After a breathtaking sunset cruise, I made my way back to Salt, the signature restaurant at the Four Seasons. After an evening of dancing and sipping with my cousins—Jack, Jim, and James—it was time to balance the party with something indulgent from the kitchen. I went all in with a gigantic lobster tail alongside the jerk cauliflower. Let me start by saying: this lobster tail is the largest I’ve ever been served at a restaurant. Perfectly cooked, tender, and dripping with flavor—it was the kind of dish that makes you pause after each bite just to savor the moment. But the real surprise was the jerk cauliflower. Whoever seasoned this dish deserves a standing ovation. The spice blend was bold yet balanced, coating roasted cauliflower that was paired with asparagus, quinoa, mashed potatoes, and—plot twist—what I thought were cherry tomatoes but turned out to be grapes. That unexpected sweetness tied the whole dish together in the most brilliant way. Honestly, I wish I had ordered a second plate just to take back with me. Dining at Salt was such a beautiful experience from beginning to end. From the moment you arrive at the entrance, the staff guide you seamlessly through the evening…warm, attentive, and genuinely welcoming every step of the way. You never feel rushed or overlooked; instead, you’re thoughtfully cared for throughout the entire journey. The service was exceptional, the meals arrived quickly, and every dish was thoroughly enjoyed. I was celebrating my birthday, and the team made it feel truly special. Those small, thoughtful touches made all the difference. A truly memorable evening and an all-around outstanding dining experience. Highly, highly recommend.

As guests staying at the Four Seasons Resort, we patronized SALT every morning for the breakfast buffet and had one dinner sitting. Regardless of morning or evening, the food and service were amazing. The buffet had a wide variety of foods, including vegitarian and gluten-free options. The offerings were consistent with slight daily variations. We enjoyed our daily breakfast plantains and Johnnycakes. The Le Must ketchup on breakfast potatoes was also a favorite. When in rotation at the buffet, the coconut croissants were a treat. The venue had operable windows, allowing for a very nice breeze to flow through the seating area and observation of the iguanas sunning outside. Dinner was equally enjoyable with great service and food. The facility has a simple layout but is very functional. I can't recall if there are tables on the same level as the buffet. There are steps between the buffet and the main seating area so special arrangements may be needed for accessibility.

We absolutely love salt. We’ve been going to this restaurant for years. They have truly truly made this restaurant amazing. I love that they have four different chefs and you could try different meals, especially if you’re on the island for a longer time you could go back and try something else at salt. We had the chicken steak, the soup, the mac & cheese, short rib, which was amazing. Everything was truly amazing. Breakfast was amazing at salt as well. Had off to the staff and the chefs behind. It’s also an amazing view where you could see ocean life marine life from your table.

I rarely write reviews, but I had such an unforgettable experience at Salt that I felt compelled to share. I came in for a solo birthday dinner, and from the moment I arrived, I was treated with such warmth and genuine care — and I wasn’t even a guest staying at the Four Seasons. Didy, the hostess, welcomed me with a radiant smile and attentively asked if I was celebrating anything special. When I told her it was my birthday, she made me feel so seen and celebrated, showering me with kind birthday wishes and making sure I had the perfect table. They also kindly honored my request to be seated with an ocean view, which made the evening feel even more magical. My server, Dio, was equally incredible — attentive, thoughtful, and full of great meal recommendations. Everything I ordered was delicious, and to top it all off, the team surprised me with a red velvet birthday cake and a glass of champagne. It was such a beautiful and touching gesture. I also want to give a special thank you to Frank (or Francisco — I wish I remembered exactly!) who did a salt presentation at my table. He took the time to talk with me and made the experience even more engaging and personal. His warmth and conversation were so appreciated. As someone dining alone, I never once felt alone. The service, attention to detail, and genuine hospitality made my birthday feel truly special and memorable. I felt blessed and deeply grateful. After dinner, I walked over to Sunset Lounge for drinks, where there was a live DJ and the music and vibe were absolutely amazing. It was the perfect way to end the night. My only regret is that I leave tomorrow and won’t have the chance to return on this trip. I truly wish I could come back again tomorrow! I can’t believe it but the food has gotten even better than our last stay. The ceviche’s with smoked scotch bonnet peppers was complex, refreshing and delightful. The pork chop was a captivating composition of flavors and textures and the salads were colorful and fresh. So good.
