Schlorzifladen is a sweet pastry from the Toggenburg region of eastern Switzerland.
It’s a type of fladen (flat pie or tart) made with a shortcrust base, filled with a Schlorzi mixture — a sweetened purée of dried pears (dörrbirnen) that have been soaked for many hours, slowly simmered until soft, and blended into a thick paste.
This process produces a dense, dark, and concentrated filling, much richer than one made from fresh pears. The flavor is deep and caramel-like, sometimes slightly smoky if the pears were wood-dried, and often enhanced with cinnamon, cloves, and pear schnapps.
The pie may be layered with custard, cream, or nuts, and then baked until golden.
