Great sushi here! We had a mix of Nigiri and 2 signature rolls. Absolutely fresh and delicious. Highly recommend you check it out if you’re in Moab. Shared Matcha Crème Brûlée for dessert.

Best food in Moab hands down. Excellent vegan sushi that’s better than a lot I’ve had in bigger cities. My favorites rolls were Hidden Valley and Eddie Out ($11-12 each). Really unique flavors. Moonflower Valley was muted and nothing stood out. Agedashi tofu is delicious. My partner loves the salmon poke bowl. Vegan desserts are incredible. The lemon curd was very lemon-y and tart, and the chocolate mousse with whipped cream was rich and creamy with a hint of salt. Cocktails were tasty but aren’t strong (tried on two visits). Service is attentive but food takes a while to arrive. It’s worth it. They really care about the quality and presentation of their food. This place is a gem!

Beautiful and delicious! Very vegan friendly! We got 2 orders of vegan chef free style rolls. Each order included 8 identical rolls, but different than the rolls of the other order. They were beautiful and the flavors mashed together delightfully! $17 for 8 rolls isn't great value, but this was a very special experience. We also shared the two vegan deserts they offer, lemon curd and chocolate mouse. Both were delicious. Highly recommended, especially for a special occation.

Had dinner on a Wednesday evening. The atmosphere was great and we sat at the bar. The chefs were friendly and interacted with my kids. We tried the seaweed salad and miso soup for starters and were pleased. For sushi we had a shrimp tempura, spicy scallion, and fiery furnace. We tried the two piece way sushi and were pleased. Also had the snowbird and Brighton hand rolls and a poke bowl. The poke bowl was particularly impressive with contrasting flavors between the salmon, avocado, and pickled vegetables. The rice was also impressive as it was lightly breaded on the outside with panko crumbs. Add to this the flavors of arugula and the sauce and it was an enjoyable meal. Only downside is it is a little on the pricey side. The food quality is good though and I would eat here again.

We love the food here, it is one of my favorite restaurants in Moab. Birthday dinner? Sabaku. Taking my lady out for a fancy date night? Sabaku. Just wanting some real good sushi? Sabaku all day. I'm writing this review because the service simply does not do the food justice. We found ourselves at dinner the other night scheming about ways to catch our servers attention at multiple points throughout the meal. We also found ourselves waiting 10-15 minutes with empty plates before having a chance to ask for the bill. This is not the first time we have had this experience here. I think the service would likely improve by hiring an extra server for busy nights. It would help customers feel attended to, it would make tables turn a little faster, and it would make this a 5 star restaurant instead of a 3 or a 4.

The atmosphere was nice overall, but I was really disappointed with the value for money. For $17–$20 per roll, you’d expect something more filling and satisfying. The rolls were very small, and the fish was sliced so thin it was barely there. I left still feeling hungry. Honestly, for those prices, I wouldn’t come back.

Food was Amazing!!! When you first step in you will notice this isn't your average sushi house. They have music playing and all the people making sushi are bearded white guys. But don't let this deter you! Me and my wife agree that this place had the best sushi that ether of us has ever eaten. We set right at the bar which was a great experience due to getting to watch them make everything and as the place calmed down towards closing getting to talk and ask them there suggestions on what to order for our second round of food. It had been a long day of travel so we were both very hungry and together we shared 2 of the specials they had (oysters & swordfish) along with 6 different rolls (Poison spider, spicy scallop, surf & turf, sunshine & 2 different orders of chef choice). Everything was delicious. Overall this is a place everyone tourists or local should grab a bite to eat as you won't be disappointed.

This was a great experience here. Food and drinks are AMAZING. Sushi is deliciously fresh and the special rolls were unique and delicious. Highly recommend the poison spider roll, it was the best sushi roll I’ve ever had. All the added details such as thinly sliced lemon, different dressings, sauces, etc were very special and really made this 5/5 stars. Our reservation was postponed by 20 minutes but that was no problem as the staff called us and let us know as soon as they could. If you have one meal it Moab, let it be this one. Recommend a reservation as the place is small and busy!

This is some of the best sushi I have ever had in my life and I have had a lot of sushi. I'm so surprised to find a gem like this in the middle of the desert. My hat is definitely off to the staff, keep it up and you will be drawing people to Moab from all around the state just for your food! I feel so lucky to have been a guest in your restaurant.

We had a good meal here on their patio, where we were able to have our dog join us. The servers were great, checking in frequently with our group and providing a great experience. The staff worked together well which is always nice to see. I can't speak about the inside because I didn't see it. One weird thing was when I tried to get a reservation for our group of 9 on a Saturday they said that they couldn't take us. But, another member of the party was able to get us tables on the patio, not sure why. Overall, we would definitely visit them again.

Amazing sushi in the middle of the desert - a very pleasant surprise! This is a very small restaurant right in downtown that takes both walk-ins and limited reservations (highly recommend if you can get one, as they do get busy). They have a decent list of house specialty rolls, creatively named after well-known spots in Moab, as well as traditional rolls, nigiri, & sashimi, plus a great list of vegan-friendly options! I ordered the vegan Moonflower Canyon & Mango rolls, which I found quite delicious. Our server was great - friendly and accommodating without being overly pushy. Would definitely rank our visit in one of the top 3 food spots we've been to in Moab - will definitely want to come back here on our next visit!

Wow! Let me just say - I'm visiting from Santa Monica, CA and this had to be probably 1 of the Top Best Sushi I've ever had, and I've had plenty! A great variety to choose from, and i sat at the bar and watched them prepare the rolls, and they made them with perfection and great detail. The amount and taste was just mouth watering, i was full from my first two but they were so good i had to order another. The Pickled pear Margarita was delicious, it had a wonderful presentation and tasty delight with just the great amount of tequila. The front host staff, Sarah and the trainee were so welcoming, sweet and accommodating because if you don't have a reservation it can be a little bit of a wait so be prepared. Our server, Andy had just a smile on her and great attitude...she remembered every item you needed and wanted and all the substitutes. Plenty of parking, and great ambiance. The only bad thing i saw was the $1.00 surcharge for extra Eel Sauce which no sushi restaurant does, it's only complimentary to provide with no extra charge but it is what it is. Anyhow, def recommend!

Amazing sushi in Moab! We walked up and we're seated promptly at the bar. From there we were able to watch the magic happen as each sushi chef concentrated on their specialty - sashimi, rolls, nigiri and other amazing looking foods. We ordered the cucumber salad, half dozen oysters, a couple of their specialty rolls and their large sashimi, a Sapporo and their non alcoholic coco loco cocktail. Everything was super fresh, with new combinations of fish and added sauces or additions that enhanced the flavor of the seafood. For the quality we felt it was a good value, the prices were very reasonable for what we got. The restaurant has a good amount of seating and nice interior. This is a place I would definitely come back to!

Stopped in on a weekday evening with friends. Food was probably less than a three but service was above average and friendly. Started with edamame which was pretty good but also hard to screw up. I ordered a beer, some salmon nigiri and a yellowtail roll. Beer was fine, bottled. The salmon itself was good but was served on dry, stale rice with a stale wasabi. Yellowtail roll contained very little actual yellowtail so I was left with mostly stale (and expensive) dried rice. It seemed like the roll had been made some time ago. Not good with sushi.

I didn't think sushi and Moab went together but I was wrong! Don't skip this for dinner. Service and ambiance were nice. Prices are more than fair considering that everything else in the area has similar prices. Sushi is fresh and tasty. Drinks are good too. You can't go wrong going here!

Food was good. Our server Meaghan was awesome. The hostess was meh. She sat us outside and sat the group after us inside. We were the only table outside. No one ever came until we asked to be moved inside. Our favorite was the ikura sashimi. The wasabi inside was a nice touch

I will give 5. So this is not Japanese make Japanese sushi restaurant. They have sushi bar with fish case. It's middle of continent. I don't expect many different fish here. As I expected. But they do great job out of limited fish collection. Very hip chill cool sushi restaurant. Ambience is more stylish than typical many Japanese sushi restaurant. It is very popular place to eat for sure. It was great to experience elk sushi We ordered spicy tuna roll, spider roll and elk sushi first. Spicy tuna is simple one just like Japanese tekka-maki, but spicy. And we saw my neighbor was eating chef's special so we ordered that. I will order chef's special again to see wha is up to him that day We needed sushi ! Thank you

We were not expecting fresh and delicious sushi in Moab, but we were incredibly surprised. First, the menu was quite creative with lots of different options. They probably had the most interesting vegetarian and vegan roll selection that I've ever seen(and I've been to lots of sushi places). The service was awesome and not only did they honor our reservation, but were able to seat us early. The vibe is definitely funky and not your typical Japanese restaurant. Also pricing was reasonable, not the cheapest place in town, but pretty good value.

This is the best sushi restaurant in all of Utah - maybe even the best I have ever had anywhere! The restaurant is a small space on a side street, just off Main Street. They take reservations for half the restaurant and walk-ins for the rest - mind you there are only about 12 tables plus the sushi bar. The hostess and server (owner's right hand she said) were excellent! We ordered the Wagyu Tataki which was presented beautifully and tasted amazing! We also ordered 5 rolls- White Rim (my fav), Castleton, Sunshine (2nd fav), Surf & Turf, and Delicate Arch. The fish was so fresh and melted in your mouth! The flavor combinations where perfect! I highly recommend this place! It was pricey, but well worth it!

Sushi?! In the middle of the desert! Why yes, some of the best I've ever had. Excellent food and dining experience! As recommended I made reservations and I'm glad I did. The interior is small and intimate, a little dark but clean and welcoming. What makes them stand out? Sabaku flies in fresh fish several times a week. I mean, this stuff is FRESH. And absolutely delicious! We started out with hot Gekkeikan traditional sake ($10.00 for an 8 oz.) that was fantastic. We began our meal with House Salads (mixed greens, tomato, cucumber, carrots + house made ginger dressing, $6.00). The dressing was awesome, you'll love it if you like ginger! I wish I could take some home with me. For rolls, I chose a classic Philly Roll (salmon, avocado, red onion + cream cheese and topped with sesame seeds, $12.00). This was probably the best Philly Roll I have yet to eat. There was just the right amount of cream cheese, and the salmon was so smooth and soft like butter. My husband went for a specialty roll, the Poison Spider (fried soft shell crab, spicy mayo, cucumber + avocado topped with scallops, lemon and sriracha, $18.00). It was beautifully set. I admit the crab claws at the ends were a tad intimidating but it added to the presentation. I helped myself to a couple bites and agreed it was remarkable! I highly recommend stopping in here for fantastic, high quality food for a decent price. I will be back for more!

Incredible quality! Everything we had was great. I've found of recent that the better a sushi place can do a basic roll, the better quality they are. I had a Philadelphia roll and it was probably the best I've ever had. Had some other spicy tuna type of roll and a spicy tuna hand roll and they were great also. Wife and I both had miso, it wasn't my favorite miso, but it was my wife's favorite. Wife had a Poison Spider and a spicy yellow tail roll, and she said hers was incredible also. We are from a smaller town in Florida where the sushi spots are just a tad cheaper than most places, and to us this did seem a bit high priced, but I gotta admit I just cannot complain when the quality is so high. Definitely worth a visit

So this is the only sushi restaurant in town !? And it's the worst sushi place I have ever been to. The rice is undercooked and dry. Food tastes blank, like they forgot to put the eel sauce... But the worst of all is their customer service. 1hr wait for table and 1hr wait for the food to come out? Seriously!!! Not sure how they got such a high rating... lucky we will not come back here again...

Don't take a chance on missing Sabaku Sushi.... make a reservation! It's not a too small place, but it's not a too large place, either, so .... make sure you get in. This was one of the best meals of our vacation! We ended up "winging" it, and ended up going for a walk around town for a while ....but then we got a text (they have a very cool tech system here) from the hostess and she got us in for a cancellation table. That was a nice touch of customer service. Also, we should tell you early that the prices are VERY reasonable! On to the food.... EVERYthing was fresh and bright and delicious. We never expected to get such fresh fish in the "boondocks". Ultimately, we had to talk ourselves out of ordering more and more, it was all so good. We started with Miso, which was delicate and lightly salty, not overly so, as we often experience. The California Roll was made of REAL crab, which is so seldom found anymore... especially away from coastal locations. The Unagi Maki was so much more interesting than the typical two-piece nigiri. We loved their Spicy Tuna Roll, double-loved their Spider Roll and their Rainbow Bridge! We also got the Tempura Shrimp Roll for "dessert".... see we couldn't stop ourselves! You must be full just reading about all this food! Well, we had hiked a LOT that day, and were ravenous! The crispy cold Asahi beers were the perfect thirst quenchers, too. We saw some fun and festive cocktails go by en route to other tables, hmmmm.... next time. A shout out to our Menu Guide/Server Kristen, she made sure we had a variety of her favorites..... well done! Speaking of "next time", we tried to go for a second dinner during our stay... but they're closed Sunday and Monday.... drat!

When I first dined at Sabaku it was really delicious. However, as a return customer, I can see some changes in the Sushi. Not as nice as it used to be and definitely not as tasty and way overpriced. I never bothered feeling bad about the price before, but the quality was exceptional now however, The quality just isn't there it was not worth the wait so sad and disappointed

We've been in for sushi every time we've visited Moab (3 times) and every time the sushi is good. We even scored oysters once. Service is friendly. But they are SLOW. They had our order for nearly an hour before we saw any food this time. This is not unusual for us to experience. Wish they were more efficient because the sushi is really great.

We walked into this establishment around 5:45 and was asked by the hostess if we had a reservation. At that time, it appeared that the dining room was half empty. I asked if we needed one and was told that "it would help". She spent the next minute or so looking through her reservation book and told us that she MIGHT be able to seat us outside in 20 minutes or so. Did we want to wait? Her posture and body language were not what one would expect of a hostess. "It would help" who? It would have been appropriate to say that we're booked up with reservations. Did you prefer a table inside or outside? And then give us a reasonable time of seating so we could make an intelligent decision on whether to wait or not. We eat out quite frequently and can tell when people want our business and when they can't be bothered. I stepped outside to let the rest of my party make the decision. We ended up going somewhere else.

Most balk at the idea of sushi in the desert. Just as with all other restaurants in big cities, the fish is flown in. This restaurant delivers consistently good service and better sushi than anywhere I've been in SLC. Instead of one or two cuts of fish being good out of a sashimi platter, every piece was clean, crisp, delicious even without soy sauce. Staff are mellow and casual -the Moab vibe- but big city attentive. My daughter loved her roll. And my sashimi was a work of art

What a wonderful surprise! FRESH SUSHI in the "outskirts" of Utah! The menu had some signature items, and many of your favorites, We had so many things that we finally had to resist further temptation! The Rolls (Maki and Uramaki) were flavorful and lightly sauced (so many places over sauce everything.... not here!) The Nigiri are flawlessly presented, varied, and the ratio of fish-to-rice was just right! They have the best Japanese beers, which we love c-c-c-cold, to brighten up the sushi and replenish the nutrients we burned during our hike that day. Sabaku Sushi always seems to be hopping, so be sure and take advantage of their reservation system. We wanted to return for a second time during our stay in Moab, on a whim cuz' we liked it so much the first time, but were politely turned away because they were very well booked. They have an outdoor area that is shaded well enough so that you don't even realize that you're in the parking lot, so that kept it charming (and Covid-safe feeling). Sabaku Sushi was our very FAVORITE meal while we were in Moab, so make you reservation before you even leave home, to be safe. And just for good measure.... the prices are surprisingly fair. I bet it's a big favorite with locals. You'll love it too! (even if fish isn't you thing....they have great meat, and veggie choices!) *Closed for August 2021*

1.5 stars. This place is pricy with mediocre food. Even though it's super popular and walk in waiting time could be 20 minutes right after closing time of arches national park. We had - seaweed salad: supermarket quality - cucumber sunomono: too much vinegar - delicate arch roll (tuna and salmon with avocado encased in cucumber): super mushy. Hard to pick up the roll with chopsticks given that cucumber is slippery to pick up. I have seen something similar with avocado on the outside with much better taste. - small portion (appetizer) portion of udon soup. This is worse than what I could make at home. Super salty soup. Chicken is chunky chicken slightly grilled. - New Zealand mussels with quail egg. Sounded exotic but the execution is poor. The diced mussels is done ceviche style with onion. And the quail egg just sits at the end. I had many Japanese shooters with quail egg. The taste has to be subtle so one can devour most of the shooter with the quail egg. Here the mussel concoction was too sour to do that. The dish just didn't make sense -trying a bit too hard. If you are Asian, you probably won't like this place...for ones who don't have Japanese food often, this may not be as bad as what I had perceived.

This place is an amazing find! Being born and raised in Hawaii, I have high standards for sushi. This place did not fail to surprise! The sushi is so fresh! I had their half and half salad which was seed weed salad and their squid salad. I never had squid salad and I was worried I wouldn't like it but I loved it even more than the seed weed salad. I also had their tofu that was perfect. I ended with two rolls. The class shrimp tempura which did not disappoint and the fiery furnace! That new one was amazing and has great spicy tuna but was not too hot.

Underwhelming and overpriced. We got 2 appetizers and 2 rolls and the total was like $75, and we're still hungry when we left. My tempura veggies were literally dumped out frozen sweet potato fries, and lightly tempura fried. The flavor of the sushi was bland and it took forever to come out. Quite frankly my husband and I just left disappointed.

Sushi in Moab?? I would not have gone if not for a trusted local recommendation. The place did not disappoint. I would have to say the quality and creativity of the menu rivals any big city. We let the chef pick the best items and everything we tried was fantastic. The tofu, the fish and the macha cheesecake were all highlights. But the best part of the meal is that you are able to try a flight of different sakes. That was such a wonderful treat! The service was outstanding as well. All in all, a fantastic experience. A must try in Moab.

To paraphrase a quote from the film Casablanca: "Why did you come to the desert, to Canyonlands Rick?" "I came for the sushi." "Sushi? We are in the desert, there is no sushi here." "I was misinformed." Because you read Yelp reviews, you will no longer be misinformed -- come here for the Sushi. Sabaku serves up some of the best sushi I've had anywhere, right here in Moab. Hamachi, unagi, hosomaki rolls and speciality rolls, it's hard to go wrong, everything is so well prepared. Fiery Furnace, Rainbow Bridge, and more, I enjoyed everything we tried last night (April 2021). As one of my dining companions commented, "I've never left a sushi restaurant feeling this full before. Love it. "Sabaku, this is the beginning of a beautiful friendship..." Highly recommend.

Not a good experience overall. The sake nigiri was not melt in your mouth buttery. The soft shell crab had a bitter taste to it, and to top it off my waitress didn't check on me/ask how everything was til the end. I had to flag her down to order and for the check both times bc she was talking to her co-worker. She had glasses and blonde hair. Will not return if I'm in the area I'll save the sushi for Salt Lake City.

I wish I could say it was good. Our server was great, as were all the runners. But . . . Miso soup? Watery and lacking substance. E dame? Way over salted. Drinks? Over-priced. Hamachi? Thinnest ever and not close to firm. Spider roll? No substance, is there really crab? And avocado? I get that we're in a tourist town . . . Far from the ocean . . . in Utah, but if you're going to call yourself a Japanese restaurant you need to do it better than this. Of course, most customers are probably like us from out of town and not coming back ever anyway. A disappointment.

Moab is pretty small, and as such, there aren't a whole lot of restaurants there. It's also in the middle of the dry and arid west, so It's not necessarily a place you'd peg for good sushi. However, this place is the real deal. Like the town, the restaurant itself is pretty small, and there was a line of people waiting outside for it to open, so as usual these days, promptness and patience are key. The maze roll was unique and tasty, while the nigiri was all fresh and adequately portioned. We tried the southwest edamame, which was a little spicy, but not too much for the spice averse. It's not the best edamame I've ever had (that honor belongs to truffle edamame) but it was different than the standard sea salt variety, which we liked. The service was a bit slow, but they were busy in house, and also with take out orders, so I'm not holding that against them. You've got limited options in Moab, but this place is a good choice for fish in the desert.

Hidden gem at Moab. Coming from LA where there is lots of authentic Japanese food, I'd say the food is really good! delicate arch roll is wrapped with cucumbers, awesome idea for hot summer whether. Fried tofu, shishito peppers and salads are also beyond my expectations

Hear me out. I realize that Moab does not really scream sushi. But they get their fish 3x a week from Hawaii, and this place is excellent for the price point. - Fish is super, super fresh. I had a pretty decent amount of sashimi and wish I'd ordered more!! - Rice. This gets an incomplete because there was about an hour lag from "getting the sushi" to "eating the sushi." But even an hour later it certainly wasn't terrible. - Rolls. We ordered the Delicate Arch, Rainbow, and Sunshine. I didn't love the first (thought the ratio of "krab" to tuna and salmon was very off; would have wanted twice as much tun and salmon and half as much "krab"), but the other two were great. - COVID. Really dealing with this sensibly and carefully. Great, streamlined pickup. Strongly, strongly recommend if you're feeling like something tasty and healthy when you're down in Moab!!

Really good vegetarian options for sushi. Take out only appreciated during COVID times. Lots of healthy menu items- we really liked the chefs special, they made a vegetarian only selection to suit our needs. Thank you for an easy tasty meal!

Dined here in October 2019 while in town for the Rock Climbing Festival. Excellent waitstaff service and delicious sushi! Since every sushi chef is different, I had the Chirashi and was not disappointed with their chef's version of my favorite dish. Highly recommend.

Terrible I threw away the 60.00 order half way through! Rice was no good rolls gummy and no flavor and fish was bait. Go to McDonalds and get a fish sandwich ! Sorry to the owners but Sushi is expensive and should be good!
