, and we did, but being in the cellar together made it even more special. The food, wine and service was exceptional. The best meal and service of our week long trip to Tassie. Every dish was mouth watering, just amazing. Good food is one thing, but it’s nothing without good service and the service at Stillwater is so spot on. It’s a very slick service that elevates the food, which is pretty good considering how good the food is. Very memorable meal.

A wonderful restaurant! Stillwater is perfect for all kinds of events like birthdays and anniversaries. Great service and a really cozy and calm atmosphere in the restaurant. I would recommend the sashimi. It was one of the best meals I’ve had in the last year! Definitely worth a visit.

A super find in Launceston! We weren't super hungry stopping in for lunch, so we shared the fish and chips. They were light, flaky and delicious. The chips were great too. Friendly service, good food. Prices are a little high but WELL worth it! Super location too, with the original beams and floor from the flour mill it was originally. Ambience is great!

Order the Fish of the day dish. It topped some roasted pumpkin that was absolutely Devine! The fish (white, blue-eyed travella) was very tasty and mild in flavor. The whole dish was delicate and flavorful. We order bread as well. It had a nice roasted, nutty flavor to it - so it wasn't a boring slice of bread. All and all, the lunch was very, very good and enough to to feed two. A bit pricy, good value. Then we partook in dessert. The lemon Tart & Baked Cheesecake with Rhubarb. Simply the best way to finish this meal. Highly recommend either one.

Last weekend, I was travelling Tasmania with Andrea. We had both heard a lot of great things about the restaurant Stillwater. Before going to Tasmania, we decided we had to head down. Stillwater is located in Launceston. We then ordered our food. Andrea chose the Rye waffles, Served with cold smoked Huon salmon, dill cucumber, eggs and mustard crème fraiche. I chose the Eggs Eenedict, Served with Mount Gnomon Farm ham, hollandaise and lovage. Oh my gosh both these dishes were so good, We ended up sharing both. They have won awards for their wine list, with Gourmet Traveler rating them as the best wine list in Tasmania. Which shows of some great Tasmanian wine producers, but also has a few classy imports. Oh man the more I write, the more I realise how much I need to go back. Whether you ive in Tasmania, or you are on a trip like I was. You should go to Stillwater for an amazing food experience. A beautiful location and dining experience. We stopped in for breakfast before leaving Launceston as part of our Tassie holiday. The staff were very professional and friendly. Now onto the food... We ordered flat whites and a chocolate milkshake for our son-all superb. Hubby got the red bowl and was very happy and satisfied and the poached eggs were cooked perfectly. I had the famous granola-yum yum yum! So tasty and boy was I full afterwards! Our son got the kids scrambled & bacon and the plate was clean when he was finished. Very happy! After that we went upstairs to the providore which has an array or gorgeous gifts and the cheese was delicious! Definitely make this a Launceston stop!

An excellent place to celebrate special occasions. All the wait staff were friendly and professional. Excellent service without being too intrusive. I love the oysters - fat and juicy. $3.50 a piece but probably the best I had in Tasmania. For the main, I had the ocean trout. The foam/ sauce/ fennel and all the little components might seem overwhelming but they all went together.... symphony in your mouth ! If you are in Launceston, you HAVE to try this place cause you wont regret it :)

Very very nice place. We dropped in here for a quick breakfast and were very impressed. I had the eggs Benedict which were clearly made with love. The celeriac powder made an interesting flavour contribution to the dish. Most unexpected. The ham was very tasty too. On our first visit I had a side of avocado and on the second I had the mushrooms. The mushrooms were excellent. My partner had the granola with hazelnuts, walnuts, coconut, apples etc. the granola was toasted perfectly and was a perfect contrast to the crunchy green apples and soft berries. "It was really good,I really enjoyed it". Day 2 my plus 1 went for the eggs benedict and loved that too. Service was efficient and very friendly. I highly rate this joint.

The good: fantastic atmosphere, with beautiful exposes timber columns and ceiling, pleasant blue walls, views of the water. Interior is relaxed but upscale, spread out with plenty of space between the tables. The kind of place you take your in laws to show them that you care but aren't trying too hard. Also, there was a pappardelle starter that was phenomenal. The bad: first, the service was awful! It took over 50 minutes for our starters to come out. We were waiting for drinks and water refills for longer than we actually had them, and our waitress acted shocked that after 45 minutes of waiting, we would dare ask about the status. Then, all the starters come out at once. Then another 30 minutes before the mains come out once we finished the starters. 20 minutes from when we asked for the check to when we received it. Revolving door of wait staff. Not even the faintest recognition that this was abnormal. Also, the food was blah. The pork belly was mushy and accompanied by a bean/coriander/potato mix that I could have made sans recipe easily. The trout and fennel were better, but not inspiring at all. The pate was ok, and the scallops were the least exciting we have had in Tasmania. Bottom line: The website is beautiful, but it's all downhill from there. Not a good use of $300 nor an afternoon.

4.5 stars!! Went for brunch and we had the rye waffles and egg on toast with smoked salmon. The location was absolutely fantastic on the water and Stillwater has a long-standing reputation for quality and fine dining. Both dishes were great, in particular the waffles were excellent and would recommend this place for a romantic brunch for couples.

Visiting Launceston I suggest you dine at this restaurant. The service is very good. The wait staff are helpful . The ambience is a nice experience. We tried the wallaby, the rump and the pork dishes all were very good. A good choice of wines , of course we tried a Tasmanian Pinot Noir. The desert menu to read was intense offering lots of choices in one dish, it actually turned you off ordering desert. We decided to share 2 of the choices between 4 and we were glad we did. Overall we enjoyed Stillwater Restaurant.

Came here for a birthday dinner, got into town late and made reservations for 9pm on a Friday but didn't seem to need that. Started off with calamari (fishy but oddly tasty with the spicy pickled celery once you get over it). The tiger prawns on skewers were juicy with their head on, Indian influenced flavors were tasty. I had the beetroot salad (refreshing) and Tasmanian black lip abalone (mild ginger flavored broth with Chinese influenced flavors, earthy mushrooms and tender abalone). The hubby got the scotch fillet which was done perfectly, seasoned perfectly and really elevated by the fresh wasabi. Great wine selection. Friendly staff. If we had more time, we would've done the tasting menu but didn't want to torture anyone to stay til 11pm. The atmosphere was a bit cold (not just in temperature even though it was cold in there, maybe because we came late?

Stopped into Stillwater for lunch before a flight out of Launceston. Beautiful restaurant overlooking the water - warm ambiance. Unfortunately that's basically where the positive ended for us. The service was terribly slow. It took over 25 minutes to get my cocktail, and over an hour after ordering to get our mains (we had to ask where they were), which seems insane for lunch on a Friday. The mussels tasted off - way too fishy and salty, I couldn't eat them. The waitstaff took them off the bill luckily but we had been waiting so long I didn't have time to order something else. Based on the high prices, slow service and weak delivery, I wouldn't return.

Pretty wanky restaurant! Great service and the waiter was really nice. The menu is overpriced and trying way too hard with foams and smears and dehydrated food. I guess some people like that? I think it's weird. I had wallaby for the first time ever which was great. No salt and pepper on the table and not offered? Is this because it was perfectly seasoned? I needed s&p. also fresh pasta was over cooked and my smear( I have no idea what it was even made of...too much stuff going on in this dish) was dried up because of the heaters in the kitchen... Mmm the flavours were bland, what a waste of great meat. The wine was good, varied from different parts of Australia. Over priced again though. Fig tart was spot on, perfect flavours. 10/10 Cheese plate... Meh could be a bit more local and different. All in all I wouldn't go again.

Stopped here for brunch before heading to Cradle Mountain. The most delicious hot chocolate and a kimchi omelette that was to die for. Service was attentive and friendly and I loved the aprons that the waitstaff wore. The manager had a leather version that was absolutely stunning. Upstairs is a store with a nicely curated collection of soaps, jewelry, kitchenware, teas, dishes and delectables. Perfect for tasteful gifts to bring to loved ones back home. Wanted to stop again on the way back but didn't have time.

4.5 stars for this amazing culinary experience. Firstly, the flour mil the restaurant is set in is absolutely gorgeous. Nice simple decor, white table cloths, excellent service and great lighting/music. These guys have done justice to the local produce of the region and Tasmania on a whole. Each dish is sourced from within the state and is unique in its own right. We went with the ale carte menu- 2 courses $70 or 3 courses for $90. We started with the sparking wine- absolutely perfect start to the meal. Crisp and fresh. Starters I had the pork belly. This was done to perfection- perfectly cooked, crisp on top and well seasoned. The other choices looked incredible too! For mains I had the beef ribs slow cooked for 48 hours. They literally fell off the bone!! They were served with some spicy Asian greens- perfectly balanced. My fiancé had the wallaby- great flavor and definitely worth trying for something different. Dessert was a rhubarb frangipani cake with honeycomb crumble. All I can say is if you're in Launceston- go to Still Water!

What a gorgeous place and the staff really spoil a gal. We were so engrossed in the view and the bones of the old building that we took ages to order. The menu has a good selection so that there's something there to soothe a particular hunger, or the degustation which would be amazing for a group focused on food and great wines. The service was smooth and highly professional, with a suave adaptability to our needs. The duck was superb, great balance with polenta foam and baharat (?) flavours. Duck very soft n juicy with crisp skin but you know, that foam just doesn't have the texture to balance the melting meat. I say use the polenta and leave the foam for shaving. The broccoli was crisp with a stock sauce poured over and worked well with all our meals. I found Holly's wallaby fillet tough and lacking flavours. But the service was impeccable, waitstaff taking their job seriously and very customer focused. Wine list is good and the desserts give good choice. We tried Beckys fig tart and it was brilliant. Holly and I had the cheese @ $15 and it was a good serve with crackers and fruit pastes. It was expensive but I'd take a date there as the place is gorgeous and the food is flash. The service is excellent, very European customer focus. But the food is a bit too fancy for its own good. The foams, the jus, the smears - too much bedazzle not enough texture balance.

Very disappointing meal and wine. Was told I should have rung ahead to order a Vegetarian meal so was given a plate of burnt roasted vegetables swimming in soy sauce. My boyfriend was served the tiniest morsel of trout I've ever seen. The wine list was exhaubetantly over priced for one year old wines. We chose the Freceinet Sav Blanc, horrible! Awesome wait staff , offered to buy a decent bottle so I could at least have a glass of something quaff label, a gorgeous Rose' not available by the glass. Great building and view.

The Good; The location, beautiful views of the river and city. The ambiance and decor. The Superb; The menu and the quality of the food presented to the table. The knowledgeable caring staff. The entire "Stillwater Experience". The Bad; There is nothing bad about this haven of quality food and service, we do however limit the frequency of our visits to Stillwater for no reason that makes any sense, other than to preserve the "special occasion" feeling which every feast at Stillwater has.

This is my second visit to this wonderful location. Stillwater serves a mouth watering selection of food. My main course melted in the mouth. If you have a small group of 6-10 ask for the cellar room.

Best piece of meat I have ever eaten. I had the wagyu beef. My woman had the market fish which I tasted and was really impressed by. The waiters were excellent and really knowledgable. I'd recommend it to anyone

Lovely Sunday lunch. Enjoyed the tempura fish, the batter was so light and the fish just melted in your mouth. The chipotle bean sauce on the pork belly was a tad dissapointing, but very happy with the overall experience.

Over priced, average quality food and very poor service, a big don't bother. $17.00 for a glass of house bubbly, $33.00 for a ploughman's lunch. Staff couldn't remember who ordered what.
